ALLOW CABINET TO COOL FOR AT LEAST 3 HOURS BEFORE ANY SERVICE OR REPAIR
TO ENERGIZE:
Plug the power cord(#73) into a 120v AC outlet. Place the master switch(#57) to the "ON" position. LOADING THE MACHINE:
Skewer hot dogs length-wise on spit prongs(#29). Frozen hot dogs may need to thaw slightly before loading the machine. The spit shaft can be
rotated by hand to facilitate loading.
OPERATION:
Once loaded, place the motor switch(#35) to the "ON" position. The spit shaft will now be rotated by the motor(#10). Place the temperature switch(#47) to
the desired setting. CAUTION: Exterior surfaces of the machine become HOT and can cause burns. Allow the unit to cool sufficiently before cleaning or
servicing.
TEMPERATURE:
Always operate the machine on as low a temperature as possible. High and Low settings can be used to quickly heat hot dogs. Once ready to
serve, place the temperature switch(#47) to "LOW". If the machine remains too hot on the lowest setting, the front glass(#41) may be removed
to reduce the temperature.
NOTE - MODEL 56T ONLY:
THE LOW TEMPERATURE SETTING will turn on both lamps until the machine reaches operating temperature. The thermostat will then shut off one lamp.
SERVING:
Place the motor switch(#35) to the "OFF" position to stop spit rotation. Grasp the hot dog near the middle with the tongs provided. Pull hot dog from spit and
reload as desired. Place the motor switch(#35) to the "ON" position to continue spit rotation. As a suggestion, serve hot dogs from the outside to the center
of the spit. Replace with fresh hot dogs, then serve from the other side to center. Hot dogs remain hot and ore ready to serve.
BUN WARMER OPERATION:
Fill bun warmer pan(Page 6,#22) with clean water to water level indicator(#17). Water is heated to near boiling via heat
transfer from the hot dog machine. Load bun warmer basket(Page 5, #19). PRODUCT:
Always use the highest quality hot dog available. Hot dogs with excessive fat, moisture, or fillers con drip excessively and
dry out. The spit shaft (Page 2) turns at the proper speed to self-baste the hot dog in its own juices.

DO NOT CLEAN THE DISPLAY CASE WITH WATER JET EQUIPMENT
CLEANING AND MAINTENANCE:
DISCONNECT POWER PRIOR TO CLEANING. Properly maintained equipment offers long life and worry-free usage. Never use on abrasive cleaner or paper
towels that may scratch the finish. Interior surfaces should be cleaned with worm soapy water and a soft cloth. Towel dry. Exterior surfaces should be cleaned
with glass cleaner and a soft cloth.
The spit shaft assembly (refer to page 2 & 7) should be removed from the machine and cleaned daily with a brush and soapy water. The spit shaft assembly
con also be washed in a commercial dishwasher. To remove the spit shaft, push towards the motor, twist until the shaft releases from the slotted shaft
coupling, then pull the shaft from the motor coupling.

TO REPLACE SPIT SHAFT:
NOTE:
1.) UNPLUG THE POWER CORD.
2.) Push the spit shaft assembly towards
the motor (#10). twist until the
shaft(#32) releases from the slotted
shaft coupling(#36). then pull the
shaft(#32) from the motor
coupling(#36).
TO REPLACE MOTOR:
1.) UNPLUG THE POWER CORD.
2.) Remove the spit shaft assembly as
described above.
3.) Remove the motor cover(#6) by
unfastening 2 acorn nuts(#7) and
carefully pull the cover(#6) away from
the machine.
4.) Place the machine up-side-down and
remove the base(#1. page2) by
removing 6 screws(#8).
5.) Remove the motor wires(#82) from
the master switch(#37) and the motor
switch (#35), carefully noting the
terminal position, and referring to the
diagram on Page 3 or 4.
6.) Remove the motor coupling(#36) by
turning it counter—clockwise with a
small screwdriver.
7.) Remove the washer(#46), the spring(#54), the lock washer(#40). and the 2 nuts(#39).
8.) Remove the inside cover(#22. page 2) by prying it off with a small screwdriver, and unfasten the 4 screws(#45) securing
the motor(#10). Remove the motor(#10).
9.) Reverse procedure to install new motor.
TO REPLACE A SWITCH:
1.) UNPLUG THE POWER CORD.
2.) Place the machine up-side-down and remove the base(#1. page2) by removing 6 screws(#8).
3.) Remove the wires from the switch(#35)(#37) or(#47 being replaced, carefully noting the terminal position. and referring to the diagram on
Page 3 or 4.
4.) Remove the mounting hardware for the switch to be replaced and remove the switch.
5.) To remove switch(#47), pull off knob(#2), unfasten nut(#79).
6.) Reverse procedures to install switch.
TO REPLACE POWER CORD:
1.) UNPLUG THE POWER CORD.
2.) Remove the base(#1) as described above.
3.) Remove the ground wire and the wires from the master switch(#37). carefully noting the terminal positions. and referring to the diagram on
Page 3 or 4.
4.) Release the bushing(#11) from the machine bottom(#23). and carefully pull the cord set(#73) away from the machine bottom(#23).
5.) Reverse procedure to install power cord.

TO REPLACE HEAT LAMP:
1.) Determine the heat lamp(#61) or (#66) to be replaced.
2.) UNPLUG THE POWER CORD.
3.) Located inside the machine, remove both heat lamp guards(#65) by removing 2 screws(#8). This will provide access
to the lamp support clips(#63) located at each end of the heat lamp(#61) or (#66).
4.) Unfasten and remove the screw/nut assembly(#50/60) retaining the ceramic insulated leads(#59) attached to the
lamp. Carefully spread the lamp support clips(#63) and remove the heat lamp.
5.) Reverse procedure to install new heat lamp.
TO REPLACE THERMOSTAT (MODEL 56T ONLY):
1.) UNPLUG THE POWER CORD.
2.) Remove the motor cover as described on page 7.
3.) At the top of the machine, remove the 2 nuts that ore connecting the BLACK and RED wires AND the two wires of the thermostat(#81).
Remove 2 screws(#44, page2). Remove the thermostat(#81).
4.) Reverse procedure to install new thermostat.
