This is a listed appliance. It is intended for household use only. When using electrical appliances, the following basic safety precautions should always be followed:
1. Do not use appliance for other than intended use.
2. To protect against electric shock, do not put this knife sharpener in water or any liquid.
3. This device is not recommended for use by children and close supervision is necessary if appliance is used near or by children.
4. Unplug from outlet when not in use or when cleaning.
5. Avoid contact with moving parts.
6. Before using the sharpener, uncoil the power cord and straighten to remove any kinks.
7. Do not operate this appliance if the cord or plug has been damaged, or if the sharpener has been dropped or damaged in any manner. If appliance malfunctions in any way please return the appliance to Smith’s factory for examination and repair.
8. The use of attachments not recommended or sold by the manufacturer may cause fire, electrical shock or injury.
9. Do not use outdoors.
10. During sharpening, do not let the electrical cord hang over the edge of the counter or table, or come in contact with the knife being sharpened, a hot surface, or stovetop.
11. This sharpener is designed to sharpen knives. Do not try to sharpen any other type of blade on this machine.
12. Do not attempt to sharpen knife or tool edges that do not fit freely into the blade guide slots.
13. Do not use with lubricants, water or honing oil.
14. This appliance has a polarized plug (one blade is wider than the other). To reduce the risk of electric shock, this plug will fit in a polarized outlet only one way. If the plug does not fit fully in the outlet, reversethe plug. If it still does not fit, contact a qualified electrician. Do not modify the plug in any way.

Adjustable Edge Pro Electric Knife Sharpener
Congratulations on your purchase of “the World’s Most Advanced” electric knife sharpener. Smith’s is proud to introduce the first adjustable electric knife sharpener which features diamond and ceramic adjustable interlocking wheels offering both coarse and fine sharpening for both sides of the knife at the same time. The fact that this knife sharpener allows the user to adjust the angle of grind ensures its versatility for sharpening a vast array of knives. Both sets of wheels adjust to the appropriate finishing angle for the knife being sharpened. This allows you to sharpen everything from thin Asian style kitchen knives to wider tactical style knives at the same angles originally produced by their manufacturer. The diamond wheels in the coarse slot sharpen both sides of dull and damaged knives while the ceramic wheels polish and hone both sides of the knife without removing much metal and prolonging the life of the knife. The product also offers a manual sharpening slot designed to sharpen serrated style knives.
Traditional electric knife sharpeners work in a combination of numerous steps and only sharpen one side of the knife at a time. They can often scratch and damage the knife blade. The Adjustable Edge Pro delivers fast and precise sharpening of both sides of your knife blade at the same time with the interlocking diamond and ceramic wheels thus reducing the amount of time needed to sharpen your knife when compared to sharpening one side of the blade at a time. Also unlike other electric knife sharpeners these wheels will not damage or detemper the blade. If used properly, the interlocking wheels will not only sharpen the cutting edge to factory quality, but will also reduce the amount of metal removed from your blade and extend the life of your knife.
Your Adjustable Edge Pro knife sharpener will sharpen knives of alloy, carbon or stainless steel. It is designed to sharpen any style straight edge knife blade with a flat or hollow grind on both sides of the blade. IT WILL NOT SHARPEN CERAMIC BLADES, CURVED BLADES, OR BLADES WITH A GRIND ON JUST ONE SIDE OF THE BLADE.

Sharpening Slot Selection
The Adjustable Edge Pro Electric Knife sharpener offers two stages of sharpening, Coarse and Fine. Both sharpening slots feature interlocking wheels. The Coarse slot offers interlocking diamond wheels that are very aggressive. For this reason Smith’s recommends only using this slot on damaged and extremely dull knives. The Fine Ceramic interlocking wheels should be used for finishing and polishing the cutting edge to razor sharpness after sharpening in the coarse diamond slot or for maintaining an already sharp blade that just needs a quick touch up. Start the sharpening process in the coarse diamond slot then move to the ceramic fine slot if you are sharpening a very dull or slightly damaged blade to razor sharpness. If your blade is somewhat dull and just needs a quick touch up to get it sharp or if it is already sharp and you want to make sure it doesn’t go dull, just use the ceramic fine slot by itself to achieve razor sharpness.
Angle Adjustment
Matching the sharpening angle of the knife to its original factory angle has never been easier. Simply turn the Angle Adjust knob located on the top of the product to match the angle published by the manufacturer of your knife. If you are not certain of the angle, refer back to the basic suggested angles for the style of knife. Both sets of wheels in the Coarse and Fine slot will move simultaneously ensuring precision adjustment to achieve a razor sharp edge.
Interlocking Wheel Technology
Unlike other electric sharpeners that only sharpen one side of the blade at a time, Interlocking Diamond Wheels and Interlocking Ceramic wheels sharpen both sides of your knife at the same time with each pass through the sharpening slots. This reduces the amount of time needed to sharpen your knife, leaves no micro-burrs on the final edge, and assures equal sharpening of both sides of the knife edge.
Sharpening Angle Selection
You can use the interlocking wheels to sharpen or maintain any straight edge knife blade with a flat or hollow grind on both sides of the blade. Most knife manufacturers will publish specific sharpening angles to their brand and style of knife. If either the manufacturer or the style are unknown, simply follow the printed guide on the angle adjust knob or refer to the “Common Sharpening Angles” published on prior pages of this manual. If you select one of these “common sharpening” angles, even if it is not the exact original angle, the result will still be an incredibly sharp edge on your knife blade.
Diamond Interlocking Wheels (coarse sharpening slot)
The diamond sharpening wheels used in your Adjustable Edge Pro Electric Knife Sharpener are coated with “micron-sized” monocrystalline diamonds. These diamonds are specially selected for their unique cutting performance and are applied to the surface of the wheels by a highly technical process that guarantees longer wheel life,

uniform cutting, and minimal heat build up. Our wheels are manufactured in the United States according to strict tolerances in order to ensure the same high quality and performance of each and every wheel that we use. This protects your blade from getting damaged or de-tempered when using this sharpener.
NOTE: Diamond Break-In Period – The initial aggressive cutting speed of the Diamond
Sharpening Wheels will slow with use. At the same time, the abrasive finish will improve. Do not be confused by this break in process because it is normal and should be expected. The diamond wheels are breaking in, NOT wearing out.
Ceramic Interlocking Wheels (Fine Sharpening Slot)
The Adjustable Edge Pro Electric Knife Sharpener comes with extra-fine ceramic wheels which provide superior edge producing capabilities while removing minimal material from your knife edge.
Soft Grip and Non-Slip Feet Provides secure and stable sharpening conditions on all types of surfaces.
Manual Serrated Edge Sharpening Slot (SERRATED)
The characteristic scallops of a serrated blade are usually only ground on one side of the knife blade. For this reason, it is not recommended that serrated blades be sharpened using the Interlocking Ceramic Wheels in the electric sharpening slot. These wheels are designed to sharpen both sides of any blade at the same time. For proper sharpening of your serrated blade, Smith’s strongly recommends manual sharpening in the serrated edge sharpening slot as the preferred way to lightly hone a serrated edge. This sharpening slot has triangular shaped ceramic stones that are designed to follow the shape of your serrations and ensure proper and consistent sharpening for all types of serrations.
SHARPENER MAINTENANCE AND CARE GUIDE
Follow these easy tips and instructions to keep your Smith’s electric knife sharpener in prime condition for years to come:
DOs
• Read the Instruction Manual thoroughly before using the sharpener.
• Clean all dirt and food from knives before sharpening.
• Always hold knife perpendicular to the tabletop so knife contacts both wheels equally.
• Always place unit on sturdy flat surface.
• Hold knife securely but comfortably in your hand.
• Always pull the knife blade through the wheels at the recommended speed.
• Use light downward pressure to establish contact with the wheels.
• Handle sharpened knives with care since they will be sharper than you expect.
• Unplug sharpener when not in use and when cleaning.

Sharpening Extremely Dull or Damaged Asian Style Kitchen Knife, Traditional Euro/ American Kitchen Knife, Pocket Knife, Hunting/Outdoors Knife, Fillet Knife, Tactical Knife, or Custom Knife with a Flat or Hollow Grind on Both Sides of the blade. (USE BOTH the COARSE/DIAMOND and FINE/CERAMIC SLOTS) Step 1. Turn angle adjust knob to 10° to reset wheel adjustment
mechanism, then turn to the sharpening angle desired for your style and brand of knife. Use the charts provided in this manual to find the original factory angle for your brand of knife. If the original manufacturer’s angle is unknown we suggest using the common sharpening angle marked on the angle adjust knob or listed in the knife angle charts provided. Step 2. Turn the power on and insert blade into the Coarse/Diamond electric sharpening slot. (Fig. 1) Step 3. Lower the blade to make contact with interlocking wheels. When your blade contacts the wheels and self aligns itself, pull through slot from heel to tip (never back and forth) using VERY light downward pressure on the blade. The weight of the blade is really enough downward pressure when pulling the blade through the slot. No added pressure is needed. Use a smooth consistent stroke to pull the knife blade through the slot at a speed of 1 second per 1 inch. If the blade curves up to the tip, lift the handle near the end to sharpen all the way out to the tip. (Fig. 2) Repeat 10-12 times but depending on the damage to the blade it could take up to 15 or more pulls to re-sharpen the edge. NOTE: Knives made of extremely hard steel may require additional pulls through the slot when sharpening the edge.
To Finish And Polish The Edge
There is no need to adjust the angle again. Both sharpening slots automatically adjust at the same time. If you have turned the knob for any reason though you will need to reset to the correct angle. Again if the manufacturer’s angle is unknown we suggest using the standard Asian angle. Step 4. Lower the blade into the Fine Ceramic slot to make contact with interlocking wheels. When your blade contacts the wheels and self aligns itself, pull through slot from heel to tip (never back and forth) using VERY light downward pressure on the blade. The weight of the blade is really enough downward pressure when pulling the blade through the slot. No added pressure is needed. Use a smooth consistent stroke to pull the knife blade through the slot at a speed of 1 second per 1 inch. If the blade curves up to the tip, lift the handle near the end to sharpen all the way out to the tip. Repeat a minimum of 10 - 12 times. NOTE: Knives made of extremely hard steel may require additional pulls through the slot when sharpening the edge. Step 5. Check the sharpness of your blade by cutting a piece of paper or a fruit or vegetable.
DON’Ts

NOTE: The first time you set the angle or anytime the degree of angle is changed you must turn the dial to 10 degrees (far right) to reset the wheel’s adjustment mechanism before turning to the desired sharpening angle. This will ensure a more precise angle on the cutting edge.

Light Honing of a Asian Style Kitchen Knife, Traditional Euro/American Kitchen Knife, Pocket Knife, Hunting/Outdoors Knife, Fillet Knife, Tactical Knife, or Custom Knife with
a Flat or Hollow Grind on Both Sides of the blade. (USE FINE CERAMIC SLOT ONLY) Step 1. Turn angle adjust knob to 10° to reset wheel adjustment mechanism, then turn to the
sharpening angle desired. Use the charts provided in this manual to find the original factory angle for your style and brand of knife. If the original manufacturer’s angle is unknown we suggest using the common sharpening angle angle marked on the angle adjust knob or listed in the knife angle charts provided.
Step 2. Turn the power on and insert blade into the electric sharpening slot. Step 3. Lower the blade to make contact with interlocking wheels. (Fig. 3) When your blade
contacts the wheels and self aligns itself, pull through slot from heel to tip (never back and forth) using VERY light downward pressure on the blade. The weight of the blade is really enough downward pressure when pulling the blade through the slot. No added pressure is needed. Use a smooth consistent stroke to pull the knife blade through the slot at a speed of 1 second per 1 inch. If the blade curves up to the tip, lift the handle near the end to sharpen all the way out to the tip. (Fig. 4) Repeat a minimum of 10-12 times. NOTE: Knives made of extremely hard steel may require additional pulls through the slot when sharpening the edge. Step 4. Check the sharpness of your blade by cutting a piece of paper or a fruit or vegetable. If additional sharpening is needed repeat process until sharp but make sure to clean your knife before continuing. If not turn off power to the machine.
Adjusting to a larger or smaller size angle than originally on the knife. Always start by turning the knob to 10°, then turn the knob to the correct angle.
If you choose to take a knife with a wider angle such as 20º or more per side (40º combined) and sharpen it at a thinner angle keep in mind you will be changing the angle drastically from its original factory edge and will require extra pulls through the diamond wheels, which could be as many as 20 or more additional pulls. This will remove quite a bit of metal. If you wish to take a thinner angled knife such as 16º per side and want to make its angle wider, this is possible and it will only take a few pulls through the diamond wheels. ALWAYS KEEP IN MIND THIS WILL CHANGE THE ORIGINAL FACTORY ANGLE. IF YOU WANT TO ACHIEVE A FACTORY EDGE, ONLY SHARPEN THE KNIFE TO THE FACTORY PROVIDED ANGLE. IF THAT ANGLE IS UNKNOWN SMITH’S SUGGESTS USING COMMON SHARPENING ANGLES AS INDICATED ON THE ANGLE ADJUST KNOB OR LISTED IN THE KNIFE ANGLE CHARTS PROVIDED.

Sharpening Serrated Knives
Step 1. Open serrated blade sharpener on side of housing. Step 2. Pull the serrated portion of your knife blade through SERRATED
sharpening slot 8-10 times using light downward pressure. Allow the knife blade to rise and fall as the serrated portion of your blade is pulled through the crossed ceramic stones.
NOTE: Never place a serrated blade into the interlocking wheels! Step 3. Check the sharpness of your serrations. If additional sharpening is needed, repeat process
until sharp. If not, close the serrated sharpener back into the housing.
CAUTION:
• Always sharpen your knife blade from the heel to the tip of the blade.
• Never insert the tip of the knife blade into the sharpening slot first, or push your knife blade through the sharpening slot. This could damage the knife sharpener and/or your knife. (Fig. 5)
• In order to get the best results and to reduce excessive diamond or ceramic wheel wear, it is important that you keep the proper orientation of the knife blade to the wheels. Always keep the knife blade perpendicular to the counter top, so that the blade contacts both wheels equally.
• Due to some handle designs, you may not be able to sharpen the entire length of the blade using the electric sharpening wheel. In these limited cases, Smith’s recommends using a manual sharpener to sharpen these small areas of your blade.
• The speed at which you pull the blade through the sharpening slots will determine the amount of metal removed from the edge of the knife by the diamond interlocking wheels in the coarse slot. A very slow pass will remove more metal than a quick pass. When drawing the blade through the slots, allow approximately one second for each one inch of blade. For example, if sharpening a knife with a 6 inch blade, you should take approximately six seconds for each pass.
• DO NOT TRY TO TURN THE ANGLE ADJUST KNOB PAST THE STOPS IN EITHER DIRECTION. THIS COULD RESULT IN DAMAGE TO THE KNOB MAKING THE UNIT INOPERABLE.
TROUBLE SHOOTING GUIDE
Symptom: Sharpener stops running while in use Cause: Sharpener has a built in motor thermostat as a safety feature. It protects sharpener
from overheating if left on accidentally for a long period or is being used improperly. Solution: If the thermostat shuts down the motor, unplug the sharpener and wait about one hour for the motor to cool down, and the sharpener will restart. Symptom: Diamond Wheels stop removing metal. Cause: Diamond Break-In Period – The initial aggressive cutting speed of the Diamond
Sharpening Wheels will slow with use. At the same time, the abrasive finish will improve. Do not be confused by this break in process because it is normal and should be expected. The diamond wheels are breaking in, NOT wearing out. Solution: If after extended periods of use you feel like the diamond coated wheels have completely lost their aggressive cutting ability, the diamond wheels can be replaced. FREQUENTLY ASKED QUESTIONS
How often should I sharpen my knives?
All fine edge cutlery requires maintenance and sharpening. A sharp knife can easily be maintained by adhering to a few basic rules. Cut only on soft surfaces such as wood or poly boards. Hard surfaces like glass, granite, stainless steel, acrylic, or laminate counter tops will dull knives immediately on contact. Always avoid cutting frozen food, slicing into bones, or using a knife to pry things open. These uses may result in severely dulling, bending, or breaking your knife. Sharpen your knife before each use if you want to maintain a razor sharp edge. After extensive use, if you have honed the knife blade and it no longer slices food with ease, use the COARSE and FINE sharpening slots to put a new razor sharp edge on your blade.
How can I tell if my knife is sharp?
Use it to cut paper or slice food. If the knife does not cut smoothly, it needs additional sharpening.
My knife is not sharp and I’ve gone through the whole knife sharpening process. What am I doing wrong?
Although unusual, there are times when you have to repeat both sharpening stages more than once or make more passes through the sharpening slots. This may occur during the first sharpening of a knife or if a knife was sharpened incorrectly by another process. It may also occur when sharpening blades made of tempered steel, which are extremely hard, such as some hunting knives.
You can use the Adjustable Edge Pro electric knife sharpener to sharpen these type of knives, but you may have to repeat the process several times or make numerous passes through the sharpening slots (in excess of 10 times or more for extreme cases). This extended process will only be necessary the first time you use the sharpener for this type of blade. Thereafter, you will be able to sharpen the blade following the normal sharpening procedures.
Sometimes the sharpening wheel stalls when I am drawing the knife through the blade guides. What causes this?
The knife sharpener is designed so that very little effort is needed to draw the blade through the sharpening slots. If excessive downward pressure is applied to the knife as it is being pulled through the sharpening slots, the sharpening wheel may stall.
How do I get an even edge on my blade?
It is important that you keep the proper orientation of the knife blade to the wheels. Always keep the knife blade perpendicular to the counter top and in the center of the sharpening slot, so that the blade contacts both diamond wheels equally. Make sure the blade does not touch either side of the sharpening slot. It should be straight up and down in the center of the sharpening slot at all times. Always sharpen from heel to tip, never back and forth. Remember to lift up slightly on the handle as the curved portion of the blade is drawn through the sharpening slots.
Occasionally I see sparks when sharpening my knives. What causes this?
At a professional knife sharpening service, certain blades with high carbon content (usually higher quality knives) sometimes will spark or produce a stream of sparks when they come in contact with the sharpening wheel. Your Adjustable Edge Pro Electric Knife Sharpener uses the same type of sharpening wheel that the professionals use. Therefore, you can expect to see similar sparking when you sharpen blades with high carbon content. This is normal.
My sharpener produces a loud vibrating sound. Why is this?
Your Adjustable Edge Pro Electric Knife Sharpener uses rapidly rotating diamond sharpening wheels to sharpen knives. Because of the speed of rotation, a vibrating sound may be heard. Are there any tolerances for the angles per side when sharpening?
Generally, there can be a minimum average of + or - 1 degree per side difference in the sharpening angle. This follows closely to what is generally accepted by the knife manufacturers for the initial sharpening process.
Maintenance
There is little maintenance required with your Adjustable Edge Pro Electric Knife Sharpener. To clean the exterior housing, simply unplug from the electrical outlet and clean with a soft, damp cloth.

• Do not rinse, immerse, or flush the sharpener with water
• Do not use any lubricant or water on the abrasive wheels
Periodically, use a small, nylon brush to scrub the surface of the ceramic stones in the manual serrated sharpening slot with kitchen cleansing powder and water.
Ceramic Wheels Maintenance
The ceramic wheels will need to be cleaned twice annually, or more often if you sharpen regularly, to remove the buildup of the metal particles from the surface of the wheels. If you don’t clean the wheels, their cutting capabilities diminish. Use only the cleaning brush provided to clean the ceramic wheels.
Step 1. Dampen the felt portion of the brush slightly. Squeeze excess water from the brush before running it through the machine. DO NOT ALLOW WATER TO DRIP INTO THE MACHINE.
Step 2. Turn on the machine and run the brush through the interlocking wheels in the same manner as you do a knife blade. Apply very light pressure when pulling the felt brush through the slot and pull the brush through slowly. The white felt should be black when it comes out of the slot and the interlocking wheels will be white again.
Step 3. Repeat if necessary. NOTE: The felt on the brush is only usable for one cleaning. Replacement felt can be purchased from Smith’s. Contact Customer Service at 800-221­4156 or www.smithsedge.com.
