CLEANING AND SANITIZING PROCEDURES

Cleaning: Every six months
Sanitizing: Every month
NOTE. THE FOLLOWING PROCEDURE CAN BE USED FOR EITHER SANITIZING OR DE-SCALING THE ICE MACHINE.
NEVER MIX THE SANITIZING SOLUTION WITH THE DE -SCALING SOLUTION.
IN CASE THE MACHINE NEEDS TO BE SANITISED AND DE-SCALED, CLEAN THE MACHINE THOROUGHLY, THEN FIRST DE-SCALE, AND AFTER PROPER WASHING AND RINSING, DO THE SANITATION.
WARNING. When using any chemical, protection of hands and eyes should be worn.
NOTE. De-scaling is recommended every 6 months in average water hardness conditions, while sanitizing should take place once a month. Under extreme water hardness conditions we recommend to de-scale every two – three months, and to sanitize every two weeks. Sanitizing regularly will reduce bacteria growth, which is natural in all water circulation systems as ice machines.
NOTE. Always follow approved Sanitizer / De-scaler manufacturers instructions when preparing the Sanitizer /De Scaler solutions.

PROCEDURE
1. Wait until the end of defrost cycle then disconnect power from the unit
2. Close water tap on the water supply line
4. Remove the front panel.
5. Gently remove from upper plastic hooks the O rings securing curtain/deflector in front of the evaporator.
NOTE. Be sure that no other equipment in use can suffer of the turn OFF of water
3. Remove all ice from the bin. Either save it in a sanitary container or discard it. If routine sanitizing is due, the ice machine should be switched off during evening closing procedures to minimize waste during next morning sanitizing procedures.
6. Carefully withdraw curtain/deflector by gently lifting the upper hooks. Unnecessary force can break the plastic hooks.

7. Carefully push the two side plastic pins of the ice thickness sensor out from its metal bracket.
8. Withdraw the water distribution tube from the two metal clips.
10. Remove the exterior water distribution tube from the interior one
11. Withdraw water drain plug from the bottom of the reservoir so to drain down into the storage bin all water.
9. With the help of a small flat screwdriver remove from one end of the water distribution tube the rubber plug.
12. Remove water pump guard.

13. Unloose the two screws to remove the water reservoir
15. Using gloves and goggles prepare the cleaning solution into the bucket.
NOTE. always follow approved Sanitizer/De-scaler manufacturers instructions and dilution when preparing Sanitizer/De-scaler solutions). Too concentrated cleaning/sanitizing solutions can cause corrosion on evaporator surface
14. By lifting-up a little bit the back of the water reservoir, remove the same from its hook seats.
16. Soak into the bucket removed components and …..
17. ……using different types of brushes clean/sanitize the water distributor tube and …..

18. ……the water reservoir inside and outside.
19. With proper brush clean/sanitize the upper side of the evaporator as well as …..
21. …….the ice thickness sensor metal plates
22. Install again parts removed at item 8, 9, 10, 11, 12 and 13 proceeding in reverse.
23. Place again the water distribution tube into their two metal clips paying attention that its plastic pin matches the center hole then …..
20. ……the left and right sides and……
24. ……install the Ice Thickness sensor

25. Place again the plastic curtain/deflector on the upper side
28. Open the storage bin door in order to have access to the storage bin and to the bottom of the metal deflector.
26. Gently install again the two O rings previously removed.
27. With proper brush clean/sanitize the upper side of storage bin metal deflector.
29. Place the bucket with cleaning/sanitizing solution inside the storage bin (this allow you to freely clean/sanitize the bin) and with brush clean/sanitize the bottom of the metal deflector….
30. …….as well as all the inside area of the bin including its drain.

31. Clean/sanitize the rear side of the bin door.
32. Connect unit to the power……
34. Push the reset button for 6-8 seconds till the blinking of the WASH YELLOW LED. The machine STOP.
35. Pour: MV 300 150 cc
MV 450-600 200 cc MV 1000 300 cc
of Ice Machine Cleaner directly into the water reservoir together with 2 liters of lukewarm water (40-45°C).
33. ……and open the water tap on the water supply line
CAUTION. Ice Machine Sanitizers / De-scalers contain acids. Acids may cause burns. If concentrated de-scaler / sanitizer comes in contact with skin, flush with water. If swallowed, do NOT induce vomiting. Give large amounts of water or milk. Call Physician immediately. KEEP OUT OF THE REACH OF CHILDREN.

36. Push gain the RESET BUTTON for a while, the WASH YELLOW LED starts to blink fast with the
water pump in operation.
NOTE. All the previous three sequences are repeated 7 times so to be sure that no more trace of de-scaling solution can remain into the water system.
39. After the 7th rinsing cycle the machine stops the operation with the blinking (slow) of the WASH YELLOW LED.
40. To restart the operation of the machine in normal freezing cycle push and hold for 6-8 seconds the
RESET BUTTON.

SANITATION

41. To sanitize the water system proceed as per Cleaning just pouring 2 cc of Scotsman shorting time (item 37) from 20 to 10 minutes
37. Let the unit remain in the cleaning mode for about 20 minutes then push again the RESET BUTTON for a while till the WASH YELLOW LED starts to blink fast and repeat.
38. The machine is now in the automatic rinsing mode that means:
Water pump & water drain valve ON for 30" Water pump & water drain valve OFF for 60" Water pump ON for 180"
REMEMBER. To prevent the accumulation of undesirable bacteria it is necessary to sanitize the interior of the storage bin with a sanitizing solution every week.
42. Clean the outside of the machine and bin using a
clean damp cloth with specific S.S. cleaning product.
