important safEguards
When using electrical appliances, always follow basic safety precau­tions, including the following:
• Read all instructions before operating the device.
• To protect against risk of electrical shock, do not ll the water level past the Maximum Fill line, or otherwise immerse the upper section of the machine in water or other liquid.
• Never operate the machine without the back cover securely aached and the machine clamped to a sturdy surface, like a stock pot.
• Do not touch hot surfaces.
• Always supervise children when they use any electrical appliance.
• Avoid contacting moving parts.
• Unplug the unit from outlet when not in use. Ensure the unit is unplugged and ‘o’ before cleaning or performing maintenance.
• Clean hot surfaces with caution. If a wet sponge or cloth is used on hot surfaces be careful to avoid steam burn. Some cleaners can produce noxious fumes if applied to hot surfaces.
• Do not operate any appliance with a damaged cord or plug, or aer the appliance malfunctions, or is dropped or damaged in any manner.
• Return appliance to the nearest authorized service facility for examination, repair or electrical or mechanical adjustment.

Cooking sous VidE
e Sansaire™ Immersion Circulator is designed for sous vide cooking. High end restaurants have been cooking with the sous vide method for years and trying to keep it secret. You are about to see how easy it is to achieve perfectly cooked proteins and vegetables every time. It works like this: Preheat your water bath to the desired cooking temperature by adjusting the temperature ring on your Sansaire™ Immersion Circulator.
1. Seal the ingredients you wish to cook in a plastic bag. You can also use a canning jar lled with your favorite cooking oil.
2. Place the bagged food in the water bath and let it cook until it has reached its target temperature.
3. Give your food a quick sear, and it’s ready to serve!
Unlike cooking on a stove or in the oven, the temperatures are low (well below boiling temperatures). By seing the right temperature for your ingre­dients, your food won’t overcook if you leave it in the water bath – it can’t get hoer than the temperature you set!

1. Pick a container large enough to hold your food, and with
plenty of room for water to circulate.
2. Aach the Sansaire™ Immersion Circulator to the side of the con-
tainer. Add water until the level is above the Minimum Fill line, but below the Maximum Fill line. Remember that the water level will rise when you add your food. (Never turn on the Sansaire™ Immersion Circulator in an empty or under-lled water bath.)
3. Plug in the Sansaire™ Immersion Circulator.
4. Press the Power buon on the top of the unit. is turns on the
display and makes the circulator heat the water to the set target temperature. Set the target temperature of the water bath by turn­ing the silver Temperature Ring above the display. e Sansaire™ Immersion Circulator automatically keeps the water at the target temperature until you turn it o. Your water bath is now ready for cooking!

e Sansaire™ Immersion Circulator is designed to aach to many shapes and sizes of baths. When in use, the circulator needs to be clamped to the wall vertically and securely. is

During regular operation, the primary user interface is the power buon to turn the machine on and o and the temperature ring to change the target temperature.
e display, by default, shows the current temperature of the water. However, when the temperature ring is turned or the power is turned on, the display turns to showing the target temperature. Regular temperatures range from 40C (~105F) to 85C (185F). To view the target temperature at any point, press the target temperature buon.
e display can be chosen to show temperature in Celsius or Fahrenheit by pressing the C/F buon.

e Sansaire has a safety mech- anism in case the water level becomes too low and the heat-
prevents the machine from accidental water exposure. e bath should hold no more than 20 liters (about 21 quarts) of water to ensure the water tem­perature is kept uniform.

e circulator has a back cover that is detachable. It should only be detached when the circulator is o and unplugged for cleaning and never during use.
To open: Detach the clamp, slide the latch le, and pull the back cover
down and and away. With the cover o, the grate can be detached as well.
To close: Place the grate in the slot running along the boom of the circula-
tor’s front, inner surface. e two grooves on the grate should be aligned towards the le and right side of the casing. e back cover can now be slid back on and latched, followed by the aachment of the clamp.

e clamp on the back of the Sansaire™ Immersion Circulator has two dierent congurations. In most cases the clamp should aach to the machine on the inner peg but if the container wall is thicker, the second peg can also be used.
To move the clamp between pegs, press the clamp towards the center of the circulator and pull down gently. Once the clamp is o the axel, align the axel with the desired peg and pull up gently. e clamp can be completely detached for cleaning. However, the circulator should never operate without the clamp aached and secured to a bath.

In the course of normal use, food particles and minerals from the water bath may collect on the Sansaire™ Immersion Circulator. We recommend regular cleaning of the housing, impeller and heating coils.
1. Power o, unplug and remove the Sansaire™ Immersion Circulator from the water bath. If the unit is hot wait for the unit to cool down.
2. Remove the power cord from the back of the unit.
3. Remove the clamp from the back of the unit.
4. Slide the back cover tab to release the back cover, exposing the im­peller and heating coils. NOTE: e upper section of the Sansaire™ Immersion Circulator contains sensitive electronics and should never come in contact with water.
5. While holding the unit upright, rinse under running water to remove food particles and cool the coils if still warm.
6. If necessary, scrub the unit gently with a sponge or brush and a drop of dishwashing liquid. Rinse the unit thoroughly, ensuring that water does not enter the upper section.
7. Reinstall the back cover and clamp.

dECalCify in g
Aer some time, the coils accumulate calcium deposites due to the water bath. Add a decalcifying agent, such as CLR, to your water bath, following the dilu­tion instructions provided by the manufacturer. Set the temperature of your water bath to 25°C / 77 °F and allow the unit to run for 10 minutes. Power o, unplug and remove the Sansaire™ Immersion circulator from the water bath and continue cleaning per the instructions above. Discard the water in the bath and thoroughly clean the container and any other materials in contact with the bath.
WARNING: Do not add food (bagged or otherwise) to the water bath while cleaning, and ensure that the bath water has been replaced withfresh water before cooking.

You may choose to leave the Sansaire™ Immersion Circulator clamped to the water bath when not in use but it should be unplugged from the power source. However, should you need to store your circulator, wipe the unit dry using a cloth or paper towel prior to puing it away.
tEmpEratu rE Cal ibration
Your Sansaire™ Immersion Circulator is factory-calibrated, but also allows for a manual temperature oset. You may adjust the temperature reading by per­forming the following steps:
1. Prepare a water bath at or around a normal cooking temperature (ex.
50.0 °C).
2. Measure the temperature of the water bath with an accurate digital thermometer. Note the dierence between the Sansaire™ Immersion Circulator’s temperature reading and the reading from your thermom­eter.
3. With the unit running, hold down the C/F buon for a few seconds. e display will show the current oset temperature.
4. Turn the temperature ring to adjust the oset value. For example, seing the oset value to 1.5 °C increases the temperature reading by
1.5 degrees.
NOTE: Most inexpensive kitchen thermometers are less accurate than the Sansaire. For recalibrating, we recommend using a professional reference thermometer, such as those sold by ermoWorks (ermoWorks.com).

If you have any issues with your machine, check to see if these troubleshooting instructions solve the issue. If the problem persists, contact customer service for options on servicing the unit.
troublEshooting
Symptom: e water bath does not get hot, or does not circulate.
Press the Start/Stop buon to activate the heating coils and circulating motor. You should be able to see water moving through the pump out­let opening. If water is owing but does not heat, ensure that the target temperature that is above the current temperature of the water.
Symptom: e Sansaire™ Immersion Circulator does not turn on.
Ensure that the power cord is rmly aached in the rear of the unit. In some cases, a household circuit may become overloaded from the use of electrical appliances causing the outlet to stop supplying power. Check any circuit breaker the outlet is connected to in the house.
Symptom: e display reads RESET.
e Sansaire™ Immersion Circulator includes a safety mechanism to protect components from overheating. is normally occurs when the water level is too low or the machine is operated outside a water bath.
If this happens, wait for the machine components to cool down and press the Reset buon on the back of the unit to restore the Sansaire™ Immersion Circulator to normal operation.
Symptom: Power cord becomes hot to the touch.
Check that the power cord is the original included in the packaging. If it is not, the cord may be rated too low. It needs to be rated at 16AWG (or less) to handle the current draw without heating. If, aer replacing the cord, the circulator continues to heat the cord, contact our custom­er service department.
