This manual will help you to easily understand how to operate the BLUE VISION combi oven and inform you about its options and capabilities.

1.1 USE: ITS PURPOSE
The BLUE VISION combi oven is auniversal appliance for preparing meals, including complete menus. It can be used for all types of food preparation methods based on heat, for example baking, frying, grilling, stewing, steam cooking, low-temperature overnight cooking, etc. The process is per forme d either in manu al mod e or i n automat ic mode utili sing progr ams .
1.2 INTRODUCTION: MAIN PARTS
The BLUE VI SION combi oven is alarge, in telligent oven for fo od preparatio n. Its most important parts are the cooking chamber equipp ed with arail rack for inserting gastronorm pans containing food (on sizes 201 1, 1221, 2021 the rail racks are substituted by aride-in trolley with racks). The glazed door and the crosswise racks provide an excellent view of the meal.
The brain of the appliance is an operating system with which one communicates using an intuitive control panel. It also allows one to record their favourite programs via aUSB connector.
To make the cooking process easier, the combi oven is equipped with atemperature probe for checking the temperature inside the food, a hand shower for cooling the cooking chamber, basting, rinsing the chamber and other helpful activities, and afl ap valve for venting excess steam.
When working with the temperature probe and the hand shower, adhere to workplace safet y, see 2. SAFETY DURING USE.

Accessories
GASTRONORM PANS AND BAKING TRAYS
Gastronorm pans and baking trays ser ve not only as containers for cooking and baking, but are also suitable for transporting, serving and storing the meals. They signifi cantly contribute to higher work e ciency - when one plans their work properly, it is often unnecessar y to transfer cooked or baked meals from one pan or tray to another.
Adhere to workplace safety codes when handling gastronorm pans, see 2. SAFET Y DURING USE.
STANDS, ROLLIN TROLLEYS AND BRACKE TS
Essential accessories for the combi oven include various stainless steel stands, wall brackets (on model 623) and roll-in trolleys (on sizes 1011, 2011, 1221, 2021). Special equipment is considered to be banquet basket s, trolleys and thermoboxes used for serving meals.
VISION VENT HOOD
Th e RE TIGO Vis ion Ve nt co nden sation hood wil l en abl e you to com fort ably maintain a pleasant climate in your kitchen thanks to strong exhaust performance and intelligent switching. RETIGO Vision Vent is designed for combi ovens RETIGO Vision 623, 611, 1011, 2011.
OIL GUN
This is a special device that allows one save up to 2/3 of the costs related to oil consumption for cooking, or when fr ying in the combi oven. Thanks to the narrow nozzle, one can perfectly coat the food with aver y fi ne layer of oil, and maintain the beautiful colour of fried foods while keeping oil consumption to aminimum. Thanks to the exchangeable nozzle, the oil gun can be use for other viscous materials used in the food in dustry, such as chocolate.
VISION SMOKER
The smo ke generator Retig o Vision Smoke r is asimple acces sory compati ble with all Retigo combi ovens. Thanks to simple controls, with the option to smoke up to thre e hours non-stop and its simple maintenance, the Vision Smoker will enable you to liven up the o ered meals or to expand the menu with smoked specialities.
When working with the Oil gun and the Retigo Smoker adhere to workplace safety as described in the operating manuals for this appliance.
1.3 CONTROLS: BASICS
TURNING ON AND OFF
The combi oven is permanently connected to the power grid and it is turned on and o by pressing an external main power switch . Its location is determined by the operator of the combi oven upon its inst allation and you as the user must be informed about its location. During ordinary use, it is enough just to put the convection oven into Standby mode by pressing the white circle under the display and then the Standby button.
OPENING AND CLOSING THE DOOR
The combi oven’sdoor is equipped with aclosing mechanism that allows right- or left-handed opening. Moving the lever to the side will release the door latch. Pull on the handle to open the door.
To close the door, push on the handle (by slamming). If you have an appliance with the ride-in trolley (2011, 1221, 2021) close the door and turn the door handle clockwise by 90°.
PREHEATING THE BOILER (combi ovens with aboiler)
When the combi oven is turned on, the boiler is automatic ally fi lled with water which is then heated. For this time, the start of the program will be temporarily disabled in the "Steam" and "Hot air with steam" modes, until the boiler is fully heated. After this time, the combi oven will automatically continue running.

The combi oven cannot be operated without acertain amount of caution, alertness and common sense. Even though the combi oven has been designed and manufactured to meet all international safety standards, the user bears primary responsibility for his or her safety while operating the combi oven. The manufacturer bears no responsibility for personal injury, equipment damage or environmental damage caused by failure to operate the combi oven according to the manual or by failure to follow applicable safety regulations.
This chapter provides the most impor tant information on working safely and protecting the health of the user and all others who come into contact with the combi oven or its accessories.
2.1 SAFE OPERATION
GENERALLY
The combi oven may only be used by personnel authorised, qualifi ed
and trained for operating it. Persons who are not authorised to use and have not been trained in its operation must never be allowed to handle or maintain it, or to perform any activity contrary to its use. Such unprofessional activity may cause injury or damage the appliance.
Get regular training on how to operate the combi oven. This prevents
occupational injuries and damage to the combi oven.
This combi oven is to be used only for food preparation and in
compliance with the manual. Any other use is in confl ict with its purpose and is considered dangerous.
For safety reasons, do not remove the hard covers or try to get inside
the combi oven - risk of injur y by electrical shock. The device contains no components that the user can handle. Repair of any defects or maintenance beyond that described in this manual must be done by aqualifi ed service technician.
Do not install any heated equipment in the immediate area of the combi
oven (such as fr yers, grills, cookers , hot plates, etc.).
Do not work with the combi oven if you su er from dizziness, fainting
or other weakness or lack of concentration or if under the infl uence of drugs or alcohol!
It is strictly forbidden to remove or damage the labels fastened to the
combi oven.
Only operate the combi oven in perfect working order.
Follow the prescribed inspection plan, follow the instructions in
the operating manual, adhere to generally valid regulations for gas appliances.
Do not place any items in the vicinity of the combi oven, which you could
trip over. Keep the workplace (including access ways) clean and tidy.
COMBI OVEN OPERATING ENVIRONMENT
The permitted ambient temperature range is +4°C to +35°C.
The environment must not be explosive or toxic.
Afi re extinguisher or an automatic fi re extinguishing system must not be
located directly above the combi oven.
There must be no fl ammable material s, gasses or liquids located
underneath or next to the combi oven.

BEFORE USING THE COMBI OVEN
If you have any doubts about the combi oven’sinstallation, operation or
safety, contact your supplier.
If the electrical equipment is damaged in any way, arrange repairs
immediately — never use adamaged combi oven.
Do not block the combi oven’svents with objects, and especially do not
place cooking utensils, fabrics or other items on the appliance. Make sure that steam freely escapes from the vents at the top of the combi oven.
Before using, check the combi oven’s cooking chamber. Remove all
remainin g food, cleaning agent residues or other object s, and thoroughly rinse the cooking chamber with the hand shower.
Be sure not to sp rinkle or spray water on the combi oven, a nd not to place
object s fi lled with water on it.
Do not place sources of open fl ame on or near the combi oven.
DURING USE OF THE COMBI OVEN
The following must not be placed inside the combi oven:
- any food inside closed boxes or packaging
- any easily fl ammable items with afl ash point lower than 260°C, such as for example easily ignitable oils, fats, wipes (cloths)
- any dr y powder or granulate
Do not continue using the combi oven if you have the slightest doubt as
to its safe operation or whether it is damaged. Turn it o immediately, unplug the power cable, shut o the water supply, and contact your supplier.
In the event that while using the combi oven you register an increased
noise level exceeding the permitted limit, stop the combi oven and remedy the cause.
Immediately report all faults to your superior, who must arrange for their
repair.
Do not leave the combi oven unattended while it is turned on, unless
explicitly instructed to by the manual.
Use only your fi ngers to operate the control panel buttons. Using sharp,
pointed or other objects to operate the appliance voids the warrant y.
When working with the combi oven, be aware that cooking containers,
cooking inserts an d grates can be hot. The temperature of the ex ternal glass on the door may reach temperatures higher than 60°C. In all cases there exists arisk of burns.
Hot steam is generated while the combi oven is running – when the
door is opened, there is arisk of scalding, etc. When opening the door, especially during steam operations, always stand in such away that you cannot be scalded by the steam escaping from the open door. Open the door only partially and open fully only once the steam has escaped.
If gastronorm containers are more than three-quarters fi lled with liquid,
greater care must be taken when handling and removing them. When placing containers this full into the appliance, put them only in racks into which you can see. Other wise, the user may be scalded. Take great care when removing hot cooking containers — whatever their content!
Be e special ly ca reful when wo rking with aco mbi o ven (set of app liances)
whose highest rack is 160 cm or higher above the ground. Here there is arisk that the gastronorm container may fl ip over and cause burns.
Hot areas may form during the cooking process, especially on the
cookware, grills and the inner side of the door. Use protective gloves whenever handling hot objects.
It is forbidden to start the fan without the cover.

If the combi oven is equipped with aride-in trolley, then you must always
brake the trolley once inside the appliance. When handling afull trolley, the gastronorm container locking mechanism must always be used (GNs are closed).
When transporting gastronorm containers fi lled with aliquid, they must
be covered with sealing lids. Other wise, the user may be scalded.
In the event that the fl oo r is very uneven, ri de-in trolleys must not b e used
for riding into or out of the combi oven. Never leave the trolley handle inside a closed combi oven. The combi oven door could be broken. Do not pull the ride-in trolley without the handle designed for this purpose. Otherwise, this may result in burns.
When using banquet trolleys, always make sure that the plates are
correctly seated on the stands.
For cleaning the trolleys, always use the automatic cleaning program
(if available). Otherwise, use cleaning products designed for semi­automatic cleaning. It is not permitted to use the combi oven without the ride-in trolley for standard work and automatic cleaning!
AFTER YOU HAVE FINISHED WORKING WITH THE COMBI OVEN
Perform cleaning and service only when the combi oven is cold!
Remove solid pieces of food by taking them out of the cooking chamber
— never wash them down the combi oven’sdrain.
Cleaning and descaling agents are to be used only according to the
instructions in this manual and in compliance with the instructions for the individual agent.
After work (e.g. overnight), leave the combi oven’sdoor ajar.
When the combi oven is not used for an extended period of time, shut o
the water and power supply.
2.2 PROTECTIVE AIDS
When operating the combi oven, it is also necessar y to wear the right clothes and use personal protection gear. Clothing, shoes and protective gear must comply with national safety requirements for your type of work. Especially do not forget to use these important items:

When working with the combi oven , we do not recommend wearing:
Scarves, neck ties, chains, watches, bracelets, keys, rings or other metal
object s, or work with an inappropriate bandage on.
Electrical components such as heart pacemakers, watches, credit cards,
etc., or other items with magnetic recording media.
Long, loose hair. Secure long hair with an appropriate head covering.
2.3 PROTECTIVE ELEMENTS OF THE COMBI OVEN
The combi oven is equipped with safety elements that make it safer to operate. Here is alist of the most important ones:
EXTERNAL MAIN SWITCH
The combi oven is designe d for permanent connection to the power grid. Connect and disconnect the power supply using an external main switch. The switch is used for turning the appliance on and o (when starting operation, making repairs, installing, and also in emergencies). The external main switch must be easily accessible at all times!
ELECTRICAL WIRING
Access to the area with electrical components is only possible after removing arigid cover. Circuits are equipped with acover and marked with awarning symbol, di erent colour wires and correspond to an IP 20 rating.
It is forbidden to tampe r with safety circuit s, to remove the side cove rs, or to perform any unauthorised changes, which change the reliability and safety of these circuits.
COOKING CHAMBER
Access to the cooking chamber is only possible after opening the door, which immediately stops the fan.
CONTROL PANEL
The control panel is located outside the area prone to high temperatures and makes it possible to quickly turn o the appliance using the STOP button. The display also shows malfunctions.
DOOR
The moment the door opens, the heat automatically shuts o and the fan quickly stops to limit the escape of steam from the cooking chamber. To protect against steam scalding, fi rst open the door slightly and wait awhile before opening it fully. To close the door, push on the handle (by slamming). If you have a convection oven with the ride-in trolley (2011, 1221, 2021), close the door and turn the door handle 90° clockwise.
If the door is not closed properly and the appliance is in the Start mode, a"close door" prompt will appear.
Under no circumstances should you remove any safety or protective element of the combi oven! Do not make any changes to it without the permission of the manufacturer.

2.4 DANGEROUS LOCATIONS AND RESIDUAL HAZARDS
Th e com bi oven i s des igne d so t hat w hen p rope rly u sed in p erfe ct te chnica l condition, it poses no danger to the user or surroundings. Nonetheless, during it s operation, situations may arise that could be dangerous if the user is not aware of them. These are called residual hazards — those that remain even after all preventive a nd protective measures have been considered and implemented. Learn more about these risks and avoid them.
1. COOKING CHAMBER
Burning hazard from hot places throughout the chamber. Use safety gloves. Perform cleaning and service only when the appliance
is cold.
Scalding hazard from hot steam produced during the cooking process Always wait for the chamber to cool, or cool it down using the Cooling
function.
When opening the door, especially during steam operations, stand in such away that you cannot be scalded by the steam escaping from the open door. Open the door only partially and do not open it completely until the steam has escaped.

Danger of fi nger injur y when negligently handling inside the cooking chamber during cleaning or maintenance.
Be careful and use safety gloves.
3. DOOR GLASS
Risk of burns when opening during or after the cooking process.

Fire hazard if the cover is covered or if fl ammable materials are on the cover during the cooking process.
Never cover the appliance or place on it any objects that may catch fi re. Your appliance is not astorage shelf!
6. GASTRONORM CONTAINERS
Risk of burns when handled carelessly and when protection aids are not used.
Never handle containers containing hot liquids or hot liquid food above eye level, and always use safety gloves.
7. FLAP AND CHIMNEY
Burning hazard from steam escaping during the cooking process Do not place any part of the b ody above these parts and always use
protective gear (gloves, safety glasses, etc.).
8. HAND SHOWER
Scalding hazard when showering the hot cooking chamber. Never use the hand shower to cool the cooking chamber if the
temperature is greater than 90 °C — this may scald the user and destroy the door'sinner glass. Allow the cooking chamber to cool below 65 °C.
Electrical shock hazard when showering the appliance'sexternal parts.
NEVER wash the appliance'sexternal parts with the hand shower.

Residual risks
ELECTRICITY
All of the combi oven'selectrical components are powered by potentially fatal 230 V AC current . The power supply terminals and other electrical
components remain under live voltage even when the combi oven is turned o . However, access to the area with electrical components is only possible after removing arigid cover. As the user, you are not authorised to service the appliance'selectrical components. There is only a hazard if ele ctri cal s upply cables are da maged, such as when inappropriately p laced, twisted, pinched, weighed down, etc. If they are damaged, it is necessar y to stop the combi oven immediately and have them replaced by an authorised service centre.
If it is not necessary to have the combi oven under live current, disconnect the main power supply connection by turning o the main power switch.
MECHANICAL PARTS
There is no mechanical hazard to the user if the combi oven is installed properly in the specifi ed location. Hazards arise only when the combi oven has been installed incorrectly (such as on atilt, not anchored on aslippery or unstable surface, etc.), and its unexpected movements may cause crushing or pinching.
When handling the combi oven, adhere to the relevant regulations for tying loads and the handling of lifting equipment.
HIGH TEMPERATURE
During the cooking process and after the cooking chamber door is opened, high temperature escapes into the appliance's surroundings. Make sure that there is adequate air circulation around the combi oven, e.g. by using afume hood.
DETERGENT
When using detergents, avoid direct skin contact with the detergent powder — there is danger of chemical burns. If there is danger of contact, use safety gloves.
When dosing, be especially careful not to inhale the detergent.
2.5 USING ACCESSORIES
TEMPERATURE PROBE
When using the temperature probe, adhere to the following:
Use the probe only for inser tion into food.
Do not insert the probe into frozen food. This can break it!
Never forcefully bend the temperature probe’spower cable.
Never pull the probe out of the food by the cable.
Place the temperature probe into the food in such away that it does not
lean against the door glass.
The temperature probe may be hot — use protective gloves.
Pull the temperature probe out of the food before removing the food
from the appliance and place it into the probe holder.
When the probe is not in use, keep it in the probe holder.
Never leave the temperature probe hanging outside the cooking
chamber — the door may close on it and damage it.
HAND SHOWER
When using the hand shower, adhere to the following:
The hand shower may only be used for cleaning the cooking chamber.
The hand shower works for only two minutes after the door is open.
Then it turns o automatically.
Never use the hand shower when the combi oven is hot. Allow it to cool
down to under 65°C.

STEAM COOKING
Substitutes for cooking in water. Temperature range: 30-130 °C
WARMING ON THE PLATE For warming cooled food.
GOLDEN TOUCH Controlled food completion through high-temperature baking for outstanding colour and crispness
COOK and HOLD After cooking is over, automatically changes the system phase to maintain food at 75°C. If the cooking process is fi nished according to the temperature at the centre of the food, and that is lower than 75°C, for the maintenance phase, the convection oven automatically sets the temperature at the centre when cooking ended.
B3 HUMIDIT Y CONTROL
HOT AIR mode is shown by afl ap symbol, and moving or tapping the scroll bar allows the following settings:
Fully open fl ap valve; continuous venting of humidity from the cooking chamber.
The system controls the opening/ closing of the fl ap valve itself according to the set percentage of humidity.
Fully closed fl ap valve; all the humidity stays in the co oking chamber.
In Combination mode, humidity is displayed as a percentage, which can be changed by moving the scroll bar in a range from 0% to 100%.
NOTE: In STEAMING mode, the humidity is afi xed setting and cannot be changed.
B4 SETTING THE TIME
Set the cooking process time. Time range: 00:01-23:59 (h:m)
B5 COOKING PROCESS TEMPER ATURE
Set the cooking process temperature. The temperature range depends on the used cooking mode.
B6 SETTINGS FOR OTHER FUNCTIONS
FAN SPEED Set seven fan speeds.
FAN TIME CONTROL The fan will rotate only:
- when the heating elements are on.
- for 10 seconds when idle for longer than 2 minutes.
NOTE ON THE STEP Allows text comments to be written, which will display upon transition to the relevant program step. The comments are accompanied by an audible signal.

4.3 EASY COOKING
Cooking in the Easy Cooking mode enables even aless experienced chef to achieve excellent results. It is not necess ary to know the individual phases of the cooking process in detail and laboriously set the individual steps. The Easy Cooking system is atype of guide that will automatically recommend and set the suitable technology base d on the type of meal and the desired result.
In the Easy Cooking mode the user limits themselves to simply selecting ameal, possibly adjusting the doneness level and surface colour and th en presses the Start button. The combi oven does every thing else for you.
You may enter the cooking process at any phase and edit the preset parameters so that the result meets your expectations
If you are satisfi ed with the fi nal product, you can save the selected technology to your programs and use it at any time to achieve the same quality results.

This special preparation requires the additional Vision Smoker. Using this adds asmoky fl avour according to the type of wood chips burned.
Canning
This function is for canning meat, vegetables, fruit, prepared foods, jams, marmalades and mushrooms. It requires that the food be put into the convection oven in appropriate containers (glass jars, tins) sealed in the manner recommended for canning.

Retigo Blue Vision combi ovens o er aunique option to adapt the main screen (A). Based on your own needs , on the main screen you may, for example, change the button size, their arrangement, remove or add buttons, change their colour, change the background colour, etc. You can save the change as your custom PROFILE. The number of added buttons is unlimited. If the buttons are outside the screen area, use the scroll bar on the right side of the display.

Regular use of this automatic cleaning system saves you time and signifi cantly prolongs the life of the appliance.
Thanks to this system, the only cleanin g tasks on this appliance are:
choosing the right cleaning program for the level of soiling
starting the cleaning program and adding detergent.
7.1 BASIC INFORMATION AND WARNINGS
For automatic cleaning, you must use the Retigo Active Cleaner detergent, which is packed in 60 g plasti c bags. It is delive red in small buckets co ntaining 50 packs.
The detergent’s package protects it from moisture damage, never theless it should be stored in places where no water or excess humidity is present. Always use the detergent immediately af ter opening the package. Never leave it open, and most imp ortantly, do not leave it in damp places or unsupervised.
Important information:
If a detergent other than original Retigo Active Cleaner is used
(Retigo Manual Cleaner, Active Descaler), Retigo takes no responsibility for any damage, and the warranty does not apply to damage caused in this way.
Keep the detergent out of the reach of children.
When handling the detergent, follow all rules for working safely
with chemical substances, and especially use safety gear (primarily gloves and protective glasses).
Follow the instructions on the detergent package.
The detergent must never come into direct contact with the skin,
eyes or mouth.
Never open the appliance’s door when the cleaning program is
running – this can cause achemical exposure hazard.
Also remove gastronorm pans from the combi oven before cleaning
it.
Follow all instructions shown on the appliance’sdisplay.
After using the detergent, do not leave the detergent package in the
cooking chamber.
Never spill the detergent on the appliance’shot surface — this can
irreversibly damage the stainless steel surface. The warranty does not apply to appliances damaged in this way.
If cleaning is inadequate, fat build-up in the appliance’s cooking
chamber may ignite during ordinary operation.
The combi oven has four cleaning programs. Which program to use depends on the level of soiling in the cooking chamber.

STOPPING THE CLEANING PROGRAM PREMATURELY
You can interrupt the cleaning process during the main step with the STOP button shown on the screen. If you do this, the combi oven will ask if you really want to stop it. If you confi rm, the pro gram will switch to rinse mode, which lasts about 16 minutes. Then the cleaning process is completely fi nished. If you do not confi rm the pause and press No, the process will continue where it left o .
When the cl eaning proces s has fi nis hed, check th e cooking cham ber.
Remove any remaining detergent by thoroughly rinsing with the hand shower or cleaning with water. If this isn’t done, the stainless­steel surface of the cooking chamber can distort and discolour whe n the ap plian ce is us ed at hi gh tempera tures . The wa rrant y does not cover damage caused in this way!
Do not wash the combi oven using equipment that works with high
water pressure.
If t he combi oven won’t be u sed again after cl eaning, we recom mend
leaving the door ajar, for example overnight
Dispose of the detergent package as usual, by putting it in aplace
reserved for plastic bags.
Never leave used packages lying around freely accessible.
DESCALING THE COOKING CHAMBER
Descaling is recommended when the cooking chamber is visibly calcifi ed (awhite layer of lime scale). To descale the convection oven, the special substance Vision Descaler must be used.
This substance is applied in the same way as Active Cleaner. The standard package for Vision Descaler is aplastic bucket containing 25 bags of 150g.

08 I MAINTENANCE
GENERAL INSTRUCTIONS
The combi oven must be kept clean, and remains of old fat and food must be removed. Not following the maintenance instructions will void the warranty.
Only regular maintenance and adherence to all instructions will ensure the combi oven'slong life and cooking quality and guarantee trouble-free operation.
For safe, trouble-free operation, the combi oven and it s accessories must be inspected by an authorised service at least once p er year.
Before starting any maintenance or repair works, thoroughly
reacquaint yourself with all instructions, restrictions and recommendations in chapter SAFETY.
The warranty does not cover damage caused by unprofessional
cleaning and maintenance.
During the entire time of operation, the appliance must be subject
to regular checks, inspections and tests according to applicable national regulations on operating this type of equipment.
The user must not rearrange any elements set by the manufacturer
or authorised service technician.
When opening the door, especially during steam operations, stand
in such away that you ca nnot be scalded by th e steam escaping f rom the open door. Open the door only partially and open fully only once the steam has escaped.
Do not spray water from the shower on the door’sglass and lights, if
the internal temperature is above 90 °C — this may break the glass.
Before turning on the appliance, always check to see that the water
valve is open. Once work is over, close the appliance’swater valve!

8.1 DAILY MAINTENANCE
The comb i oven must be clean ed daily with Retig o’srecommen ded cleaning agents . If the combi oven is not cleaned adequately, afat layer builds on the chamber walls and can catch fi re at high temperatures. Damage caused by failure to follow these instructions is not covered by the warranty!
CLEANING THE COOKING CHAMBER
For everyday cleaning of the combi oven, use one of the fi ve programs in the Cleaning function, which you fi ll fi nd in the combi oven menu.
When cleaning, use only the cleaning agents recommended by the manufacturer (Retigo Active Cleaner, Retigo Manual Cleaner or Active Descaler).
When the combi oven is being cleaned with adetergent, its temperature must under no circumstances exceed 70 °C . At higher temperatures, the detergent may bake on to the surface of the cooking chamber and form stains resembling rust. The warranty does not apply to burnt-on cleaning agent.
After cleaning the cooking chamber, leave the door ajar.
When cleaning the combi oven, always use safety gear and
prescribed work clothing (gloves, goggles, mask)! Protect your health!
When working with acleaning agent (such as Retigo Active Cleaner,
Retigo Manual Cleaner or Active Descaler) always take great care to follow the manual and recommendations of the cleaning agent manufacturer. This will prevent hazards to your health!
If the combi oven is not cleaned adequately, a fat layer builds on

After fi nishing manual cleaning, always use the hand shower to

When the cleaning program (manual cleaning) has fi nished, check
that the selected cleaning program (hand cleaning) was su cient. If not, repeat the wash. The warranty does not cover damages caused by insu cient cleaning!
Never clean the combi oven using acid or leave acid near the
appliance — this can damage the stainless-steel surface!
Do not use coarse or sand-based cleaning agents.
Do not use objects for mechanical surface cleaning (wire brushes,
scrapers, knives).
Do not clean the combi oven using equipment that works with high
water pressure.
The warranty does not cover damages arising as a result of using
detergents other than those recommended by the manufacturer, or as a result of using the detergents recommended by the manufacturer in contradiction to the recommendations of the manufacturer!
CLEANING THE DOOR SEAL
If the door’sseal is soiled or greasy, clean it or remove it without using atool (start at the corners) and wash it in water with detergent . Once the seals are dry, reinstall them without using a tool (again, start at the corners). After cleaning , leave the appliance’sdoor ajar so that the cooking chamber can air out. This also makes the door seals last longer.

CLEANING THE EXTERNAL PARTS
If the exterior parts of the combi oven are soiled or greasy, clean them using asuitable agent intended for cleaning and treatment of stainless steel.
8.2 MONTHLY MAINTENANCE
Cleaning the rear area, fan, water shower and heating elements
Clean out the cooking chamber.
Remove the lef t rail rack. First press
upwards (1) to release it from the bottom pins. Then pull the rail rack down from the upper pins (2) and pull the rail rack out.
Release the locks fastening the
interior wall in front of the fan. Ascrewdriver or coin can be used to release them.
Open the inner wall by pulling on
the left side.
Proceed as in Daily maintenance, but also spray the special Retigo Manual Cleaner on the entire rear area, fan, water shower (tube in the middle of the fan into which the spray tube leads) and the heating elements.
After perfectly cleaning the cooking chamber, heat the appliance back up to about 50°C to 60°C.
The temperature must never be higher than 70°C!
DESCALING THE COOKING CHAMBER
Descale the cooking chamber with the Cooking chamber descaling program and use the Active Descaler agent. If ever ything is not clean enough, repeat the process.
CLEANING THE DOOR SEAL
Wash the door seals with detergent.
After cleaning the cooking chamber, re-close the inner wall (in front of the fan), turn the locks to secure it in pl ace.
After completing maintenance, reinstall the lef t rail rack. Leave the combi oven’sdoor ajar so that the cooking chamber can air out. This also makes the door seals last longer.
The combi oven has an auxil iary fan for cooli ng the area where the e lectrical connection and control electronics are located. Co oling air is drawn through th e air fi lter, which is located at th e bottom of the control p anel, and escapes through ahole in the back of the appliance. For e ective cooling, it is necess ary for the air fi lter to be regularly cleaned ever 3months. In the event of heav y soiling, it is necessary to clean the fi lter more frequently. We recommend checking the fi lter at least once amonth.
CLEANING THE AIR FILTER
The fi lter is located on the bottom left side of the appliance. Simply pull it out and wash it thoroughly with warm, soapy water. It can also be washed in adishwasher. After cleaning, allow it to dr y.
Slide the fi lter back inplace.
8.3 YEARLY MAINTENANCE
INSPECTING THE INSTALLATION AND APPLIANCE
After ayear of operation, the installation and combi oven must be checked. We re comm end h aving t his inspecti on pe rfo rmed by an auth oris ed service, which will check the installation and appliance according to the Inspection steps char t below.

SERVICE LIFE
The product’sservice life is 10 years if the following conditions are adhered to: A regular preventative service inspection after ever y 12 months of operation. This inspection must be performed by service technicians from aRetigo-authorised partner company.
The user must present alist of service events.
The user must precisely follow the instructions in the operating manual.
The user must maintain and clean the appliance daily using cleaning agents recommended by Retigo.
If the appliance has automatic cleaning, cleaning agents recommended by Retigo must be used exclusively.
Training of users by aRetigo professional cook must be documented in the service booklet or by copies of the user training log.
If operating personnel change, training must be conducted again.

For disposal of the COMBI OVEN after it has been taken out of operation, it is necessary to comply with applicable national regulations on waste disposal. The appliance contains electrical parts (electronics, transformer, halogen lamps, bat tery, etc.) that may damage the environment if disposed of improperly.
The combi oven and its parts MUST NOT be disposed of in communal waste!
The appliance's end user must choose among three of the following disposal options:

How to prepare the combi oven for disposal:
Professionally disconnect the electrical equipment from the media
Place the electrical equipment on apallet , secure it with shrink-wrap, and
transport it to an appropriate loading location.
Removal and disposal are free for the end user. In cooperation with acontracted company, Retigo s.r.o. will a rrange the remova l and disposal of the electrical equipment in accordance with the law in force. Likewise, Retigo s.r.o. will arrange the disposal of other companies’ electrical equipment of similar t ype and use, if Retigo s.r.o. products are replacing them.
Disposal by the appliance'sdistributor
Order disposal of the combi oven through the distributor, who will then arrange disposal with Retigo.
When ordering, provide the following information:
exact address for picking up the combi oven
contact p erson, telephone
time for picking up the combi oven
Disposal on your own
If you decide to dispose of the combi oven on your own, comply with applicable national waste disposal regulations. Take the appliance'ssheet metal parts to an appropriate collection facilit y, and put the glass into recycling bins. Take ceramic insulation and electrical parts to aspecialise d company authorised to treat and dispose of such waste.
WARRANTY
The warranty period is noted in the service booklet and on the warranty certifi cate. Demand aconfi rmation of the warranty from the company that installed your combi oven.
Not covered by the warranty are damage and failures caused by incorre ct operation, failure to observe this operating manual, use of aggressive cleaning agents, and improper cleaning of the combi oven. Also not covered are defects caused by installation that is not in keeping with the manufacturer’s recommendations, incorrect repairs, unauthorised tampering and force majeure.
