Do not leave infants, children, or pets unattended near a hot smoker. Leave a clearance of at least 10 feet between the smoker and combustible material (bushes, trees, wooden
decks, fences, buildings, etc.) when smoker is in use. Do not place smoker under a roof overhang or other enclosed area.
Use extreme caution when adding charcoal/ wood. Do not attempt to move a hot smoker. Use oven mitts at all times, as smoker will become very hot. Avoid hot surfaces by using handles at all times. Always use the toggle latches to lock the unit together. Always put charcoal into the charcoal basket and not
directly into the bottom of the bowl.
Using abrasive cleaners on the cooking grate or the smoker will damage the finish. Using sharp objects to clean the cooking grate or to remove ash will damage the finish.
For one year from date of purchase, ProBBQ Ltd warrants this charcoal smoker against defects due to bad workmanship or faulty materials to the original purchaser. ProBBQ Ltd’s obligations under this warranty are limited to the following guide-lines:
• The warranty does not cover smokers that have been altered or damaged due to: normal wear, rust, abuse, improper maintenance, improper use, disassembly of parts and/or attempted repair by anyone other than an authorized employee of ProBBQ Ltd.
• This warranty does not cover surface scratches or heat damage to the finish, which is considered normal wear.
• ProBBQ Ltd may elect to repair or replace damaged units covered by the terms of this warranty.
• The warranty extends to the original purchaser only and is not transferable or assignable to subsequent purchasers. ProBBQ Ltd requires reasonable proof of purchase. Therefore, we strongly recommend that you retain your sales receipt or invoice. To obtain repair or replacement of your charcoal smoker under the terms of this warranty, please call Customer Service Department at 0845 3704420 (UK)for a Return Authorization Number and further instructions. A receipt will be required. A return Authorization Number must be clearly marked on the outside of the box. ProBBQ Ltd will not be responsible for any smokers forwarded to us without a Return Authorization Number. EXCEPT AS ABOVE STATED, ProBBQ Ltd MAKES NO OTHER EXPRESS WARRANTY. THE IMPLIED WARRANTIES OF MERCHANTABILITY AND FITNESS FOR A PARTICULAR PURPOSE ARE LIMITED IN DURATION TO ONE YEAR FROM THE DATE OF PURCHASE. Assembly Instructions
Tools required for assembly:
Philips (Star) Screwdriver. 8mm - 5/16 Spanner/ wrench 10mm – 3/8 Spanner/ wrench
Remove all the components from the box, and lay them out on a smooth flat surface.
Base/ Firebowl Unit Assembly
Step 1. Locate the base unit 14. Step 2. Lay the base unit open side down and attach the 3 legs 15, using the six M5 x 10mm nuts and bolts. (Diagram 1). *NB – Avoid over-tightening the bolts, as this can cause damage to the finish. Step 3. Now turn the base unit over, so that it stands on its legs. Step 4. Attach the 2 larger halves of the toggle latches 08 using the M4 x 8mm nuts and bolts (diagram 2) to the base in two places. Step 5. Insert the Charcoal Pan 12, this should rest on the upper part of the leg. Step 6. Attach the 3 black grill/ water pan brackets 13.

Cooking Chamber/ Stacker Assembly
Step 7. Locate a mid section chamber unit 09, and affix the smaller halves of the toggle latches to the bottom 04 (diagram 4) and the 2 larger halves of the toggle latches 08 (diagram 2a) to the top of this unit. Step 8. Attach the 3 “U” shaped grill brackets 13 (the longer side at the bottom). The cooking grate rests on the upper part of the
bracket and the water pan rests on the lower part.
Step 9. Attach the 2 handles 01 and place the completed unit onto the base unit. Use the toggle latches to lock the units together.
Lid Assembly Step 10. Locate the lid 03, this is the other dome shaped part (this one has a
temperature gauge).
Step 11. Attach the handle 01 to the top – If your unit comes with the fish/ meat hanger 16 & 17, you need to place this on the inside of the lid, as it is held by the same bolts that hold the lid handle. Step 12. Attach the 2 remaining toggle latch pieces 04 (small ones).
Some Useful Tips To Get The Most Out Of Your ProQ BBQ Season your BBQ/ smoker (this only has to be done once) – Start with a small fire (about 4Lbs of Charcoal Briquettes) in the
charcoal basket, make sure the charcoal has a grey appearance (there shouldn’t be any flames), before putting the rest of the unit on to the base. Set the air vents to half open, and then pop some wood chips/ chunks onto the fire, this can be done through the bottom door. Let the fire burn down until it is completely cold, this should take about 3 hours. Once you have disposed of the ash in the base unit, your BBQ is ready to use.
Leave the top vent open. Cleaning your BBQ – It should only be necessary to clean the 2 grills, the water pan and the base unit after each use. This can be
done with hot soapy water, and is best done as soon after each use as possible. The coating, created by the smoking process, helps to seal and protect the inside of your BBQ. Please don’t use sharp or highly abrasive materials to clean your BBQ, as this may
damage the finish. Safety – Always use BBQ/ Oven mitts to protect your hands, as the units will get hot. Is it cooked? – We recommend using a good quality Temperature probe thermometer for this. Heat loss – This is most often caused by removing the lid to look at the food, if you can, resist the temptation, as every time you
remove the lid it adds approximately 15 minutes to the cooking time.
Using your BBQ/ Smoker
To BBQ/ grill
1. You will only need the base unit and one of the grills.
2. Get the charcoal going in the charcoal basket, remember, the charcoal is only ready to cook on once it has no more "black bits" visible.
3. Place the grill on the brackets just inside the lip of the base and away you go!
4. Use the lid if the flare ups get out of hand, or you want to use it like a Weber "Kettle"
To Roast
1. You will need the base, the cooking chamber, the water pan and the lid.
2. Get the charcoal going in the charcoal basket, remember, the charcoal is only ready to cook on once it has no more "black bits" visible.
3. Whilst you are waiting for the charcoal to burn down, you can prepare your cooking chamber.
4. Put water in the water pan, you can add beer, wine or some herbs of your choice. Some people say that the water pan has no effect on the end results, it is worth trying, as the juices left over make a great gravy. If you don't want to use water, fill the pan with clean sand, as you still need to have a buffer between the food and the fire.
5. Place the food on the grill, just above the water pan and once the charcoal is ready, place the cooking chamber onto the base unit.
6. Place the lid onto the cooking chamber, sit back and enjoy the party. A medium size chicken should take about 3 hours, but it's always best to use a probe thermometer to be sure it's done.
To Smoke
Set up the unit exactly as if you are going to roast, the only difference is that you will be adding some wood chips, chunks or
dust to create smoke at some stage of the process.
The smoking wood is usually added at the beginning of the cooking process, and if a very slight smoky taste is what you're
after, just a handful of chips, should do the trick. Add more chips if you want a stronger flavour.
The amount and type of wood added will determine the amount and type of smoky flavour, as each variety of wood, imparts a
different taste to the food. Be a devil, and don’t be afraid to mix different wood type
