OPER ATION
Y our barbec ue is not designed t o be us ed with m ore t han 50% of t he cook ing area as a s olid plat e – t his includes bak ing dis hes. If m ore t han 50% of y our cooking area is covered by a s olid c ooking surf ace, the
barbecue c ould ov erheat caus ing damage t hat is not cov ered by warranty. Grill cooking
The cast iron burners heat the lav a rock beneath t he grill that, in turn, heats t he f ood. The natural juices produced during cooking fall onto the lava rock and vaporise to form smoke. The smoke then rises and ‘bast es ’ the food, giving it that unique barbec ued flav our.
When using y our barbecue for grill cook ing y ou may wish t o place the hood in t he c los ed pos ition which will hold the heat in t o aid c ook ing.
Gri ddle plate co o king The cast iron burners heat the griddle plat e directly, which then cooks the f ood on cont act. Griddle plates
enable the cooking of smaller it ems t hat would, otherwise, f all through the grill. They can also be us ed f or searing c uts of meat or c ook ing food lik e eggs t hat would not be possible t o c ook on a grill. Griddles can als o
be used to heat pans. Roasting ( hoode d barbecues only)
If your barbec ue is supplied with a roast ing hood rat her than a lid you are able t o roast or bak e in a sim ilar way as in a conv ent ional gas ov en. For best result s place the food y ou wish to bake or roast in a m et al baking tray
and set it on one side of t he cooking grill. Turn t he burners directly under t he food to the ‘OFF’ pos it ion and the burners opposit e t he food to the ‘Medium’ setting. Clos e the hood and this will f orm an oven t o cook the
f ood ‘indirect ly ’. Monitor the temperature using t he heat indicator on the hood. If t he int ernal heat becomes too high, turn t he burners to t he ‘low’ position. It is not necessary or advisable t o hav e all of t he burners on high when the hood is closed. If the hood is opened during cook ing to chec k on the progress of the food,
please allow ext ra cook ing t ime f or the barbec ue t o regain its temperature. Take c are when opening the hood
Page 22

as hot steam can be released on opening. War ming Basket
Warm ing baskets are a conv enient way t o keep c ook ed food warm or to warm it ems suc h as bread rolls . It is adv isable t o plac e f ood to the f ront of the warming bas ket t o av oid the possibility of juic es and f at running
down the back of your barbecue. Always check t hat your warming bas k et is properly fitted before us e. Fl ar e-up con trol
Flare-ups will often occur when food is barbecued as fat and juices fall onto the lava rock. Some fat is neces s ary t o give the f ood its barbecued f lav our but excessiv e f at can result in a f lare-up. To avoid flare-ups it
is advisable to trim excess fat from meat and poultry before grilling, use cooking sauces and marinades sparingly , and try t o avoid v ery cheap cuts of m eat or meat products as thes e t end to have high f at and water
cont ents. Flare-ups can be ex tinguished by apply ing salt direc tly ont o t he f laring lav a rocks, taking care to protect your sel f fro m the flame s.
Fat Fire s The Foil Liner must be emptied and t he drip t ray cleaned of food debris af ter each c ooking session. If the
barbecue is to be us ed f or c ommercial use or large gatherings, it will be necessary to turn off and cool the barbecue ev ery two hours to remove f ood debris f rom t he drip t ray and clean out the Foil Liner, the time
between cleaning may need to be reduced if very fatty foods or cheap meat products are being cooked. Failure t o do t his may res ult in a f at f i re, whic h may c aus e injury and c ould serious ly dam age the barbec ue.
In the ev ent of a fat fire;
If safe to do so, turn all control knobs to the ‘off’ position.
Turn off the gas at the gas bott le.
Keep every one at a saf e dist anc e from t he barbecue and wait until the f ire has burnt out .
