General Information
Omcan Manufacturing and Distributing Company Inc., Food Machinery of America, Inc. dba Omcan and Omcan Inc. are not responsible for any harm or injury caused due to any person’s improper or negligent use of this equipment. The product shall only be operated by someone over the age of 18, of
sound mind, and not under the inuence of any drugs or alcohol, who has been trained in the correct operation of this machine, and is wearing authorized, proper safety clothing. Any modication to the machine voids any warranty, and may cause harm to individuals using the machine or in the vicinity of the machine while in operation.
CHECK PACKAGE UPON ARRIVAL
Upon receipt of an Omcan shipment please inspect for external damage. If no damage is evident on the external packaging, open carton to ensure all ordered items are within the box, and there is no concealed damage to the machine. If the package has suffered rough handling, bumps or damage (visible or concealed), please note it on the bill of lading before accepting the delivery and contact Omcan within 24 hours, so we may initiate a claim with the carrier. A detailed report on the extent of the damage caused to the machine must be
lled out within three days, from the delivery date shown in the shipping documents. Omcan has no recourse
for damaged products that were shipped collect or third party.
Before operating any equipment, always read and familiarize yourself with all operation and safety
instructions.
Omcan would like to thank you for purchasing this machine. It’s of the utmost importance to save these instructions for future reference. Also save the original box and packaging for shipping the
equipment if servicing or returning of the machine is required.

sont dans la boîte, et il n’y a aucun dommage dissimulé à la machine. Si le colis n’a subi aucune mauvaises manipulations, de bosses ou de dommages (visible ou cachée), notez-le sur le bond de livraison avant
d’accepter la livraison et contactez Omcan dans les 24 heures qui suivent, pour que nous puissions engager
une réclamation auprès du transporteur. Un rapport détaillé sur l’étendue des dommages causés à la machine
doit être rempli dans un délai de trois jours, à compter de la date de livraison indiquée dans les documents d’expédition. Omcan n’a aucun droit de recours pour les produits endommagés qui ont été expédiées ou cueilli
par un tiers transporteur.

Tras la recepcion de un envio Omcan favor inspeccionar daños externos. Si no hay daños evidentes en el
empaque exterior, Habra el carton para asegurararse que todos los articulos solicitados ésten dentro de la caja y no encuentre daños ocultos en la máquina. Si el paquete ha sufrido un manejo de poco cuidado, golpes
o daños (visible o oculto) por favor anote en la factura antes de aceptar la entrega y contacte Omcan dentro
de las 24 horas, de modo que podamos iniciar una reclamación con la compañia. Un informe detallado sobre los daños causados a la máquina debe ser llenado en el plazo de tres días, desde la fecha de entrega que se muestra en los documentos de envío. Omcan no tiene ningun recurso por productos dañados que se enviaron
a recoger por terceros.
Antes de utilizar cualquier equipo, siempre lea y familiarizarse con todas las instrucciones de
funcionamiento y seguridad.

Safety and Warranty
GENERAL SAFETY WARNINGS
Before staring-up the oven, read carefully the instructions in this manual and follow its directions.
The ovens produced by our company are simple to use, guarantee the best cooking quality using a small quantity of wood, which is ecological and economic. All Omcan Elite Wood Burning Ovens are static baking
(without ventilation) to obtain a natural and genuine food (like the wood-burning ovens with direct cooking). All

ovens are manufactured with high quality materials and are subject to careful tests.
The oven is also equipped with all the protections and safety devices deemed necessary.
In any case it’s necessary to follow carefully the following guidelines:
Use only wood to light the re, ecologically and easily available, take care not to use painted or treated
wood with plastic material or toxic paints.
The oven should not be lit close to inammable materials or explosives.
Temperatures higher than 300°C/572°F may damage the oven.
Always use oven gloves to prevent burns, in case of a contact with hot parts of the oven.
During the lighting, heating and cooking; children should be kept away from the oven.
Never put your hands in the oven while it is running, and wait for it to cool down after use.
Do not change for any reason oven parts.
IMPORTANT: It’s absolutely forbidden to store ammable materials inside the trolley compartment.
The use of fuels other than those specied by the manufacturer can cause damage to the oven and situations
of danger for the user.
The oven must not be used:
For different uses not mentioned in this manual.
With excluded or not braked safety devices.
IMPORTANT: The use of the oven for other purposes than those referred, the manufacturer is relieved from any liability for damage caused by the oven to things and / or people.
During the lighting, heating and cooking children should be kept away from the oven.
6 MONTHS PARTS AND LABOUR WARRANTY
Within the warranty period, contact Omcan Inc. at 1-800-465-0234 to schedule an Omcan authorized
service technician to repair the equipment locally.
Unauthorized maintenance will void the warranty. Warranty covers electrical and part failures, not
improper use.

WARNING:
The packaging components are classied as normal solid urban waste and can therefore be disposed of without difculty.
In any case, for suitable recycling, we suggest disposing of the products separately (differentiated waste) according to the current norms.

Installation
TRANSPORT, HANDLING AND STORAGE
Transport and Handling
The oven can be transported with a standard equipment capable to bear the oven’s weight and size (see the above table). All the models have the same ttings and installation arrangements for the hooking and lifting.
Attach slings with right load capacity, consisting in a single hook, positioned on the chimney pipe.
For handling of the oven with packaging on pallets can also put a pallet lifter on the bottom of the oven.
Never place the forks of the pallet lifter in a position other than specied.

Installation
It is recommended to always use vehicles that can support the weight and size of the oven.
Slings must be certied according to the applicable regulations and of suitable load capacity.
The manufacturer is not liable for damage to people or objects due to the use of lifting systems other than those described above.
Storage
In case of long periods of inactivity, the oven must be stored by following these instructions:
Store the oven in a closed place.
Protect the oven from bumps and loads.
Protect the oven from moisture and high temperature ranges.
Ensure that the oven does come in contact with corrosive substances.
Preparation of Installation
For installation you must prepare a maneuvering area suitable for the oven and the chosen lifting vehicle. The installation of the oven must be made in order to optimize the ergonomics and safety of the workplace.
Make sure that there is enough maneuvering area around the oven to facilitate the operating and any maintenance work. Remove the packaging that protects the oven and dispose of as necessary.
FLUE CONNECTION
IMPORTANT: The ue of the oven has to be connected to a chimney of suitable length and air ow characteristics. The location of the oven should be well ventilated.
Operation
INITIAL SET UP
WARNING: Before using the oven for cooking of food you must read and follow the instructions below. These operations will help to eliminate any oils and smells. Read this manual to avoid any health risks.
Open the upper door and remove packaging.
Clean the walls of the cooking chamber with a product suitable for cleaning steels (for food use), during this
operation we advise you to use a clean cloth and completely remove any residual oil created during the production.
Load the combustion chamber with dry and small pieces of wood.
For the rst time, operate the oven with the upper oven-door (COOKING CHAMBER) slightly open, so that
the steam and condensation can escape. Let it run for about 3 hours on low heat.
To operate correctly, keep both doors closed with the valves in a vertical position, then light the re to start
to heat the oven. Once the temperature has reached the desired heat, check the combustion chambers

have remained with only the coal and turn the valve in a horizontal position to stabilize the oven and start cooking.
Once you have nished cooking, we recommend you to leave the two doors closed while the oven is
cooling. This is to avoid the change between internal and external temperatures creating condensation.
WARNING: Continuously putting wood into the combustion chamber causes an increase of temperature, if the increase is too much it can cause the deformation of the oven (damage not covered under the warranty), NEVER EXCEED THE TEMPERATURE INDICATED ON THE OVEN THERMOMETER 250/300°C - 482/572°F.
USE OF THE OVEN
Start-Up
Before using the oven:
Carefully follow all the instructions.
Always use oven gloves to avoid burns.
Before each use, make sure that there are no foreign objects inside the plate-warmer compartment or in
the combustion chamber.
Operation Descriptions
Put the wood into the combustion chamber and light the re using suitable products (lighters).
During the lighting keep open the air vents located on the door of the combustion chamber.
To heat the oven use dry wood of small size until reaching the maximum temperature of about 250/300°C - 482/572°F. When the oven has reached the desired temperature close the vents.
Small quantities of wood should be feed to avoid a sudden increase of temperature.
Be careful not to exceed the temperature shown on the thermometer of 250/300°C - 482/572°F.
To increase the temperature just put a very small quantity of wood in the combustion chamber, to lower the
temperature just open the door to the cooking chamber.
It is possible to cook the food directly above the refractory oor (only for foods such as bread and pizza).
For baking of bread and cakes we recommend to bring the oven initially to the desired temperature (see
the table about the recommended temperatures), then make sure that in the combustion chamber there is only embers then close the valve of the chamber (turn it in horizontal position). After the closure of the valve wait for about 15-20 minutes, so that the temperature of the cooking chamber is harmonious and
stabilized. Put the bread or the pizza above the refractory oor and wait for the product to cook. After the bread has been baked it is possible to bake pastries (cakes, pies etc.), without rekindling the re.
For baking of bread we recommend to place the loaf of bread on a distance of 10 cm from the perimeter
wall of the cooking chamber.
COOKING TIME
Below are some general guidelines for cooking some kinds of dishes. Do some tests, by cooking small portions
to verify the real cooking time and the right temperature. Please note that the temperatures refers to the oven thermometer.

The indicated temperatures and times may vary, depending on the type of wood and if the wood is dry or not.
For dishes such as Lasagne, Parmigiana, baked chicken, pork, lamb etc. We recommend you to place the
food inside the cooking chamber when the oven is cold. The food has to reach the right temperature gradually,
ensuring you will have homogeneous and equal baking.

OVEN INSULATION AND ROUTINE MAINTENANCE
The oven has been designed to minimize routine maintenance, it is up to the operator to evaluate the condition
and its suitability for use. We recommend to do maintenance every time you notice a non-optimal operation or a minimum once/year. This will allow you to have always the maximum efciency.
In order to ensure a long life of your oven it’s essential to clean frequently bearing this in mind:
Chrome-plated or painted parts have to be cleaned using a very mild product suitable for cleaning of
painted parts. Do not use abrasive and corrosive products. Rub gently the parts that have to be cleaned using a soft cloth.
Do not throw out the materials used for the cleaning of the oven in the environment, but dispose in special containers.
Rinse the stainless steel parts with warm water and dry with a soft and clean cloth. In case of difcult stains use mild cleansers or a small quantity of hot vinegar.
The inside of the oven should be cleaned after each use, better while the oven is still warm but not hot.
The glass-doors of the combustion and cooking chambers must be cleaned only when the oven is cold
(cold water coming in contact with hot glass can cause it to break).
Periodically you should empty the ashes from the tray, but only when the oven is cold. Make sure there are no embers before disposal.
