INTRODUCTION
Thank you for purchasing the '50s-STYLE DOUBLE ICE CREAM MAKER from Nostalgia Electrics. Even better than a milkshake with two straws at the drive-in, now you can make delicious ice cream for two wherever and whenever! The individual-serving­size canisters are perfect for making two avors at once or sharing with a friend.
• Make two 2-cup (16 oz. or 1 pint) canisters for up to
four cups (32 oz. or 2 pints) per batch
• Choose to make a dierent avor in each canister or make both one avor
• Flavor Funnels make adding favorite mix-ins easy

PARTS & ASSEMBLY
Before using the '50s-STYLE DOUBLE ICE CREAM MAKER, wash the Bucket, Canister, Lid and all accessories (except for Electric Motor) with warm, soapy water.
Carefully wipe down the Electric Motor with a non-abrasive cloth or sponge. NEVER immerse the Electric Motor in water. Dry thoroughly.
Now you are ready to enjoy creamy, delicious ice cream!

HOW TO OPERATE
To prepare:
•ChillbothCanistersforatleasteighthours.
•Findastablesurfacenearanelectricaloutletbeforestarting.Makesurethecordisaway
from any water source. It is acceptable to use an extension cord if needed.
•Chooseyourfavoriterecipeandprepareicecreammixtureperrecipeinstructions.Place
in refridgerator until ready to use.
1. Take Canisters from freezer and t onto the Base.
2. Place one Dasher in each canister.
3. Fit Lid on top of the Base.
4. Rotate locking mechanisms 90 degrees to lock the Lid onto the Base.
5. Insert the Spindles into the Electric Motor and lock into place.
6. Fit the Electric Motor onto the Lid and press until a "click" is heard to indicate that it has locked into place, then press down both tabs on the side of the Electric Motor to secure.
7. Insert Flavor Funnels into slots on the side of the Lid.
8. Insert plug into nearest outlet and press the "on" switch. IMPORTANT: Machine must be switched on before adding ice cream mixture.
9. Pour chilled ice cream mixture in through each Flavor Funnel. Make sure that you do not ll Canister more than ²/3 full, as mixture will expand during freezing process.
10. Turn o and unplug Electric Motor once ice cream has churned for about 30 minutes. If the motor stops prematurely, turn it o, break up any ice blockages, and start again.
11. Press in tabs on the side of the Electric Motor to lift o of the Lid.
12. Take the Dashers out and scrape o excess ice cream with a spatula.
13. Transfer ice cream to a freezer-safe container and freeze, or serve straight from the Canister. Lid and Lid Cap are included for the option of storing the Canister in the freezer.

HELPFUL TIPS
Taste
Finished ice cream will always taste less sweet than the initial mixture. You may adjust the amount of sugar in the recipe to suit your taste.
Articial sweeteners may be used in place of sugar. Use

the following measurements for reference:
• 1 packet of sweetener = 2 tsp. of sugar
• 6 packets of sweetener = ¼ cup of sugar
• 8 packets of sweetener = ¹/3 cup of sugar
• 12 packets of sweetener = ½ cup of sugar
Texture
To ensure that ice crystals do not form in ice cream mixture, do not stop the churning process at any time until the ice cream is ready.
Recipes with too much salt can cause the mixture to freeze too quickly, which can also cause ice crystals to form in the ice cream.
Consistency
Homemade ice cream generally has a thick, milkshake texture. If you prefer a thicker or rm consistency try one of the following:
• Remove the Dasher and place the Lid and Cap on the Canister. Place Canister in freezer to harden.
• Recipes that call for alcohol may inhibit the freezing process. Be sure to add any alcohol during the last few minutes of the freezing cycle.
Jamming
If the Dasher gets jammed or the Electric Motor stops prematurely, try the following:
• Make sure that the consistency of the ice cream is not thicker than soft serve ice cream or the Dasher may get stuck.
• Ice Cream recipes that include hard ingredients like nuts or chocolate chips may cause the Dasher to become lodged in the Canister. DO NOT add hard ingredients until the churning process is done.
• DO NOT stop the churning process until ice cream is nished. Stopping in the middle of the process can cause the ice cream to harden and restrict the movement of the Dasher.
Freezing
• DO NOT operate the unit longer than required. If the mixture has not yet achieved the slush consistency or has thawed again after 30 minutes, do not continue. Possible reasons for mixture not chilling or freezing:
• The Canister was not cold enough.
• The mixture was too warm. Make sure that the ingredients that you add are chilled and
not warm, lukewarm or of room temperature before adding to the Canister.

CLEANING & MAINTENANCE
1. Make sure the Electric Motor is turned o and the unit is unplugged: Always switch o, unplug and dismantle before cleaning.
2. Never put the Electric Motor in water or let the cord or plug get wet.
3. Do not wash parts in the dishwasher.
4. Remove Electric Motor and wipe with slightly damp, non-abrasive cloth. NEVER immerse the Electric Motor in water or any other liquid.
5. Allow Canisters to reach room temperature before cleaning. Then wash inside of Canister and dry thoroughly. DO NOT immerse in water or freeze Canister when wet.
6. Remove Spindles, Flavor Funnels, Lid and Dashers and wash in warm, soapy water and dry thoroughly.
7. Wipe Base with slightly damp, non-abrasive cloth.
8. Do not clean with scouring powders, steel wool pads or other abrasive materials.

RECIPES
The '50s-STYLE DOUBLE ICE CREAM MAKER makes rich, creamy ice cream anytime! Try these delicious recipes and tips:
• To reduce the risk of salmonella poisoning caused by raw eggs, heat
mixtures with eggs to a temperature of 160° F, but DO NOT bring to a

• 1 large ripe banana
• 1 1/3 cup skim milk
• 1/2 cup heavy cream
• 2/3 cup confectioner’s
boil. You may also use pasteurized eggs in place of raw eggs.
• Be sure to add ice cream mixture to Canister and chill for 20 minutes prior to use.
• For ice cream recipes that require cooking, it is recommended that you cook one
day in advance. The mixture will then have time to cool completely and expand.
• Recipes listed below make one canister of ice cream (2 cup/16 oz.).
To make the same avor in both canisters, double recipe.
BANANA ICE CREAM
sugar
Mash the banana until smooth.
Mix in the milk, heavy cream and sugar.
Pour the mixture into the canister as the dashers are running.
Allow to freeze until the desired consistency is achieved.
RASPBERRY FROZEN YOGURT
• 1 1/2 cup fresh raspberries
• 1 - 1 1/3 cup confectioner’s sugar
• 1 cup plain yogurt

Mash or puree the raspberries.
For a smoother result, remove the pips by sieving.
Add the sugar and yogurt and mix together.
Pour the mixture into the canister as the dashers are running.
Allow to freeze until the desired consistency is achieved.
CHOCOLATE-MINT ICE CREAM
• 2/3 cup skim milk
• 1/2 cup
confectioner’s sugar
• 1 cup heavy cream
• A few drops of
peppermint extract
• 1/2 cup grated chocolate
STRAWBERRY ICE CREAM
• 2 cups fresh strawberries
• 1cup confectioner’s sugar
• 1/2 cup heavy cream
• lemon juice from 1/2
small size lemon
Combine the milk and sugar in a saucepan.
Place over low heat and stir until the sugar has dissolved, then remove from heat and allow mixture to cool.
Stir the cream and peppermint extract into cooled milk.
Pour the mixture into the canister as the dashers are running.
When the mixture starts to freeze, add the grated chocolate through the topping funnel.
Allow to freeze until the desired consistency is achieved.
Puree the strawberries until smooth, then add the remaining ingredients.
Pour the mixture into the canister as the dashers are running.
Allow the mixture to freeze until the desired consistency is achieved.
LEMON SORBET
• 2/3 cup granulated sugar
• 2/3 cup water
• orange juice from 1/2
medium size orange
• 1/2 cup lemon juice
• 1 egg white
Combine the sugar and water in a saucepan.
Stir over low heat until the sugar has dissolved, then bring the mixture to the boil and allow to boil for 1 minute.
Remove from heat and allow to cool.
Add the orange and lemon juice.
Whisk the egg white until almost sti and then stir into the lemon mixture.
Pour the mixture into the canister as the dashers are running.
Allow to freeze until the desired consistency is achieved.
VANILLA ICE CREAM
• 2 egg yolks
• 1 cup confectioner’s
sugar
• 2/3 cup skim milk
• 1 cup heavy cream
ENGLISH
• Several drops of vanilla extract
Place the egg yolks and sugar in a glass bowl and beat together.
Slowly bring the milk to boiling point in a saucepan, then pour into the egg mixture and beat together.
Return the mixture to the pan and stir constantly until the mixture thickens and forms a lm over the back of the spoon. Do not let it boil or the mixture will separate.
Remove from heat and allow mixture to cool. Stir in the cream and vanilla extract.
Chill in refridgerator for several hours until cool
Pour the mixture into the canister with the dashers are running.
Allow to freeze until the desired consistency is achieved.
