INFRA-RED HEAT
Most people don’t realize that the heat sourcethat we are most familiar with, namelythe sun warms the earth using mainlyinfra-red energy. Infra-red energy is a form of electro-magneticenergy that has a wavelength just greater than the red end of thevisible light spectrum, but less than that of radio waves. Thisenergy was discovered in 1800 bySir William Herschel who, dispersed sunlightinto itscomponent colours using a prism. Heshowed that most of the heat in the beam fell intothe spectral region just beyond the red end of the spectrum, whereno visible light existed. This is infra-red energy. Most materials readilyabsorb infra-red radiation in a wide range ofwavelengths, causing an increase in temperatures of the materials. This is the same phenomenon that causes us to feel warmth when we are exposedto sunlight. The infra-red rays from the suntravel through the vacuum of space, through theatmosphere and penetrate our skin. Thiscauses increasedmolecular activity in the skin, which createsinternalfriction and generates heat, allowing us tofeelwarmth.
Foodscooked over infra-red heat sources are heatedby the same principle. Charcoal is thetraditional way of infra-red cooking that we are all familiar with. The glowing briquettes emitinfra-red energy to the food being cooked, with very little drying effect. Any juices or oils that escapefrom the food drip down onto the charcoaland vaporize into smoke giving the food itsdelicious grilled taste. TheNapoleon infra-red burner cooks in the same way. In each burner, 10000 ports each with its own tiny flame cause the surface of the ceramic toglow red. This glow emitsthe same type of infra-red heat tothe food, without the hassle or messof charcoal. It also provides a moreconsistent heated area that is far easier to regulate thana charcoal fire. For instantaneoussearing the burners can be set to high, yetthey can also be turned down for slower cooking. We all know how difficult that is on a charcoal fire. Traditional gas burners heat the food in a different way. The air surrounding the burner is heated by thecombustion process and then rises up tothe food being cooked. This generates lowergrill temperaturesthat are ideal for more delicate cuisine suchas seafood or vegetables. The bottom line is that Napoleon’sinfra-red burners produce searing heat for juicier, tastier steaks, hamburgers and other meats. Forcooking times and tips refer to the Infra-red Grilling Chart.
COOKING INSTRUCTIONS
When lit for the first time, the gas grill will emit aslight odour. This is anormal temporary condition caused by the "burn-in" of internal paints and lubricantsused in the manufacturing process and will not occur again. Simply run themain burners on high for approximately ½hour. When cooking very lean meats, such as chicken breasts,or lean pork, the grids canbe oiled before pre-heating to reduce sticking. Cooking meat with a high degree of fatcontent, may create flare-ups. Either trim somefat or reduce temperatures to preventthis. Should a flare-up occur, move food away from flames, reduceheat. Leave the lid open. See 'YourAll Season Grill' cookbook by Napoleon formore detailed instructions.
INFRA-RED MAIN BURNER USE:
1. Follow the infra-red burner ignitionprocedures and operate on high for 5 minutes with the lid closed oruntil the ceramic burners glow red.
2. Place food on grills andcook according to times listed inthe Infra-Red Grilling Chart.
3. Depending upon your taste, continue cooking over infra-red burners on high, medium or low, turning food frequently,or place foodaway frominfra-red burners, close lid, and allow oventemperature to slowly finish cooking your food.
Caution: Due to the intense heatthe infra-red burners provide, food left unattendedover burners will burn quickly. Keepthe lid open when cookingwith the infra-red burners on high. The intenseheat ensures adequate searing temperatures even withthe lid open. This also allows observationof the food, so as to preventburning.
CONVENTIONALMAIN BURNER USE: The lower temperatures that these burners providemake them ideal for cooking seafood, vegetables and other delicate cuisine. These burnerscan be used for searing, butthe infra-red burners are better suited for this type of cooking. Food cooked for a short period oftime (fish, vegetables) may be grilled with the lidopen. Cooking with the lid closed will ensure higher, more even temperatures that will reduce cooking time andcook meat more evenly.Food thathas a cooking time longer than 30 minutes, such as roasts, maybe cooked indirectly (with the burner litopposite to the food placement). Follow thetube burner lighting instructions and operate on high for 5 to 10minutes with the lid closedto preheat the grill.
REAR BURNER USE:
The rear burner is designed tobe used in conjunction with therotisserie kit. See the rotisserie kit assembly instructions. Touse the counterbalance, remove the rotisserie motor from the gasgrill. Place the spit with meatbeing cooked across the hangers inside thegrill. The meat will naturally hang with theheavy side down. Tighten the counterbalance arm and weight, so that the arm is facing up. Slide the counterweight in or out to balance the load, and tighten in place. Re-install the motor andbegin cooking. Place a dish underneathto collect drippings for basting and naturally delicious gravy. Basting liquid may be added asrequired. Toseal injuices, first operate rear burner on high until brown, then reduce the heat to thoroughly cook foods. Keep the lid closed for bestresults. Yourroastsand fowl will brown perfectly on the outside and stay moist and tenderon the inside. For example, a3 pound chicken on the rotisserie willbe done in approximately1½ hours on medium to high. See 'Yourall Season Grill' cookbook by Napoleon formore detailedinstructions.
Remove the warming rack prior to use.
Cooking grids should also be removed if they interfere with the rotisserie.
SIDE BURNER USE: Theside burner canbe used like any rangetop burner, for gravies, soupsetc. The gas grill should belocated so that the side burner is protected from the wind, because the wind will adversely affectit's performance. NEVER GRILL FOOD DIRECTLYON
THE SIDE BURNER GRATE. IT IS DESIGNED FOR USE WITH POTS AND PANS ONLY.

Whenselecting meat for grilling, ask for meat with a marbled fat distribution. The fatacts as a naturaltenderizer while cooking and willkeep themeat moist and juicy.
Preparinghamburgers to order is madeeasier by varying the thicknessof your patties. Toadd anexotic taste to your meat, try adding hickoryflavoredwoodchips into Napoleon’s woodchip smoker.
The joint connecting the thigh and the leg from theskinless side, should besliced 3/4 of the way though in order for the meat to lay flatter on the grill. This will help it tocook faster andmore evenly. To add a trademark tasteto your cooking, try adding mesquite-flavoured woodchipsin your Napoleon woodchip smoker.

CLEANING INSTRUCTIONS
Ensure that the burners are turned off prior to cleaning. Avoid unprotected contact with hot surfaces. Clean grill in an area where cleaning solutions will not harm decks, lawns or patios. Do not use oven cleaner to clean any part of this gas grill. Do not use a self cleaning oven to clean cooking grids or any other parts of the gas grill. Barbecue sauce and salt can be corrosive and will cause rapid deterioration of the gas grill components unless cleaned regularly.
GRIDSAND WARMINGRACK - The grids and warming rack are best cleaned during the pre-heat period with a softbrass wirebrush. Steel
wool can be used for stubborn stains. Stainlessgrids will discolour permanentlyfrom normal usage, due to the high temperature of the cookingsurface.
CONTROLPANEL: The text on the control panel is printeddirectly onto the stainless steel, and with proper maintenancewill remain dark and legible. Do not use anyabrasive cleaners (Ajax, Vim, Old Dutch etc.) to cleanany stainless surfaces, especially the printed portion of thecontrol panel. It will gradually removethe text if used. Use only theContinental brand stainless steel cleaner available from your NapoleonDealer.
CLEANING INSIDE THE GAS GRILL - Removecooking grids. Use a softbrass wirebrush to clean loose debris fromcasting sides and insides of the lid. Scrapesear plates with a putty knife or scraper, and use a wire brush to remove ash. Remove sear plates and brush debris off of burners with a brass wire brush. Brush all debris from inside the gas grillinto the removable drip pan. Ensure that the sear platesare placed properly when they are reinstalled (Check assembly instructionsforproper orientation).
DRIPPAN - Slide the drip pan outfor easy cleaning. It should be cleanedfrequently (every 4-5 uses) to avoid greasebuildup. Grease and excess drippings pass through to the drip pan, locatedunder the gas grill, and accumulate inthe disposable grease tray below the drippan. Accumulated grease can cause a fire hazard. Do not line the drip panwith aluminumfoil, as it can prevent thegrease from flowing properly. The pan should be scraped out witha putty knife or scraper, and all the debris shouldbe scraped into the disposable greasetray. This tray shouldbe replaced every two to four weeks, dependingon gas grill usage. For supplies, seeyour Napoleon Gas Grill dealer.
CLEANING THE OUTSIDE OF THE GAS GRILL - Donot use abrasive cleanersto clean any painted, porcelain or stainless steel parts. Porcelain enamel components must behandled with additional care. The baked on enamel finish is glass like, and will chipif struck. Touch-upenamelis available from yourNapoleon Gas Grill dealer. Exterior grill surfacesshould be cleaned whilewarm to the touch, with warm soapy water. Toclean stainless surfaces, use astainlesssteel cleaner or anon-abrasive cleaner. Always wipe inthe directionof the grain. Do not use steelwool, as it will scratch the finish. Stainlesssteel parts will discolourwhen heated, usually to a golden or brown colour. Thisdiscolouration is normal and will not affect the performance of the grill.
INFRA-RED BURNERS - Because of the high intensity of the infra-red burner, most drippings and food particles that fall onto the burnersurface are immediately incinerated. However, some debrisand residue may remain. Toremovethis residue after cooking, turn the grill on high with lid closed for5-10 minutes. If the back burner is not used often, grease splatter from main burner grilling will eventually block the ports. Once a month, the back burner should be fired for 5-10 minutes to burn off the accumulated grease.
LIGHTS - Remove the lens from the light housing using a flat screwdriver. Insertthe screwdriver tip betweenthe lens and the housing, and rotate the screwdriver. This will pop the lens out of the housing. Toclean, first soak the lens in hot soapy water. Then clean with a rag and non abrasive cleaner. Tore-install the lens, simply snap back into the housing. Do not touch the halogen bulb, theoil from your fingertipswill reduce the lifeof the bulb.
MAINTENANCE INSTRUCTIONS
Turn off the gas at the source and disconnect unit before servicing. Maintenance should only be done when the grill is cool, to avoid the possibility of burns. A leak test must be performed annually, and whenever any component of the gas train is replaced.
COMBUSTIONAIR ADJUSTMENT - (This must be done by a qualified gas installer.) The air shutter is factory set and should
not have to be adjusted under normal conditions. However, some extreme field conditionsmay exist that require adjustment. When theair shutter is adjusted correctly, the flames willbe dark blue with lightblue tips, and occasional yellowtips.

3. Light burners and set to high. Visually inspect burner flames. When shutters are set, turn burners off, tighten locking screw, and
replaceremoved parts. Ensure that the insectscreens are installed.
4. Infra-red burners have no air adjustment.
HOSE - Check for abrasion, melting, cuts and cracks. If any of these conditions exist, do not use gas grill. Have part replaced by your NapoleonGas Grill dealer, orqualified gas installer.
TUBE BURNERS - The burner is made from heavy wall 304 stainless steel, butdue to the extremeheat and corrosive environment, surface corrosion will occur. Use a brass wire brush to remove surface corrosion. Clean any blocked ports using an opened paper clip. Do not enlarge the burner ports. Spiders and insects are attracted to the smell of propane and natural gas. The burner is equipped with an insect screen on the air shutter, whichwill reduce the likelihood of insects building nestsinside the burner, but does not entirely eliminate the problem. The nest or web will cause the burner to burn with a soft yellowor orange flame or cause a fire (flashback) at the air shutter underneath the control panel. Toclean the inside of the burner, it mustbe removed fromthe gas grill. Remove the control panelby removing thetwo screws in the lower corners of the panel. Disconnect the leads from the igniter modules. Leave the leads connected to the switches, other than the light switch. Push the control panel upwards to remove. Loosen the manifold assembly and pull it forward out of the burner. Do not allow the manifold to hang from the aluminum supply tube. Remove the screw that attaches the burner to the back wall, loosen but don’t remove the two screws holding the sear plate mount on the back wall. Lift out the sear plate mount. Slide the burner back and upwards to remove. Use a flexible venturi tube cleaning brush to clean out the inside of the burner. Shake any loose debris out of the burner, through the gas inlet. Ensure that none of the burner portsare blocked. Use an opened paperclip toclean any blocked ports. Ensure that the insect screen is clean, tight, and free of any lintor other debris. Check also that thevalve orifices are clean. Do not enlarge theorifices. Re-install the burnerin the reverse procedure. Check that the valve enters the burner when installing. Replace sear plate mountand tighten screws to complete installation.
ALUMINUM CASTINGS - Clean castingsperiodically with warm soapywater. Aluminum will not rust, but due to hightemperatures and weathering, oxidation canoccur on aluminum surfaces. This will appear as white spotson the castings. Torefinish the castings, cleanthem and sand lightly with fine sandpaper. Wipe surface to remove any residue, and paintwith high temperature barbecue paint. Protect surroundingareas from over-spray. Follow curing directions found on the can.
PROTECTION OF INFRA-RED BURNERS - The infra-red burnersof your grill are designed to provide a long service life. However, thereare steps you musttake to prevent crackingof their ceramic surfaces, which will cause the burners to malfunction. Following are the common causes of cracks and the steps you must take to avoid them. Damage caused by failure to follow thesesteps is not coveredby your grill warranty.
1. Impact with Hard Objects - Never allow hard objects to strike the ceramic. Takecare when inserting or removing cooking grates
and accessories into orfrom the grill. If these objectswere to fall on the ceramic, it is likely to crack.
2. Water or Other Liquids - Cold liquid contacting a hot surface in substantial amountscan cause the surface to break. Do not throw
water into the grill to douse a flame. Also if the ceramicor interior of a burner becomes wet while not in use, later operation of the burner can create steam, which may produce enough pressure to crack the ceramic. In addition, repeated soaking ofthe ceramic will cause it to swelland expand. This expansionwill cause undue pressure on the ceramicand therefore it may crack and crumble.
i) Neverthrow water into the grill to control flare-ups ii) Do not attempt to operatethe infra-red burnersin open airwhile raining. iii)If you find standing water inyour grill (because of exposureto rainfall, sprinklers etc.), inspectceramic for
evidence of possible watersoaking. If ceramic appears to be wet, remove the burner from the grill. Turnupside
down to drain the excess water. Bring indoors and allow to dry thoroughly.
3. Impaired Ventilationof HotAir From the Grill - In order for the burners to function properly, hot air must have a way to escape the
grill. If the hot air is not allowed to escape, theburners may become deprived of oxygen, causing them to back flash. If this occurs repeatedly, the ceramic may crack. Do not cover more than 75% of the cooking surface with solid metal (ie. griddle or large pan).

For propane - improper lighting procedure.
Fornatural gas - undersized supplyline.
For both gases - improper preheating.
Ensurelighting procedure is followed carefully. Allgas grill valvesmust be in theoffposition when the tankvalveis turned on. Turntank on slowly to allow pressure to equalize. Seelighting instructions.
Pipemust be sized accordingto installtioncode.
Pre-heat grill with main burners on high for 5 to 10 minutes.
Problem Possible Causes Solution
Excessiveflare-ups/uneven heat.
Burnersburn with yellow flame, accompanied by the smellof gas.
Flamesliftaway from burner, accompaniedby the smell of gas,and possibly difficulties inlighting.
Burner will not light with the ignitor, but will lightwith a match.

This is not a defect. The finish on the lid and hood is stainless, andwill not peel. The peeling is caused by hardened grease, whichdries into paint-like shards, thatwill flake off. Regular cleaningwill prevent this. Seecleaning instructions.
Afterturningpilot knob to high, wait approximately 20-30 secondsfor air to purge the gas supply line while pressing igniter. Fillpropanecylinder. Duringinitial set-up or after tank has been refilled, it is best to light one of the tube burners before lighting the pilot burner. This allows the gas to reach thevalves on the manifold morequickly.

Problem Possible Causes Solution
Burner output on “high” setting is too low. (Rumbling noiseand fluttering blue flameat burner surface.)
Infra-redburner flashes back (duringoperation the burner aburptlymakes a loud “whoosh” sound, followed by a continuous blow-torch type sound and grows dim.)
Lack of gas. Supplyhose is pinched.
Dirtyor clogged orifice. Spiderwebs inventuri tube, or
otherforeign matter. Crackedceramic tile.
Propaneregulator in “low flow” state.
Ceramictiles overloaded with greasedrippings and build-up, portsare clogged.
Burneroverheated due to inadequateventilation (too much grillsurface covered by griddle or pan.)
Crackedceramic tile.
Leakinggasket surrounding the ceramictile, or a weldfailure in the burnerhousing.
Checkgas level in propane cylinder. Repositionsupply hose as necessary.
Cleanburner orifice. Cleanout venturi tube.
