Operation – General Broiler Use
WEAR HAND AND ARM PROTECTION
AND/OR USE LONG HANDLED COOKING
UTENSILS WHEN USING THE BOILER.
WHEN IN USE, THE BROILER TOP
GRATES AND SURROUNDING SURFACES
ARE EXTREMELY HOT AND CAN CAUSE
SERIOUS BURNS.
DO NOT WEAR LOOSE CLOTHING
AND USE CAUTION WHEN USING THE
BROILER. GREASE IN FATTY FOODS
CAN CAUSE FLARE-UPS THAT REACH
ABOVE THE TOP GRATES AND REPRESENT A POTENTIAL FIRE AND/OR BURN
HAZARD.
USE CAUTION WHEN CHECKING THE
GREASE TRAY AND REMOVING THE
TRAY TO EMPTY CONTENTS. IF POSSIBLE, WAIT UNTIL BROILER IS COOL
BEFORE EMPTYING. HOT GREASE CAN
AND WILL CAUSE SERIOUS BURNS
ON CONTACT. SPILLED GREASE IS A
SERIOUS SLIP-AND-FALL HAZARD.
IMMEDIATELY CLEAN UP ANY SPILLS
TO AVOID THE DANGER OF FALLS.
OPERATING TIPS
1. Before operating, make sure the top grates are all clean and the drip tray is empty
and clean.
2. The top grate sections are reversible, allowing their use flat or sloped back-to-front.
The sloped side has a grease groove that will capture some grease and divert it to
the front drain trough.
3. Turn the burners on about 10-15 minutes before cooking, to allow the broiler to
preheat. Top grates must be hot to effectively mark or brand foods.
4. Set the burner controls to desired burner flame height. Each control regulates the
temperature of two six-inch top grate sections, which comprise a 12” cooking zone.
5. If different temperature zones are to be used, adjoining cook zones should be set
at progressively higher temperatures, with the lowest temperature zones to the
outside.
6. To save energy and reduce heat in the kitchen, turn off the boiler or individual
burner sections, if not needed.
7. Check the grease level in the pull-out tray frequently. Do not let the grease level get
too high. Use protective clothing (with liquid/vapor barrier) and use caution when
removing the grease tray for emptying.
NEVER ATTEMPT TO MOVE A UNIT
WHILE IT IS LIT. AN UNEXPECTED
FLARE-UP COULD CAUSE PERSONAL
INJURY. TURN OFF THE UNIT, LET IT
COOL AND USE POTHOLDERS AND/OR
GLOVES TO REPOSITION THE UNIT.
IMPORTANT:
THE SPACE BETWEEN THE LEGS AT
THE BOTTOM OF THE UNIT ALLOWS
COMBUSTION AIR TO ENTER THE UNIT.
DO NOT BLOCK THIS SPACE.
12 OM-LCB
Cleaning & Maintenance
WHEN HANDLING GRATES OR
RADIANTS, ALWAYS USE INSULATED
GLOVES TO PREVENT BURNS.
DO NOT COVER THE TOP OF THE
GRATES DURING A "BURN OFF"
OPERATION. RESTRICTING THE AIR
FLOW BY COVERING THE GRATES MAY
CAUSE THEM TO WARP. IT WILL ALSO
CAUSE DAMAGE TO THE VALVES, KNOBS
AND FRONT PANEL.
ALWAYS TURN THE UNIT OFF AND
ALLOW IT TO COOL COMPLETELY
BEFORE CLEANING.
USE CAUTION WHEN CHECKING
THE GREASE TRAY AND REMOVING
THE TRAY TO EMPTY CONTENTS. IF
POSSIBLE, WAIT UNTIL GRIDDLE IS
COOL BEFORE EMPTYING. HOT GREASE
CAN AND WILL CAUSE SERIOUS BURNS
ON CONTACT.
INITIAL CLEANING
Prior to operating your new broiler, thoroughly wash the exterior with a mild detergent
solution. Do not use abrasive cleaners; these will damage the cabinet finish. If the
stainless steel surfaces become discolored, scrub by rubbing only in the direction of
the finished grain.
When the broiler is first heated, it will smoke until the oil used in manufacturing and
dust from storage and shipping are burned off. An hour at "max" on all burners is
usually sufficient.
DAILY CLEANING
Allow broiler to cool before cleaning exterior or drip tray. Remove the drip tray, empty
and wash it. Replace drip tray in broiler.
GRATE “BURN OFF”
Grease buildup on the grates should be cleaned daily or more often as needed.
1. Place the grates on broiler with grid bars horizontal, facing down.
2. Turn the broiler on for approximately 45 minutes.
3. Turn off the broiler and allow it to cool for 20 minutes.
4. Clean top and bottom surfaces of grate with a wire brush to remove any
deposits.
SPILLED GREASE IS A SERIOUS SLIPAND-FALL HAZARD. IMMEDIATELY
CLEAN UP ANY SPILLS TO AVOID THE
DANGER OF FALLS.
5. Clean channels on grates with a scraper.
6. Remove grates from broiler. Clean top surface of radiants with the wire brush.
These may be cleaned in place.
EXTERIOR CLEANING
Clean all exterior surfaces with a mild detergent solution and wipe dry with a clean
towel. Clean the front control panel, front bull-nose, sides (if they don’t abut other
equipment) and the front grease trough. Clean under the unit and around the legs.
Do not use metal scrapers, metal scouring pads, grill bricks or abrasive cleaners on
any stainless steel surface or the control overlay. If stainless steel surfaces become
discolored, scrub by rubbing with-the-grain.

REGULATOR CLEANING
Clean the gas pressure regulator at least once a month. Make sure the vent opening
is not blocked in any way. Failure to do so will cause variations in pressure. This can
affect how the unit functions and may shorten the life of the product.
Once a month, clean the area surrounding the vent opening (See Diagram 14-1) with
a clean, wet rag to remove accumulated dust, dirt, lint etc.
ADJUSTING MAIN BURNER AIR SUPPLY
For efficient burner operation, a proper balance of gas volume and primary air supply
must be maintained to obtain complete combustion. Insufficient air supply results in
a yellow streaming flame. The primary air supply is controlled by an air shutter on the
front of the main burner.
1. Loosen the screws on the front of the burner and adjust the air shutter to just
eliminate the yellow tips of the burner flame.
2. Lock the air shutter in place by tightening the screws.
