General Specifications
Shall be of stainless steel construction, to hold 20" x 22" (510 x 560 mm),18" x 26" (457 x 660 mm) and
14" x 18" (356 x 457 mm) pans and trays. Welded tubular base frame shall be 1” square, heavy gauge
stainless steel tubing, with 10-gauge stainless steel reinforcing plates at corners. Insulated Models: High
density fiberglass insulation throughout; top, back, bottom, sides, and door(s). Non-insulated Models: High
density fiberglass insulated door. Door shall be attached to cabinet with heavy-duty lift-off hinges, which
provide for 270° swing and be held open by magnetic door latch. Each door has paddle latch. Cabinet has
recessed handles. Bottom corner bumpers shall be standard. Polyurethane tire casters with Zerk grease
(lubrication) fittings in a configuration of two (2) rigid, and two (2) swivel with brake. Casters shall have a
reinforced yoke welded to 10-gauge caster mounting plate. The caster mounting plate shall be secured to
a 10-gauge stainless steel reinforcing stress plate via welded in place stainless steel studs. The reinforcing
stress plates shall be welded to the heavy gauge tubular frame of the unit. Unit shall have removable
proofer / heating unit (120 VAC, 16 amp, 1920 watts, 5-20P NEMA plug) with individual controls for heat
and humidity settings. Controls shall be easily accessed from the front without opening the door.
Proofer / heating unit shall also feature a water reservoir.
