SAFETY CAUTIONS
Carefully read all the instructions before using the appliance and keep in a safe place for future reference. Always follow these safety cautions when using the appliance to avoid personal injury or damage to the appliance. This appliance should be used only as described in this instruction book.
• Make sure your electricity supply matches the voltage shown on the appliance
• Ensure all packaging materials and any promotional labels or stickers are removed from the appliance before the first use.
• Always inspect the appliance before use for noticeable signs of damage. Do not use if damaged or has been dropped. In the event of damage, or if the appliance develops a fault contact the Lakeland customer care team on 015394 88100.
• Do not use this appliance if the lead is damaged. If the lead is damaged it must be replaced with a special lead contact the Lakeland customer care team on 015394 88100.
• Always use the appliance on a dry, level, heat resistant surface.
• Unplug from the mains when not in use and before cleaning. Allow to cool before cleaning the appliance. To disconnect, turn the socket to “off “and remove the plug from the mains socket.

• Children should always be supervised to ensure they do not play with this product.

• This appliance should be used for preparation of food as described within the instructions for use that accompany it.
• Always ensure that your hands are dry before removing the plug from the mains socket. Never pull the plug out of the mains socket by its lead.
• To avoid injury or possible fire, do not cover the appliance when in use.
• Do not connect this appliance to an external timer or remote control system.
• An extension cable may be used with care. The electrical rating of the cable should be at least as great as the appliance. Do not allow the cable to hang over the edge of the worktop or touch any hot surfaces.
• This appliance complies with the basic requirements of Directives 04/108/EC (Electromagnetic Compatibility) and 06/95/EC (Safety of Domestic Electrical Appliances)
• WARNING; A cut off plug inserted into a 13amp socket is a serious safety (shock) hazard. Ensure the cut off plug is disposed of safely.
• The bowl and other parts can become very hot whilst in use. DO NOT TOUCH the surface as possible injury could occur. Be careful too as steam can come out of the edges of the measuring cup when heating food, while it is in place in centre of lid. Use the handle and lid and allow to cool completely before handling the bowl.
• CAUTION; the plastic bags used to wrap this appliance or the packaging may be dangerous. To avoid risk of suffocation, keep these bags out of reach of babies and children. These bags are not toys.
• Do not place the bowl in a dishwasher or immerse it in water.
• Special caution must be taken when removing or replacing the blades as they are very sharp and it is recommended to hold them by the upper part.
• The MultiChef comes with a security system that prevents the functioning of the machine if the bowl is not properly secured in the base unit.
• The MultiChef has a safety feature which stops it being operated beyond Speed 3 when food is being heated, to avoid any danger from hot food splashing out.
• Be aware the measuring cup can be moved out of place in centre of lid when machine is being used at high speed or on Pulse. Fold a damp dishcloth and place it neatly on top of the measuring cup to ensure it stays in place
• Exercise extreme caution when using the blades as they are very sharp
• Wash and properly dry the blades after using them. Do not leave them to soak in water.
THE CONTROL PANEL AND PROGRAMMES
Power On Indicator Light
When the MultiChef is connected to the power supply, a red pilot light at the top of the display panel above the digital screen will come on and will remain this way until the machine is disconnected from the electrical supply.
A ‘bleep’ which lasts for a couple of seconds confirms that the machine is ready to be used. All the functions that appear on the LCD screen, such as time, speed and temperature will show ‘0’ when machine first switched on. When you set time and speed, with or without temperature and then press the On/Off button to turn MultiChef on; the light will change to blue.
Timer
The Timer button is used to program the cooking and/or the preparation time of the ingredients for a maximum of 60 minutes. Using this button the MultiChef can be programmed in minutes and in seconds, with an interval of 1 second for the first minute and then in intervals of 30 seconds.
The timing can be increased by turning the Timer control to the right or to the left to reduce it. The MultiChef counts the time down and the initial timing of the function can be changed if needed. You have to select an amount of time (and a speed) for the MultiChef to work.
On/Off
This button is used to start the MultiChef after the time, speed and temperature (if you are going to cook in the machine) has been selected. To stop the MultiChef, simply press this button again. This will also delete any settings you have for time, temperature and speed.
Pulse
The Pulse function is used to mix and chop ingredients at a very high speed – push and hold the button for 3-4 seconds maximum
Caution: When using this function is important to note that the ingredients may splash and could scald if the contents are hot. Place a dishcloth over the top of the measuring cup and then hold the measuring cup in place while using the pulse function Do not use the whisk with this function.

Temperature
The MultiChef has a temperature range from a minimum of 40ºC to a maximum of 130ºC this can be set using the TEMP control. The temperature is increased or selected by turning this control in a clock wise direction and reduced by turning in an anticlockwise direction. The selected temperature will appear on the screen and an acoustic signal will indicate during the programme when the MultiChef has reached the selected temperature.
The innovative design has its heating system in the base of the bowl and this allows the machine to quickly reach the selected temperature. The temperature can be set in increments of 10ºC and begins from 40°c. The temperature can be changed during a programme without having to stop the bowl.
Note: When preparing ingredients at a temperature higher than 60ºC , it is strongly recommended not to use the Pulse button. For safety reasons, the MultiChef will not operate at more than Speed 3 when the temperature function is being used.
Speed
The Muilti Chef has 10 speeds for chopping, mixing, blending, kneading and grating that are controlled by the Speed button.
Speed for creamy mixtures and dough As certain recipes require a smooth or slow speed, such as cream, soups, whipped creams and cake mixes the MultiChef includes the whisk accessory. This is specially designed for these types of dishes and can also be used to make dough for breads and pastry.
This accessory is placed on top of the blades inside the bowl and mixes at speeds 1- 4. Note: Do not use the machine above speed 4 when the whisk is in place.
SCREEN MESSAGES
Bowl lid is not properly closed
The MultiChef bowl comes with two security sensors in the lid and base of the bowl. When the cover is open or incorrectly closed, this warning symbol will appear on the screen.
Programmed temperature reached
This symbol flashes on the screen for a few seconds to indicate that the MultiChef has reached the selected temperature. A ‘bleep’ will also sound when the temperature is reached.
HHH Error message: This symbol appears when the bowl is not correctly placed on the base or
has been removed whilst the MultiChef is turned on.
LLL Error message: Error in the electrical system that can only be solved by an authorised

HOW TO ASSEMBLE THE MULTICHEF AND USING FOR THE FIRST TIME
Before using your MultiChef for the first time, make sure that it has all the listed parts and accessories.
Placing the bowl into the base:
• Ensure that the blades are secured in the bowl.
• Connect the bowl to the base unit by placing it in the cavity and lightly pressing it down so that it fits correctly in place. The cover will not fit into place if the bowl is not properly connected.
• The bowl has a 2 litre maximum capacity with internal and external 0.5 litre graduations marked on the bowl. The maximum level should not be exceeded.
Placing the lid:
• Firstly, place the lid diagonally on top of the bowl and turn in a clockwise direction in such a way that the tongue found underneath the front of the lid, fits into the space under the lip on the base unit.
• The clip at the back of the lid, should slot easily into the handle of the bowl.
• If the lid is not properly secured the MultiChef will not work and the bowl symbol will appear on the screen.
• If the bowl is incorrectly placed the “HHH” symbol will appear on the screen and will only disappear when the bowl is correctly fitted in place.

Assembling the blades
• The blades can be removed easily for cleaning and maintenance of the machine.
• Place the bowl upside down and turn the lever, found in the base of the bowl, anticlockwise to remove the blades.
To assemble the blades again, hold them in place and turn the lever, found in the base of the bowl, in a clockwise direction.
Caution
Special care must be taken when removing or replacing the blades as they are very sharp. After cooking, leave the blades to cool before handling them.
Bowl
The MultiChef bowl is made of stainless steel and has a maximum capacity of 2 litres with internal and external 0.5 litre graduations marked on the bowl.
Caution
Never exceed the maximum fill level. Special care must be taken when removing the bowl from the base unit to avoid spills and splashes.
Lid
The MultiChef only works with the lid properly in place and therefore it’s essential to close it correctly. The bowl symbol will appear on the screen to indicate that the bowl lid is not properly closed.
Measuring Cup
The Measuring Cup is very versatile and allows ingredients to be added to the MultiChef when in use.
• For adding ingredients to the bowl without removing the lid.
• To maintain the cooking temperature.
• As a measuring cup with a capacity of 100ml.
Caution
Do not remove the Measuring Cup at speeds higher than speed 4 to avoid the ingredients from splashing.
Basket The MultiChef comes with a Basket that is placed inside the bowl. This is perfect for preparing different types of dishes where you want to maintain textures of certain ingredients.
Steamer
The Steam Accessory is perfect for steaming meat, fish and vegetables. This accessory consists of three parts the first which is an outer tray for collecting liquids that may fall from the ingredients during the cooking process. Secondly there is a smaller size tray for placing the ingredients inside for steaming. Thirdly there is the lid which is used to keep the steam from escaping.
WARNING
This accessory is not to be used in microwaves, ovens or other cooking appliances. Care must be taken when using the Steamer as it may have steam or hot water inside the lower tray.
How to use the steamer
• Put the bowl in place in the base unit and add 0.5 litres of water.
• Put the lid on the base unit, leaving the clear measuring cup off
• Put the steamer on top of the lid ensuring it fits well in the measuring cup slot.
• Put the ingredients in the top tray for steaming.
• Place on the steamer lid.
• Program the time and temperature.
• The ingredients will start cooking when the water/liquid begins to boil at 100°C and the steam rises from the bowl and passes to the trays.
Whisk
The Whisk is ideal for making creams, purees, whipped cream, cake mixes and bread doughs. The Whisk is placed on top of the blades and works with speeds 1, 2, 3 and 4. To remove it, hold it firmly by the upper part and pull lightly. Do not use the Whisk with the Pulse function.
Spatula
Use this accessory for stirring or mixing the ingredients. Use the spatula to remove the Cooking basket from the bowl and to lower the ingredients from the walls of the bowl.
WARNING
Do not use other utensils to stir the ingredients inside the MultiChef bowl as these may damage the machine and may get caught between its blades. Never place the Spatula inside the bowl whilst the blades are in motion.
ADAPTING YOUR OWN RECIPES
After you have made some of the recipes supplied you may wish to adapt a few of your own recipes. Start by selecting one of the recipes in this booklet, which is similar to your own and use this as a guide.
Onion and garlic often seem to have a more intense flavour when used in the MultiChef, if you are adapting a recipe, reducing the onion or garlic by 50-75% may be helpful initially.
Liquids may not evaporate as much as in a saucepan so you may want to reduce them and monitor during cooking. More liquid can then be added if required.
Once you have used your MultiChef a few times you will soon realise all its capabilities and that the possibilities are endless.

HINTS AND TIPS
• The speed is restricted to 1,2 or 3 when you are using the temperature control too.
• Whilst the MultiChef is working it is possible that the blades will turn more slowly than normal, this is to stop the mechanism from overheating and damaging the machine.
• Allow hot ingredients to cool before transferring them from the mixing bowl to another dish.
• When cooking with high temperatures, caution should be taken when opening the lid as steam that may be released from the bowl.
RECIPES
Please note all spoon measures given in these recipes use standard metric measuring spoons. For example, 5ml is 1 tsp and 15ml is 1 tbsp. We recommend you use a set of measuring spoons to get accurate measurements when making these recipes. Unless otherwise stated when recipe has lid on, this will include the inner measuring cup as well as the main lid.
BASICS
SHORTCRUST PASTRY
Makes 350g
Ingredient Quantity
Butter, chilled and cut into pieces 100g
Plain flour 200g
Pinch of salt
Cold water 3 tbsp
Method:
1. Put butter, flour and salt into the bowl of the Lakeland MultiChef and process for: Time: 10 seconds, Speed: 7 or until the mixture resembles breadcrumbs.
2. Add the water and mix for: Time: 30 seconds, Speed: 1 until the mixture begins to come together.
3. Turn the pastry onto a lightly floured board and bring together. Place in a plastic bag and refrigerate for 15 minutes before rolling out. Use as required and according to recipe.
Note: Replace some of the water with an egg for a richer pastry or add a little orange zest and 25g of caster sugar for a sweet pastry.
PIZZA DOUGH
Makes 2
Ingredient Quantity
Water 200 ml
Olive oil 50ml
Dried active yeast 1/2 tbsp
Water ½ measuring cup
Salt a pinch
Strong plain flour 400g
Method:
1. Place all the ingredients in the bowl except the flour: Time: 1 minute, Speed: 3, Temperature:
40ºC
2. Add the flour and continue mixing: Time: 1 minute, Speed: 4
Use as directed in chosen recipe, or take from bowl, and place in a clean mixing bowl that has been lightly oiled. Allow to double in size, knock back, shape into pizzas, add toppings and bake in a preheated oven 230ºC for 15- 20 minutes until base is crisp and golden and topping is cooked.

CHOUX PASTRY
Ingredient Quantity
Milk 75ml
Water 75ml
Caster sugar 75g
Unsalted butter 75g
Plain flour, sieved 150g
Eggs

Method:
1. In the bowl add the milk, water, sugar and butter then cook for: Time: 4 minutes, 30
seconds, Speed: 1, Temperature: 100ºC
2. Add the flour when the mixture is boiling and cook for: Time: 2 minutes, Speed: 3, Temperature: 90ºC
3. Add the eggs one at a time to the bowl with the machine in motion, leaving enough time so that it can be mixed well in the dough before add the next egg: Time: 3 minutes, Speed: 4
4. Shape as required and bake according to recipe
Note: Can be used to make a large choux ring, choux buns, profiteroles or éclairs. Can be filled with crème patisserie or whipped cream.
STEAMED RICE
Ingredient Quantity
White rice (reduce amount as required) 300g
Water 1 litre
Method:
1. Wash rice thoroughly in the cooking basket under running water until the water runs clear.
2. Measure water into the bowl. Add cooking basket with rice and cook for:
3. Time: 15 minutes, Speed: 3, Temperature: 100°C
4. Remove basket with spatula when rice is cooked.
5. Allow rice to sit in the cooking basket for 5 minutes before serving.
Note Brown rice, cook for: Time: 30-35 minutes
BOILED PASTA
Serves 4
Ingredients Quantity
Water 1 litre
Salt to taste
300g dry pasta
Method:
1. Place whisk in bowl, add water up to 1 litre mark and salt to the bowl and cook for: Time: 14
minutes, Speed: 1, Temperature: 100°C
2. Add pasta and cook for: Time: 8-10 minutes, Speed: 1, Temperature: 100°C
3. Check consistency and cook a little longer if needed. Drain and serve with sauce of your choice.
MASHED POTATOES
Ingredients Quantity
Water ½ litre
Floury potatoes, peeled and cut into 2cm cubes 750g
Butter 25g
Milk 150 ml
Salt to taste
Method:
1. Add water to the bowl and cook for: Time: 5 minutes, Speed: 1, Temperature: 100°C
2. Add potatoes and cook for: Time: 15 minutes, Speed: 1, Temperature: 100°C
3. When potatoes are cooked, drain water from the bowl and insert the whisk (you may need to take potatoes out to add whisk, then add them back in).
4. Add butter, milk and salt
5. Mash for Time: 30 seconds, Speed: 4

VEGETABLE PUREE
Use your MultiChef to make baby food. Its simple and easy and ensures your baby is getting good food without any preservatives. Use fruit and vegetables in combinations to introduce your baby to a number of flavours

CHICKEN STOCK
Ingredients Quantity
Chicken wings 300g
Water 1.5 litres
Onion medium, peeled 1
Carrot, peeled and roughly chopped 100g
Celery, chopped 75g
Leek, cut and washed 100g
1 bunch thyme
Salt
Method:
1. Wash the chicken wings thoroughly. Pour the water in the bowl and put the cooking basket
in place with all the ingredients inside: Time: 60 minutes, Speed: 1, Temperature: 100°C
2. Taste, add more salt if necessary: Time: 15 minutes, Speed: 1, Temperature: 100°C
VEGETABLE STOCK
Ingredients Quantity
Carrots, scraped 100g
Leek, washed and roughly chopped 100g
Medium onion, peeled 1
Celery 75g
Water 1.5 litres
Salt and pepper
Method:
1. Pour the water into the bowl and place the vegetables cut into small pieces in the cooking basket. Time: 40 minutes, Speed: 1, Temperature: 100ºC
2. Discard vegetables at end. Use stock as required.
BROWNED ONIONS
Ingredients Quantity
Onions, peeled and quartered 2 medium
Olive oil 100ml
Dried thyme (optional) ¼ tsp
Water ½ measuring cup
Salt and ground black pepper
Method:
1. Put all the ingredients except water in the bowl: Time: 20 seconds, Speed: 4
2. Remove lid and using spatula, scrape ingredients from the walls of the bowl and add the water, replace lid: Time: 1 hour, Speed: 1, Temperature: 100°C
3. Make sure the mixture has the desired texture, if not cook for up to another: Time: 15
minutes, Speed: 1, Temperature: 100ºC
4. Taste and season.

YOGHURT
Ingredients Quantity
Milk 1 litre
Natural yoghurt 125g
Method:
1. In the bowl of the Lakeland MultiChef, warm the milk: Time: 6 minutes, 30 seconds,
Temperature: 80ºC, Speed: 3
2. Add the yoghurt and process for: Time: 30 seconds, Speed: 3
3. Pour into a jug and allow to settle for 8 hours and chill
Note: The mixture can be strained through a muslin for a thicker yoghurt. 125g of this yoghurt can be used to start the next batch of yoghurt.
WHISKING EGG WHITES
Use same method to whisk double cream

Egg whites, room temperature 4-8
Method:
1. Add whisk to bowl, beat for: 3-5 minutes, Speed: 3 until required consistency is reached
STARTERS
BRUSCHETTA
Serves 4
Ingredients Quantity
Red onion, cut into 4 ¼
Tomatoes medium, quartered 3
Basil 1 bunch
Salt and pepper
Rustic bread 4 slices
Garlic clove, halved 1
Olive oil 1 tbsp
Method:
1. Put the onion into the bowl of the Lakeland MultiChef and chop: Time: 20 seconds, Speed: 5
2. Add tomatoes to the bowl and chop: Time: 10 seconds, Speed: 5
3. Drop in the basil leaves and salt and pepper and chop: Time: 5 seconds, Speed: 5
4. Toast the bread on both sides and rub with garlic clove, Drizzle oil over the bread.
5. Divide the tomato mixture over the toasted bread and decorate with more basil leaves.
CHICKEN LIVER PATE
Serves 4
Ingredient Quantity
Onion, medium sized, peeled and root removed ¼
Garlic cloves, peeled 2
Butter, salted 250g
Chicken livers, frozen defrosted 500g
Bouquet garni sachet (or a small piece of muslin with 1 bayleaf few sprigs of thyme and a few sprigs of parsley tied shut with string)
Salt and pepper to taste
Brandy 2tbsp (optional)
Method:
1. Chop the onion and garlic: Time: 5 seconds, Speed: 4
2. Add 25g of the butter and cook: Time: 3 minutes, Speed: 1, Temperature: 100ºC
3. Add chicken livers, bouquet garni and seasoning and cook: Time: 8 minutes, Temp: 100ºC,
Speed: 1
4. Remove the bouquet garni, add the rest of the butter and the brandy if being used, and mix: Speed: 3 until preferred consistency is reached.
5. Taste and adjust seasoning if required.
6. Pour into ramekins and refrigerate until set.
SMOKED MACKEREL PATE
Serves 4
Ingredients Quantity
Smoked mackerel, skin and bones removed 250g
Cream cheese 200g
Lemon, zest and juice 1
Horseradish, grated ½ tbsp or 1 - 2 tbsp horseradish sauce
Parsley or chives to garnish
Method:
1. Put the mackerel into the bowl of the Lakeland MultiChef, add cream cheese and lemon zest and juice. Mix: Time: 1 minute 30 seconds, Speed: 1
2. Add the horseradish and process: Time: 30 seconds, Speed: 1
3. Transfer to ramekins and serve with melba toast.

MEXICAN CHEESE FONDUE
Serves 4
Ingredients Quantity
Green chillies 4
Vegetable oil 1 tbsp
Red onion 1 ½
Gruyere or cheddar cheese 500g
Crème fraiche 2 tbsp
Double cream 150ml
Tomatoes, skinned, de-seeded and flesh cut into strips

Method:
1. Dry fry the chillies in a pan untill the skin blackens and blisters, skin them and slice thinly.
2. Put the oil in the bowl of the Lakeland MultiChef, add the onion and cook: Time: 1 minute,
Speed: 3, Temperature: 100ºC
3. Add the cheese, cook: Time: 1 minute, Speed: 3, Temperature: 100ºC
4. Add the crème fraiche and cream and stir: Time: 1 minute, Speed: 2, Temperature: 100ºC
5. Check that the cheese has melted.
6. Stir in the chillies and tomatoes: Time: 30 seconds, Speed: 1
7. Serve with tortilla chips or crudités of celery or carrot
SOUPS
CHICKEN NOODLE SOUP
Serves 4
Ingredients Quantity
Parsley to garnish 3 tbsp
Chicken stock 1 litre
Chicken breast fillet, cut into small cubes 200g
Vermicelli nests 125g
Method:
1. Chop parsley in the bowl of the Lakeland MultiChef: Time: 20 seconds, Speed: 5. Set aside
to garnish
2. Put stock and chicken pieces in the bowl of the MultiChef
3. Put the basket into the bowl and add the vermicelli in an even layer and cook: Time: 15
minutes, Speed: 3, Temperature: 100ºC
4. The liquid should pass over the vermicelli.
5. Serve into a bowl, place the noodles, then the chicken and pour the stock over the top.
6. Garnish with the reserved parsley
BUTTERNUT SQUASH SOUP
Serves 4
Ingredients Quantity
Onion, roughly chopped ½
Smoked sweet paprika ¼ tsp
Olive oil 1 tbsp
Butternut squash, flesh peeled and in 2cm cubes (1kg butternut squash will give approximately 600g when peeled)

Potato, cubed 150g
Chicken stock 500mls
Salt to taste
Garnish with fresh parsley or a dollop of Greek yoghurt
Method:
1. Place onion in the bowl of the Lakeland MultiChef and chop: Time: 5 seconds, Speed: 8
2. Add paprika and oil and sauté for: Time: 2 minutes, Speed: 1, Temperature: 100ºC
3. Add butternut squash and potato and chop for: Time: 30 seconds, Speed: 8

LEEK AND POTATO SOUP
Serves 4
Ingredients Quantity
Leeks trimmed, halved lengthwise, sliced and washed
2 medium
Vegetable oil 1 tbsp
Potatoes, scrubbed leave skins on and cubed 500g
Chicken stock 700ml
Salt to taste
Method:
1. Place leeks in the bowl of the Lakeland MultiChef with the oil and cook: Time: 4 minutes,
Speed: 1, Temperature: 90ºC
2. Put potatoes in the basket and place the basket inside the bowl. Add the stock and cook:
Time: 25 minutes, Speed: 3, Temperature: 100ºC
3. Check the potatoes are ready, taste and season
Note: If you prefer a smooth soup, put all the vegetables in the bowl of the Lakeland MultiChef, cook as above, allow to cool for 5 minutes then blend: Time: 30 seconds, Speed: 1- 5 gradually
PEA AND HAM SOUP
Serves 4
Ingredients Quantity
Onion cut into 3 -4 pieces ½
Carrots medium peeled and roughly cut into 1 cm rounds

Red lentils 125g
Ham stock 750ml

Shredded cooked ham 150g

1. Put onion and carrot into the bowl of the Lakeland MultiChef and process 4 times using the pulse function.
2. Add the oil and sauté for: Time: 2 minutes, Speed: 1, Temperature: 90ºC
3. Add lentils, stock and salt and pepper and cook: Time: 40 minutes, Speed: 2, Temperature:
100ºC
4. Allow to cool for 5 minutes. Scrape down the sides of the bowl with spatula.

Parsley, a small bunch, stalks removed

1. Put the diced butter and garlic into the bowl of the Lakeland MultiChef and process: Time: 5

CARROT & CORIANDER SOUP

Ingredients:
Carrots, peeled and sliced in rounds 1cm thick 300g
Onion, peeled and chopped into 3-4 pieces 50g
Vegetable stock 500ml
Salt and pepper to taste
Butter 50g
Fresh coriander leaves 30 - 50g
Single cream 200ml (optional)

1. Put the carrots and onions into the bowl of the Lakeland MultiChef and chop: Time: 10

2. Add the stock, salt, pepper, butter and coriander and combine: Time: 5 seconds, Speed: 6

SMOKED HADDOCK AND SWEETCORN CHOWDER
Serves 4

Leek, halved washed and cut into 3 cm pieces 1
Butter 25g
Olive oil ½ tbsp
Potato, scrubbed skin on and cut into small cubes
300g
Milk 500ml
Stock, vegetable, chicken or fish 300ml
Sweetcorn, frozen 300g
Ground nutmeg ½ tsp
Black pepper, ground ¼ tsp
Smoked haddock, dyed or undyed according to personal preference
400g
Method:
1. Put the leek into the bowl of the Lakeland MultiChef and chop: Time: 5 seconds, Speed: 5
2. Add butter and oil and cook: Time: 2 minutes, Speed: 1, Temperature: 100ºC
3. Add potato, milk and stock and cook: Time: 10 minutes, Speed: 1, Temperature: 100ºC
4. Add sweetcorn, nutmeg and pepper and cook: Time: 12 minutes, Speed: 1, Temperature:
100ºC
5. Remove skin and any bones from the haddock and cut into large chunks. Add fish to bowl and cook: Time: 2 minutes, Speed: 1, Temperature: 100ºC
6. Check that the fish is fully cooked (it should be translucent). If not, test again after 1 more minute.
CHICKEN AND COCONUT SOUP
Serves 4

Vegetable oil 1 tbsp
Small onion, peeled ½
Garlic cloves, peeled 2
Fresh root ginger, peeled 25g
Thai green curry paste 2 tsp
Can coconut milk 400ml
Chicken stock 500ml
Kaffir lime leaves 2
Lemongrass, ends trimmed and outer layer removed
1 stalk
Chicken thigh or breast, boneless, skinless in bite- sized pieces
200g
Thai fish sauce 2 tsp
Lime juice of 1
Fresh baby spinach leaves 200g
Salt and ground black pepper to taste
Method
1. Place oil in pan, add onion, garlic and ginger. Chop: Time: 20 seconds, Speed: 7
2. Add curry paste, Cook: Time: 3 minutes, Speed: 3, Temperature: 90ºC
3. Add coconut milk and cook: Time: 5 minutes, Speed: 3, Temperature: 90ºC
4. Add the stock, lime leaves, lemongrass and then add the basket and place chicken into it:
Time: 15 minutes, Speed: 3, Temperature: 120ºC
5. While chicken is cooking, use spatula once or twice to stir it through the hole in middle of lid to break it up and move it.
6. Add Thai fish sauce and lime juice, add the spinach to the basket and then mix: Time: 3
minutes, Speed: 3
7. The heat from the soup should wilt the spinach, but if not it will wilt when you serve.
8. Remove the basket, taste the liquid and season to taste. Remove the lemongrass and lime leaves.
9. Serve the chicken and spinach into bowls and then add the liquid
10. Taste and season.
