Getting Started (Cont.)
FREEZING THE BOWL
The most important step in making ice cream is to ensure the inner bowl is properly frozen. It takes at least 8 hours for the bowl to freeze at –18ºC or below, or longer if your freezer runs at a higher temperature.
• If you have sufficient space in the freezer, we suggest you store the bowl permanently in the freezer to ensure you can make ice cream any time you feel like it.
• Before freezing the bowl, ensure it is clean and thoroughly dry. Place the bowl in a plastic bag and place it in the freezer in an upright position.
• To check whether the bowl is completely frozen, shake it. If you still hear the cooling liquid moving, return it to the freezer until fully frozen.

3. Inner bowl and handle ring: The inner bowl comes with a detachable handle ring for easy insertion into and removal from the housing (Fig. 3).
4. Ice cream maker: Lower the assembled top part of the ice cream maker (lid/ power unit/paddle) into the housing, making sure the handle tabs align with the indentations on the upper rim of the housing. Press firmly into place (Fig. 4).
ENSURING FOOD SAFETY
Ice cream containing raw eggs is an ideal breeding ground for salmonella. Raw eggs may harbour very low quantities of salmonellae and these can multiply rapidly during extended storage or under insufficient refrigeration. Deep freezing does not kill salmonellae. It is therefore very important to
always maintain appropriate food safety and hygiene standards when preparing ice cream mixture.
• People with weak immune systems, including young children, pregnant women, the elderly or people who are generally unwell, should only eat ice cream made without raw eggs.
• If using eggs, ensure they are fresh, and always store them in the fridge.
• Make sure all utensils used in ice cream preparation are clean.
• Keep the ice cream mixture refrigerated until it is cold enough to use in the ice cream maker. Do not store refrigerated mixture in the refrigerator for longer than 24 hours.
• Consume ice cream immediately. Leftover ice cream made from fresh ingredients may be kept in a freezer at –18ºC, but for no longer than 1 week.
• Never freeze ice cream that has been fully or partially defrosted.
• Clean all parts of the ice cream maker thoroughly after each use.

Instructions
Preparing the Frozen Dessert Mixture
• In a separate bowl, prepare your ice cream or sorbet mixture; see pages 19 to 26 for recipe suggestions. Cool the prepared ice cream/sorbet mixture thoroughly in the refrigerator for at least 4 hours.
IMPORTANT: It is important that the mixture is cold before pouring it into the
ice cream maker.
Using the Ice Cream Maker
• Make sure all parts of the power unit/lid are clean and dry. Attach the spindle securely onto the bottom of the motor unit, and the paddle onto the spindle.
• When the ice cream mixture is cold, take it out of the refrigerator. Take the inner bowl out of the freezer and place it into the housing.
IMPORTANT: Do not delay; it is very important to use the inner bowl straight
after taking it out of the freezer. Hold the bowl by the handle tabs, and to avoid frostbite, use oven mitts or pot holders when touching the chilled bowl.
• Place the assembled power unit/lid on top of the unit; it will click in securely.
• Insert the plug into an appropriate electrical outlet. When you switch on power at the outlet, the unit will emit a beep sound and [ 20:00 ] will be shown on the LCD (Fig. 5). This is the default running time (20 minutes).
• Pressing the RESET button will increase the running time, in one minute steps, up to a maximum of 40 minutes.
• Pressing the POWER button will start or stop the machine at any time.
• After having set the running time, press the POWER button to start the ice cream maker. The paddles will start rotating and the countdown will start. The LCD will display the remaining time [ XX:XX ].

Instructions (Cont.)
IMPORTANT: The ice cream maker must be in rotation before adding
ingredients, otherwise the mixture will immediately freeze to the inside surfaces of the bowl.
• Open the chute and carefully pour the ice cream/sorbet mixture through the chute into the inner bowl.
IMPORTANT: When pouring the mixture into the bowl, always stop at least
5cm from the top, as the mixture will increase in volume during freezing.
• Allow the mixture to churn until frozen or the desired consistency is reached. This may take up to 15–30 minutes, but most recipes will take less time.
IMPORTANT: Do not stop and start the machine unnecessarily during use, as
the mixture may freeze to the bowl and prevent movement of the paddle.
• If your ice cream is ready before the set time, press the POWER button to stop the machine. Unplug it, then press the two latches at the sides of the lid and take off the lid. Your ice cream is now ready to serve.
IMPORTANT: Do not use hard or pointed utensils such as metal spoons for
removing the ice cream, they can damage the surface of the bowl. Only use rubber, silicone or wooden utensils to serve ice cream from the bowl.
• The ice cream produced should have a soft and smooth consistency.
• To firm up soft ice cream before eating, or to store leftover ice cream, transfer it to a separate, freezer proof container for storage in the freezer.
IMPORTANT: Do not store ice cream or sorbet in the inner bowl in the freezer.
It will stick to the sides of the bowl and may damage the bowl.
IMPORTANT!
• Should the ice cream mixture become very thick, the paddle will automatically change the direction of rotation to prevent the motor from overheating. If it keeps on changing direction, switch off the appliance.
• In the unlikely event of the motor overheating, a safety cut out will activate and stop the motor. In such a case, switch off the machine, unplug it from the power supply and allow the power unit to cool down.
• For best results, the paddle should be in contact with the inside of the inner bowl when the paddle rotates.

HINTS FOR BEST RESULTS
Freezer Bowl Storage
The freezer bowl needs to be stored in the freezer at –18ºC or below for a minimum of 8 hours before use. You may have to store it for longer if your freezer is running at a higher temperature. If you can still hear the coolant moving when you shake the bowl, it will need more time in the freezer. We recommend you store the bowl permanently in the freezer, if you have enough space for it. This way it will always be ready whenever you feel like ice cream.
Make sure the inner bowl is completely dry before freezing. Wrap it in a plastic bag and store it in the freezer in the upright position.
Basic Ice Cream Ingredients
Most ice cream recipes are a combination of cream, milk, eggs and sugar.
You can use any type of cream, however, the type of cream you use will have an impact on the texture and flavour of your ice cream. The higher the percentage of fat, the richer the ice cream flavour and the softer the texture.
For best results always refrigerate the ingredients before making ice cream.
Cream, Full Fat Or Skim Milk?
Any combination of milk and cream can be used but make sure the liquid measurements remain the same. For example, you can make a lighter, lower calorie ice cream by using more milk than cream, or by not using any cream at all. Skim milk will work, but there will be a noticeable difference in texture.
Sugar
Caster sugar or icing sugar dissolves more easily than normal, granulated sugar. Use the precise amounts mentioned in the recipe; too little sugar will make the ice cream grainy, and with too much sugar it will not set.
Consistency of the Ice Cream Mixture
Blend or mix the ice cream ingredients thoroughly before refrigerating the mixture. Do not use stiff mixtures (whipped cream or frozen liquids). The major recipe ingredients should be liquid or semi-liquid when preparation starts.
Pre-Cooked Mixtures
Some recipes require the mixture to be pre-cooked. In a separate bowl, allow the mixture to cool, then place it in a refrigerator to pre-chill for at least 4 hours before pouring it into the ice cream maker chute.

Extra, Solid Ingredients
When adding ingredients such as chocolate chips, nuts, or biscuit crumbs, add these ingredients about 5 minutes before the end of the churning time.
Alcohol
If adding alcohol to a recipe, add it when the mixture is almost done, otherwise the mixture may not freeze properly, as alcohol inhibits the freezing process.
Sorbet Mixture
Keep in mind that the freezing process reduces the sweetness of the fruit, so the frozen sorbet will taste less sweet than the ingredient mixture.
Churning Time
Do not operate the ice cream maker longer than required. If after 30 minutes the mixture is not solid, or has thawed again, do not continue. Perhaps the bowl was not cold enough, which can prevent the ice cream from thickening, or the mixture was too warm, or the ingredient portions were incorrect.

FAQs and Troubleshooting Guide
Most common problems with the ice cream maker can be solved without need for a service call. Check in the list below for possible causes and solutions. If none of the suggestions help you solve the problem, contact our after sales support centre for advice.
The ice cream does not set, it is too runny.
The likely cause for this problem is that your ice cream mixture or the inner bowl was not cold enough. Make sure to refrigerate your ice cream mixture for 4 hours before use and freeze the inner bowl for at least 8 hours. To harden runny ice cream, put it in the freezer for a brief time until it has reached the desired consistency. Also make sure to observe the quantities in your recipe.
The rotation of the paddle keeps changing.
This happens when the ice cream mixture becomes very thick. The paddle direction changes to prevent the motor from overheating. Switch off and unplug the appliance and eat the ice cream, if you are happy with the consistency, or keep it in the refrigerator until the power unit has cooled down and then retry.
The motor stopped during operation, but the ice cream is not ready yet.
A safety cut out will activate and stop the motor to prevent it from overheating. Switch off and unplug the appliance and keep the ice cream in the refrigerator until the power unit has cooled down and then retry.
The ice cream is overflowing out of the inner bowl.
This may happen if your quantities are too large for the ice cream maker. Ice cream expands during churning. Next time use smaller quantities.
The outside of the inner bowl is full of ice crystals and is difficult to handle.
Make sure the inner bowl is completely dry before putting it in the freezer, wrapped in a plastic bag. Always use oven mitts or pot holders to handle the chilled bowl, and hold it by the handle tabs.

Ingredients Full cream milk 1 cup
Fresh mint leaves 2½ cups, packed Caster sugar ¾ cup Double cream (or thickened) 2 cups Vanilla extract 1 tbsp Mint patties, chopped 1½ cups
Method
Add milk into a saucepan, heat gently and bring to the boil. Remove from heat, add the mint leaves and let them steep for 20–30 minutes. Either use a stick mixer to blend the mixture, or for a milder flavour, strain the mixture, discard the mint leaves and only use the infused milk.
Add the sugar to the minted milk and whisk, or beat using a hand mixer on a low speed, until dissolved. Stir in the cream and vanilla, cover with cling wrap and chill in the refrigerator for at least 4 hours.
With the paddle rotating, pour the mixture through the chute into the inner bowl of the ice cream maker. About 5 minutes before the ice cream is ready, add the chopped up mint patties down the chute. Leave the machine churning until the mixture has reached the desired consistency. If all ingredients were well chilled, and the bowl thoroughly frozen, this should not take more than 15 to 30 minutes.
