Within the Aroma process is the GV AROMAT, the Storage and Retarder Proofing System, in which the dough pieces placed after
coming from the blast cooler AROMA+COOLER®, then brought to the optimal aromatisation temperature while retaining an optimal
fermentation stability. As a result the dough pieces are ideally prepared for baking in the store.
Features
– Retarding the dough pieces in stacked rimmed trays
– Keeps the dough pieces at optimally moist and humid
– Only with optimum aromatisation temperature can full aroma development be achieved
– Specifically controlled proofing curve up to +15 ° C provides high proofing tolerance and proofing stability
– Storage in the plus temperatures is possible for up to 36 hours
Airflow
The cold air is guided into the cabinet by a suspended stainless steel corner and removable stainless steel air
guide systems to provide gentle storage of the dough pieces. Stainless steel ram bars are mounted with space
from the wall in the suction and blowing area. The cold air is blown on one side of the cabinet and slowly
drawn through the trays slowly back into the evaporator.
