Assembly and Operation of Your Kambrook Stand Mixer
Before First Use
Before assembling your Kambrook Stand Mixer, remove and safely discard any packaging material and promotional labels.
Ensure the Speed Control Dial is in the ‘OFF’ position and the appliance is switched off at the power outlet and remove the power cord from the outlet.
Wash the mixing bowls, beaters and dough hooks in warm, soapy water with a soft cloth. Rinse and dry thoroughly.
Mixing bowls may also be washed in the dishwasher.
NOTE: When first using your Stand Mixer, you may notice an odour coming from the motor. This is normal and will dissipate with use.
Assembling the Mixer Head
1. Place the mixer stand on a level, dry surface such as a bench top. Ensure the mixer stand is in the horizontal position.
2. To assemble the mixer head to the mixer stand, press down and hold the ‘Mixer Release Lever’ located at the rear of the mixer stand. Align the mixer head on the stand so that the metal pivot on the bottom of the mixer head fits into the latched opening on the top of the stand. Once fitted, release the mixer release lever to lock the mixer head in place as the top of the lever should clamp securely around the metal pivot.
3. To tilt the mixing head upward, press inwards on the ‘Tilt’ button located on the side of the mixer stand while pulling up on the handle of the mixing head to elevate.
NOTE: Make sure the mixer head is securely attached to the mixer stand before using.
WARNING: The mixer should not be used as a hand mixer. It must always be used on the stand.
Attaching the Revolving Turntable
1. To ensure the proper positioning of the mixing bowl with the mixer, the turntable has two positions. Before adjusting the turntable, decide which bowl will be used. To adjust the turntable, remove it from the base of the mixer stand. To easily identify the correct operating position for each bowl; note the graphic icons printed on the base depicting a large bowl and a small bowl. Place the turntable in the hole with the icon corresponding to the bowl that will be used (See Fig. 1). The turntable should spin around freely.

Problem Possible Solution
Unsure of whether to use beaters or dough hooks
• Use beaters for all mixing/whipping tasks.
• Use dough hooks only for preparation of yeast/
bread doughs.
• DO NOT use a dough hook with a beaterthis will damage your Kambrook Stand Mixer
Unsure of which speed setting to use
• Use the mixing guide on page 12 to help select correct mixing speed when preparing recipes.
• Begin mixing at lowest speed, then increase to higher speed to prevent splattering.
Object has fallen into the stand mixer bowl
• Should an object, such as a spoon or spatula, fall into the bowl while mixing, immediately switch the Stand Mixer OFF, turn off at the power outlet and remove cord from the power outlet, then remove object.
• If the Stand Mixer is damaged in any way, return to a Kambrook Authorised Service Centre.
Over mixing has occured
• Mix for the recommended time in the recipe to avoid over mixing.
Egg whites are not whipping
• Be sure beaters and bowls are completely clean and dry before use - even a small amount of fat will affect the whipping performance.
Bread dough is not combining
• Some brands of flour absorb more liquid than others, so additional amounts of liquid may need to be added if the bread is not combining.
• DO NOT exceed speed setting 1 when kneading.
• DO NOT place hands near dough hooks
when mixer is operating.
The Stand Mixer is shaking on the bench while it is in use.
• Remove some of the contents from the bowl, as the contents may be too heavy.
• The speed setting may be set too high for the task; reduce the speed.
If batter is too firm • Add more liquid to your batter.
Mixture is curdling after the eggs have been added
• Add eggs one at a time, beating well after each addition.
• Make sure eggs are at room temperature.
Sugar crystals still visible after creaming
• Continue to cream until sugar has dissolved, or use caster sugar.
Trouble-shooting Guide
14
Problem Possible Solution
Lumps in batter or dough
• Sift the flours and sugar before mixing.
Cooked pavlova weeping (sugar not dissolved)
• Continue to whip, until all sugar is dissolved. Test by rubbing a small amount of mixture between your fingers; if sugar granules are still felt, further mixing is required.
Beaters or dough hooks are stalling
• Dough or batter is too thick; add more liquid or reduce quantity.
• Chocolate nuts, or fruit pieces are too large; reduce the size of these ingredients to avoid this problem.
