General Precautions
Carefully read this booklet BEFOREinstalling the oven
Check that all components arepresent (see parts list on page 11). If there are any missingor
damaged parts do not start installation, contact the supplier toarrange replacement. Similarly if the
colour marked on thelabelsfor the primer and fine sand do not match the ordered colour contact
the supplier toarrange replacement.
Some components areheavy- get assistance fromsomeone
of similar height / build for lifting, carrying andsetting in place.
Component weights arelisted inthe parts list onpage 11.
Wear abrasion/cut resistant leather gloves when handlingformed
dome sections, metal work, meshand chicken wire.
Some materials e.g. cement render, primer and nesand
nish present a chemical hazard during use:
Keep out of reachof children and pets
Keep children and petsawayfrom the work area
Causes skinirritation, serious eye damage and may causean
allergic reaction
Wear impermeablegloves e.g. Nitrile rubber when workingwithwet
materials
Wear eye protection when mixing and working wet materials
Thoroughlywash hands after handling materials, especiallybefore
eating or drinking
During usethe oven will become hot and can remain so for a
significant timeafter the fire hasdied out.
Careshouldbe taken when approaching or using the oven to
protect exposed hands and arms.
The use of correct cooking and cleaning tools isstrongly
recommended.

Installation Considerations
•
Smoke may not be emitted fromachimneyunless it isfroman authorised fuel or the appliance isexempt
- Wood is not an authorised fuel
- The IMSOutdoor Oven is not an exempt appliance
•
Freestanding Outdoor Ovens, likebarbecues, areexcluded from this legislation but to satisfythe exclusion:
- the installation must beoutdoors
- itschimney must not pass through a building (including an out-house or summer house)
•
Could smokefromthe oven cause nuisance:
- to neighbours?
- bydrifting acrossapublichighway posing a danger to traffic?
•
Is thelocation sheltered fromstrong winds?
•
Is thelocation away fromany combustiblematerialssuch as wooden fences, garden sheds, shrubs and bushes?
•
Is thelocation away fromresidential property toprevent smokeentering through open windows or doors?
•
Is thelocation away frommainthoroughfares wherechildren,elderlyor infirm regularlypass?
TheCleanAir Act allowed theestablishment of Smoke Control Zones by local authorities.
Installing the oven

• Thisshould be jointed (maximum2mmjoint) with
UltraWrightset Super

• Tape the foiled insulation together using the supplied foil tape.

• Applythe chicken wire over the top of the foil insulation forming it to
followthe shape of the dome and entrance. This isrequired toallow
the first render coat tohold on tothe dome otherwisethe material
can slipfrom the foil making render application difficult.
• Lay thechicken wire over the dome and cut a holeat the front to
allow the fluetobefitted

• Pull the chickenwiredown around the dome cutting aV-shaped
notch upthe backto thetop of thedome
• Twist the cut ends together along each side of the cut to holdthe
shapeof the chicken wirefor later render application
• Lay themetalwork over the top of the Dome & Doorway
• Leaveanyplastic coatingin placeuntil the application of render,
primer and sand has been completed as this will makecleaning the
construction easier
• Trimexcess chicken wire from around the baseof the metal work
• Insert Stainless Steel Flue into opening.
The seam of the flueshouldfacethe back of the oven.

Render a basecoat over the foil insulation/chickenwire
Equipment: • Mixing vessel/bucket
• Electricpaddlemixer (slow speed)
• StainlessSteel smoothing trowel, spatula,
notchedtrowel
Method:• Application temperature5˚C- 30˚C
• Donot applyif frosty/raining or frost/rainareanticipated
• Mix5.1 litres of water per 30kgbag
• Thoroughlymixthe product until it isan even
consistency
• Rest mixfor five minutes beforeapplying
• Using the notched trowel applyalayer of render
• Ensurethe render ispushed down between the metal
work/foil insulation andthat there areno air pockets
under the chicken wire
Consult:• ParexFine Sand datasheet for further detailed supplier
information
• Withthe ovendoor lifted, loosen and removethe mountingscrew
• Withthe longest edge uppermost slide glassplate between the rails
• Ensureequal spacing all round

• Allowoven tofullydry out for 24 hoursunder normal conditions
• In low temperatures or periods of high humiditydrying time will be
longer

Using your oven
Curing the Outdoor Oven
•
Curing your ovenis a crucial step immediatelyafter finishing construction and beforeusing it for the first time
•
If your oven is rapidlyheated toahigh temperatureit can result incracksor fissures affecting performance
•
Curing the oven involves lighting a series of fires which aregraduallyincreased insize(andtemperature) over a period of time
•
It is important during thecuring process that the oven remains heated, the fire does not dieout and the oven become cold
Using the Oven
•
Any wood to be used must beclean, free of paint, glue or
chemicals(such as preservatives and stains) as thesemay
releaseharmful combustion products that may taint any food
being prepared
•
Green, sappy wood or seasonedwood with moisturecontent
greater than 20%will causeexcessive smoke
•
Ideallyyou should onlyusedry seasoned wood as thisgives a
cleaner burnand moreeven temperature
•
To start the fire use a soft wood
•
Kindling should becut intolengths approximately 200 - 300mm
andbe no thicker than a small finger
•
Crumpled papershouldbe used tostart the fire rather than any
fluid or lighter block
•
It is easier toset the fireon the paddle, then onceestablished
insert the burning material in tothe oven
•
As thekindling burns away addhardwood 200 - 300mm length
andno more than 15mm indiameter
•
During firing the oven door shouldbe left partiallyopen
•
As your fire increases in heat add morehardwood
NOTE: during wet weather or lowambient temperatures during
autumn/winter fire building shouldbeundertaken more slowly
over 30minutes toavoidrapidheat rise that may result in
fractures
•
It is perfectlynormal for the inside of the oven to turn blackas it
isfired, duetodepositsfrom smokeand resin in the wood
•
It is recommended tousea thermocoupleor temperaturegunto
monitor the oven temperature
•
When the oven has reached @350 - 400˚Cspread the embers
evenlyover the oven floor to storeas much heat as possible into
the cooking base
•
Movethe fire toone sideandsweep anyremaining embers to the
side withanatural fibrebrush
•
During longperiods of cooking top upwithmorewood moving
the embersaround tomaintain an even temperaturewithin the
oven
Checking the temperature of the Oven for cooking
•
Carefully throwahandful of flour across the centre of theoven
floor - if the flour bursts into flames or blackens within 10
seconds thefloor istoo hot and will burnthe pizza base
•
You can lower the oven temperatureby removing embersusing
the shovel or leaving thedoor open
•
If theflour browns in 10seconds theoven is readyfor use

Caring for your Oven
•
Ensurewater does not get on to the cooking base
•
When not inuseplace a cap on the flue and close the door
•
When cool cover the oven toprevent water penetrating theshell
which couldfreeze and crack the covering
•
The high temperatureachieved during firing acts as self-cleaning
mechanismburning awayspilled food, grease, anybacteriaor
bugs
•
When cool sweepout any ash or embers withanatural bristle
brush or wire brush
•
Donot put hot ashes or embersin to plasticbins or metal bins
withcombustibleitems such as clothing or paper
