Standard Exterior Specifications
Front, sides, landing ledge, control panel, backguard with shelf
and kick plate shall be stainless steel. All stainless steel
seams shall be welded and finished. Control knobs shall be
durable cast metal with a polished chrome finish. Legs shall
be 6" (152) chrome plated with adjustable feet.
Range Top Specifications
Open Burners shall be 28,000 BTU/hr. (8 KW) lift-off
PyroCentric™ burner heads with no gaskets and no screws.
There shall be one standing pilot for each burner.
Top Grates shall be constructed in 12" x 12" (305 x 305)
lift-off sections and be made of heavy-duty cast iron. Cast-in
bowl shall direct heat upward. Top grate design shall include
an integrated pilot shield.
Char-broiler Top Specifications
Individually controlled 20,000 BTU/hr. (6 KW) stainless steel
burners shall be located every 6" (152) with cast iron radiants.
Burners shall be removable, reinforced cast iron to prevent
clogging and provide uniform distribution of heat. Grates shall
be heavy duty cast iron. Grates sections shall be round
rods and shall have combo grates available. Grates shall
have 3 position cooking levels with “easy-tilt” handle. Grates
shall be easily adjustable even when fully loaded.
Griddle Top Specifications
Griddle burner shall be 30,000 BTU/hr. (9 KW) “U” type
located every 12" (305) for even cooking. Burner shall have one
adjustable gas valve and standing pilot per burner. Aeration baffles
shall be installed between burners and a full width rear flue shall be
included to ensure a uniform griddle surface temperature.
Griddle plate shall be 1" (25) thick, highly polished plate with no
breaking-in required. Griddle plate shall be 24" (610) deep. Unit
shall have a stainless steel 4" (102) high tapered splash guard.
Grease trough shall be 31/2" (89) wide grease for easy cleaning.
Energy-saving thermostat shall be adjustable from 150oto 450o F. (66

Refrigerator Specifications
Refrigeration system shall be energy efficient and maintain

Each self-closing drawer shall accommodate one, full-size
steam table pan. Drawer dividers (included) shall accommodate various pan-size configurations. Each drawer shall have
a center pull handle that is flush with the drawer face. Oversized
drawer guides with heavy-duty stainless steel bearings in a
double skate design shall withstand 275 lbs. (125 Kg)

drawer shall be 6" (152) deep, bottom drawer shall be 4" (102)
deep. Components shall be easily accessed for service and
the condensing unit shall have a R-404 expansion valve.
Condensation shall be eliminated in a non-electric self-contained
drip pan located under condenser unit. Unit shall have an
internal conduit for a single point electrical connection.
Electrical: 1/5 h.p. 120 v. 3 amps. 6 ft. (1829) power cord shall
be included.
Gas: Manifold pressure is 5.0" W.C. for natural gas or 10.0"
for propane gas. Manifold size

Clearance: For use only on non-combustible floors. Legs or
casters are required for non-combustible floors; or 2" (51)
