1. SAFETY REGULATIONS
• This appliance is intended for commercial use only and must not be used for household use.
• The appliance must only be used for the purpose for which it was intended and designed. The manufacturer is not liable for any damage caused by incorrect operation and improper use.
• Keep the appliance and electrical plug away from water and any other liquids. In the event that the appliance should fall into water, immediately remove plug from the socket and do not use until the appliance has been checked by a certifi ed technician. Failure to follow these instructions could cause a risk to lives.
• Never attempt to open the casing of the appliance yourself.
• Do not insert any objects in the casing of the appliance.
• Do not touch the plug with wet or damp hands.

1.1 SPECIAL SAFETY REGULATIONS
PRECAUTIONS FOR THE THERMAL RISK

1.2 WARRANTY
Any defect affecting the functionality of the ap­pliance which becomes apparent within one year after purchase will be repaired by free repair or re­placement provided the appliance has been used and maintained in accordance with the instructions and has not been abused or misused in any way. Your statutory rights are not affected. If the appli­ance is claimed under warranty, state where and

2. TIPS FOR THE TEMPERING OF CHOCOLATE
• Set the maximum temperature on the appliance and melt the 70% of the chocolate, stirring frequently.
• When the chocolate is completely melted and has reached a temperature of 40-45° C lower at 30° C the thermostat of the appliance and add the re­maining 30% of chocolate at room temperature.
• Stir to mix and cool down to the temperature of “tempering” recommended by the manufacturer of the chocolate (the temperature of tempering

3. DESCRIPTION OF THE PRODUCT
This device is an electrical device whose function is to melt solid chocolate and keep it at melted or liquid form, for use in pastry, ice cream and bakery. It is available in a single analog version with a ther­mostat to adjust the temperature.
The analog version allows a static setting of the temperature to be reached, so the timing of melt­ing depends on the amount of chocolate placed in the basin.

6. EMPLOYMENT FIELD
The equipment is exclusively marketed to melt and maintain chocolate at a fl uid state. It has been studied both for professional. Do not use this appliance for any other purposes.

8. WAY OF EMPLOYMENT
• Insert the plug into the single-phase 230 V wall socket
• Press the power switch and check that the indi­cator voltage lamp is on (if that is not the case, check that the heating of the basin starts any­way then, replace the defective indicator lamp by
asking a professional electrician).
• Set the temperature chocolate I supposed to reach or maintain. The real temperature of the product should be checked by using a special food thermometer (not supplied with the stand­ard equipment).
PLEASE NOTE: Do not use the appliance without chocolate in the basin. We suggest to mix quite often in order to maintain the mass at a uniform temperature.
9. CLEANING
Before cleaning the item, please follow these steps:
• turn off the device by pushing the main switch,
• disconnect the plug,
• make sure that no parts are still hot, or let them cool down.
Use hot water and detergent for dishes and table­ware to wash the aluminum basin. Plastic shell cleaning:
• use a damp sponge with warm water;
• avoid contact of water with the electrical parts.

wir danken Ihnen für den Kauf des Gerätes HENDI. Machen Sie sich bitte mit dieser Anleitung noch vor der Inbetriebnahme des Gerätes vertraut, um Schäden durch die unsachgemäße Bedienung zu vermeiden. Den Sicherheitsregeln ist besondere Aufmerksamkeit zu widmen.
1. SICHERHEITSREGELN
• Die unsachgemäße Bedienung des Geräts kann zur schweren Beschädigung des
Geräts sowie zu Verletzungen führen.
• Das vorliegende Gerät ist ausschließlich für den gewerblichen Gebrauch bestim-
mt und darf nicht im Haushalt verwendet werden.
• Das Gerät ist ausschließlich zu dem Zweck zu benutzen, zu dem es hergestellt
wurde. Der Hersteller haftet nicht für Schäden, die auf unsachgemäße Bedi­enung des Geräts zurückzuführen sind.
• Den Kontakt des Gerätes und des Steckers mit Wasser oder einer anderen Flüs-
sigkeit vermeiden. Den Stecker unverzüglich aus dem Stecker ziehen und das Gerät von einem anerkannten Fachmann prüfen lassen, wenn das Gerät unbeab­sichtigterweise ins Wasser fällt. Bei Nichteinhaltung dieser Sicherheitsvorschrif­ten besteht Lebensgefahr.

Sämtliche Mängel und Unzulänglichkeiten sind ausschließlich durch qualifi ­ziertes Personal zu beseitigen.
• Niemals ein beschädigtes Gerät benutzen! Das beschädigte Gerät vom Netz
trennen und sich mit dem Verkäufer in Verbindung setzen.
• Warnung: Die Elektroteile des Gerätes dürfen weder in Wasser noch in andere
Flüssigkeiten getaucht werden. Ebenso ist das Gerät nicht unter fl ießendes Was­ser zu halten.
• Der Stecker und die Stromversorgungsleitung sind regelmäßig auf Beschädigun-
gen zu prüfen. Der beschädigte Stecker oder Leitung sind an eine Servicestelle oder einer anderen qualifi zierten Person zur Reparatur zu übergeben, um event­uellen Gefahren und Verletzungen des Körpers vorzubeugen.
• Man muss sich davon überzeugen, ob die Stromversorgungsleitung weder mit
scharfkantigen noch mit heißen Gegenständen in Berührung kommt; halten Sie die Leitung weit entfernt von einer offenen Flamme. Um den Stecker aus

der Netzsteckdose zu nehmen, muss man immer am Stecker und nicht an der Leitung ziehen.
• Die Stromversorgungsleitung (oder Verlängerungsleitung) ist vor dem zufälli­gen Herausziehen aus der Steckdose zu schützen. Die Stromversorgungsleitung muss so geführt werden, dass niemand zufällig darüber stolpern kann.
• Das Gerät muss während seiner Anwendung ständig kontrolliert werden.
• Warnung! Wenn der Stecker in der Netzsteckdose ist, muss man das Gerät als an die Stromversorgung angeschlossen betrachten.
• Bevor der Stecker aus der Netzsteckdose genommen wird, ist das Gerät auszuschalten.
• Das Gerät darf beim Tragen nicht an der Leitung gehalten werden.
• Benutzen Sie kein Zubehör, das nicht mit diesem Gerät mitgeliefert wurde.
• Das Gerät muss man ausschließlich an die Steckdose mit solch einer Spannung und Frequenz anschließen, wie auf dem Typenschild angegeben wird.
• Stecken Sie den Stecker in die Steckdose, die an einem leicht und bequem zugänglichen Ort angeordnet ist, und zwar so, dass das Gerät bei einer Störung sofort abgeschaltet werden kann. Um das Gerät vollständig auszuschalten, muss man es von der Stromquelle trennen. Zu diesem Zweck muss man den Stecker, der sich am Ende der vom Gerät getrennten Leitung befi ndet, aus der Netzsteck-

dose ziehen.
• Vor dem Abtrennen des Steckers ist das Gerät auszuschalten!
• Benutzen Sie kein Zubehör, das nicht vom Hersteller empfohlen wird. Die An­wendung vom nicht empfohlenen Zubehör stellt eine Gefahr für den Nutzer dar und kann zur Beschädigung des Gerätes führen. Benutzen Sie ausschließlich Er­satzteile und Zubehör im Original.
• Dieses Gerät eignet sich nicht für den Gebrauch durch Personen (gilt auch für Kinder) mit geringerer Motorik, Sensorik oder geistiger Fähigkeit oder mangel­hafter Erfahrung und Wissen.
• Auf keinen Fall darf das Bedienen des Gerätes durch Kinder zugelassen werden.
• Das Gerät mit Stromversorgungsleitung ist außerhalb der Reichweite von Kin­dern zu lagern.
• Ebenso muss dafür gesorgt werden, dass die Kinder das Gerät nicht zum Spielen benutzen.
• Das Gerät ist immer dann von der Stromversorgung zu trennen, wenn es ohne Aufsicht bleiben soll bzw. auch vor der Montage, Demontage und Reinigung.
• Während der Nutzung darf das Gerät nicht ohne Aufsicht gelassen werden.

1.1 BESONDERE SICHERHEITSVORSCHRIFTEN
Vorsichtsmaßnahmen gegen thermische Gefahr
• Während des Betriebs können die inneren Teile der Plastikschüssel sowie die EdelstahlschüsselgefährlicheTemperaturen erreichen.
• Gerät nur einschalten wenn Behälter im Gerät ist.
• Wenn möglich die Metallschüssel erst dann entfernen, wenn das Gerät abgekühlt ist, andernfalls
• Ofenhandschuhe anziehen und die Schüssel dort abstellen, wo die seitlichen und unteren Teile nicht versehentlich mit den Händen oder den Armen berührt wer­den können.

Elektriker.
1.2 GARANTIE
Alle innerhalb von einem Jahr nach dem Kaufda­tum festgestellten Defekte oder Mängel, die die Funktionalität des Gerätes beeinträchtigen, wer­den auf dem Wege der unentgeltlichen Reparatur bzw. des Austausches unter der Voraussetzung beseitigt, dass das Gerät in einer der Bedienungs­anleitung gemäßen Art und Weise betrieben und gewartet wird und weder vorsätzlich vernichtet noch nicht bestimmungsgemäß genutzt wurde. 2. RATSCHLÄGE FÜR DAS TEMPERIEREN VON SCHOKOLADE
• Die Höchsttemperatur am das Gerät einstellen und 70% der Schokolade unter häufi gem Um­rühren schmelzen.
• Sobald die Schokolade vollkommen geschmol­zen ist und eine Temperatur von 40-45°C er­reicht hat, den Thermostat das Gerät auf 30°C stellen und die restlichen 30% der Schokolade mit Raumtemperatur hinzufügen.
• Gut durchmischen und bis auf die vom Schoko­ladehersteller empfohlene “Temperierungstem­peratur” kühlen (die Temperierungstempera­tur beträgt zirka 31°C für Bitterschokolade, 30°C für Milchschokolade und 29°C für weiße

erreichen soll, erfolgt mit Hilfe des graduierten Drehknopfes eines Potentiometers, der dem ana­logischen Regler den Regulierungspunkt (Set point) angibt. Die effektive Temperatur des Produktes wird einem eigens dafür vorgesehenen Lebensmit­telthermostat kontrolliert (nicht in der Standard­ausrüstung des Gerätes vorgesehen).

8. GEBRAUCHSANLEITUNG

9. REINIGUNG
Bevor Sie das Gerät reinigen, in folgender Reihen­folge vorgehen:
• das Gerät am Hauptschalter ausschalten.
• den Stecker für die Stromversorgung aus der 230 V Steckdose ziehen.
• sicherstellen, dass keine Teile mehr warm sind, ansonsten abkühlen lassen.
Reinigung der Stahlschüssel:
• warmes Wasser und Geschirrspülmittel verwenden. Reinigung der Plastikschüssel / -ummantelung
• einen mit warmem Wasser befeuchteten Schwamm verwenden.

2. CONSEILS POUR LA TREMPE DU CHOCOLAT
• Réglez la température maximale sur la de l’ap­pareil et faisez fondre le 70% du chocolat, et me­langez fréquemment.
• Lorsque le chocolat est complètement fondu et atteint la température de 40-45°C baissez le thermostat de l’appareil à 30°C, et ajoute les 30% restant du chocolat à température ambiante.

8. MODE D’EMPLOIE
• Insérer la prise dans la prise de courant des mo­nophasés à 230 V.
• Actionner l’interrupteur général et vérifi er que la lampe de tension insérée soit allumée (si cela ne s’allume pas, vérifi er que, avec le thermos­tat établi à la température demandée, entame

9. NETTOYAGE

• s’assurer qu’il n’y ait pas des parties encore chaudes, autrement laisser refroidir.

1. PRECAUZIONI DI SICUREZZA
• L’uso scorretto e improprio dell’apparecchio possono danneggiare seriamente l’apparecchio e ferire gli utenti.
• Questo dispositivo è destinato esclusivamente per uso commerciale e non può essere utilizzato per uso domestico.
• L’apparecchio può essere utilizzato solo per lo scopo per cui è stato concepito e progettato. Il produttore non è responsabile di eventuali danni provocati da uso scorretto ed improprio.
• Tenere l’apparecchio e la spina elettrica lontani da acqua ed altri liquidi. Nel caso improbabile che l’apparecchio cada in acqua, staccare immediatamente la spina dalla presa e fare ispezionare l’apparecchio da un tecnico certifi cato. L’inosser­vanza delle presenti istruzioni può dare luogo a situazioni pericolose
• Non provare mai ad aprire l’involucro dell’apparecchio da soli.

• Controllare regolarmente se la spina e il cavo di alimentazione non sono danneg­giati. La spina o il cavo danneggiati trasmettere al servizio o alla persona qualifi ­care per riparare, per evitare eventuali pericoli e lesioni.
• Assicurarsi che il cavo di alimentazione non è in contatto con oggetti appuntiti o caldi. Tenere il cavo lontano da fi amme libere. Per scollegare la spina dalla presa, tirare sempre la spina, mai il cavo.
• Proteggere il cavo di alimentazione (o di estensione) per la sconnessione acciden­tale dalla presa. Disporre il cavo in modo per evitare lo slittamento accidentale.
• Sorvegliare l’apparecchio continuamente durante l’uso.

• Attenzione! Se la spina è inserita nella presa, l’apparecchio è considerato come
collegato.
• Prima di rimuovere la spina dalla presa, spegnere l’apparecchio!
• Non trasportare l’apparecchio tenendo il cavo di alimentazione.
• Non utilizzare qualsiasi accessorio che non è stato fornito con l’apparecchio.
• L’apparecchio deve essere collegato ad una presa con tensione e frequenza indi­cate sulla targhetta.
• Inserire la spina nella presa situata in un punto facilmente accessibile in modo che in caso di guasto sia possibile scollegare immediatamente l’apparecchio. Per spegnere completamente l’apparecchio, scollegarlo dalla presa di corrente. Per questo staccare la spina che si trova sull’estremità del cavo di alimentazione.
• Prima di scollegare la spina, ricordarsi sempre di spegnere l’apparecchio!
• Non usare gli accessori non raccomandati dal produttore. L’uso di accessori non raccomandati può creare i rischi per l’utente e provocare i danni all’apparecchio. Usare unicamente solo pezzi ed accessori originali.
• L’installazione elettrica deve soddisfare le normative nazionali e locali applicabili. Questo apparecchio non è destinato all’uso da parte di persone (inclusi i bambini) con capacità fi siche, sensoriali o mentali ridotte, o senza esperienza e conoscenza.

1.1 REGOLE DI SICUREZZA SPECIALI
Precauzioni per il rischio termico
• Durante il funzionamento le parti interne della scocca in plastica e la vasca di alluminio anodizzato, possono raggiungere temperature pericolose.
• Non accendere l’apparecchio senza la vasca metallica con il cioccolato.
• Togliere preferibilmente la vasca metallica solo dopo aver lasciatop raffreddare l’apparecchiatura, altrimenti utilizzare guanti da forni e appoggiare la vasca dove le parti laterali e inferiore non possano essere accidentalmente toccate con mani o braccia.
Precauzioni per il rischio elettrico
Verifi care quotidianamente che:
• il cavo di collegamento elettrico sia in buono stato e non presenti danneggiamenti dell’isolante
• l’involucro esterno isolante non presenti danni di origine meccanica o termica

2. CONSIGLI PER IL TEMPERAGGIO DEL CIOCCOLATO
• Impostare la massima temperatura sul dell’ap­parecchio e sciogliere il 70% del cioccolato me­scolando frequentemente.
• Quando il cioccolato è perfettamente fuso e ha raggiunto la temperatura di 40-45°C abbassare a 30°C il termostato dell’apparecchio e aggiun­gere il restante 30% di cioccolato a temperatura ambiente.
• Mescolare per amalgamare e raffreddare fi no al raggiungimento della temperatura di “tempe­raggio” consigliata dal produttore del cioccolato (la temperatura di temperaggio è indicativamen­te di 31°C per il cioccolato fondente, di 30°C per il cioccolato al latte e di 29°C per il cioccolato bianco).
3. DESCRIZIONE DEL PRODOTTO
Il prodotto commercialmente denominato dell’ap­parecchio è un’apparecchiatura elettrica la cui funzione è quella di sciogliere una certa quantità

di cioccolato solido e di mantenerlo allo stato fuso o fl uido, per impieghi in laboratori di pasticceria, gelateria e panifi cazione.
• Questa tecnica è defi nita “temperaggio per in­seminazione” e serve a stabilizzare i cristalli del burro di cacao.
• Per un corretto temperaggio è indispensabile misurare la temperatura con un termometro di­gitale per cioccolato.
• Il cioccolato ben temperato si sforma facilmen­te dagli stampi e ha un aspetto invitante, luci­do e croccante, al contrario se il cioccolato non è temperato, è diffi cile da sformare e oltre a es­sere opaco e molle potrebbe presentare venature biancastre.
E’ disponibile in un’unica versione analogica con termostato per regolare la temperatura. La versione analogica consente un’impostazione statica della temperatura da raggiungere, per cui i tempi di liquefazione dipendono dalla quantità di cioccolato immesso nella vaschetta.
4. STRUTTURA E PRINCIPI OPERATIVI
L’apparecchiatura è composta essenzialmente da una scocca stampata in materiale plastico, nella quale viene inserito il contenitore in alluminio ano­dizzato. Il fondo della scocca in materiale plastico viene riscaldato da una resistenza elettrica, ed il calore viene trasmesso al contenitore metallico. La corrente del riscaldatore è regolata tramite un cir­cuito regolatore (analogico).

La temperatura a cui deve essere portato il ciocco­lato si imposta tramite la manopola graduata di un potenziometro che dà il punto di regolazione (set­point) al regolatore analogico. La temperatura effettiva del prodotto va verifi cata con un apposito termometro per uso alimentare (non in dotazione standard con l’apparecchiatura).

8. MODO D’ IMPIEGO
• Inserire la spina nella presa di corrente mono­fase a 230V
• Premere l’interruttore di accensione e verifi care che la lampada di tensione inserita sia accesa (se ciò non avviene, verifi care che, con il termo­stato impostato alla temperatura richiesta, inizi ugualmente il riscaldamento; in seguito far so­stituire la lampadina guasta da un elettricista professionista)
• Impostare sul termostato la temperatura a cui deve essere portato o mantenuto il cioccolato. Nel caso dell’apparecchio analogico ruotare la manopola del termostato fi no a far coincidere temperatura richiesta per il contenuto della va­schetta e tacca di riferimento.
La temperatura effettiva del prodotto va verifi cata
con un apposito termometro per uso alimentare (non in dotazione standard con l’apparecchiatura).
4- Raggiunta la temperatura ottimale del cioccolato, lasciare in funzione l’apparecchio per tutto il tempo necessario.
NB: non utilizzare il dell’apparecchio a secco, senza il cioccolato nella vasca. Consigliamo di mescolare con una certa frequenza per mantenere una temperatura uniforme in tutta la massa.

9. PULIZIA
Prima di effettuare la pulizia dell’apparecchiatura, eseguire nell’ordine:
• spegnere l’apparecchiatura tramite l’interruttore principale,
• staccare la spina per l’alimentazione elettrica della presa a 230 V;
• assicurarsi che non ci siano parti ancora calde, altrimenti lasciare raffreddare.
Per il lavaggio della vaschetta in alluminio utilizza­re acqua calda e detergenti per piatti e stoviglieria. Pulizia della scocca in plastica esterna:
• utilizzare una spugna umida con acqua calda;
• evitare spruzzi d’acqua sulle parti elettriche accessibili.
