BACON-WRAPPED FILET MIGNON
WITH MUSHROOMS AND GORGONZOLA

INGREDIENTS
8 ounces sliced fresh mushrooms
4 bacon-wrapped beef tenderloin filets
1 tsp. garlic salt
½ tsp. coarsely ground pepper
2 ounces crumbled gorgonzola cheese (or substitute blue cheese)
DIRECTIONS
1. Attach the ceramic plates and preheat the grill to 425°F.
2. Place the mushrooms on the grill, season with salt and pepper, and grill for 8-10 minutes.
3. Remove the mushrooms when done and set aside.
4. Press the SEAR button on the grill and wait 3-4 minutes for it to heat at 500°F.
5. While waiting season both sides of the filets with garlic salt and coarsely ground pepper.
6. Place the filets on the grill and sear for 90 seconds. The grill will automatically go back to 425°F after 90 seconds.
7. Continue grilling until filet is cooked to desired temperature. About 6 minutes if rare and 8 minutes if medium rare.
8. Remove the filets from the grill and top with mushrooms and gorgonzola.
