properly. To protect these parts, dry then coat with cooking oil; wrap in oil-proof paper before storing.
Tip: To protect from rust, vacuum package the parts using a Food Saver
vacuum packaging system.
4.Wipe motor housing with a damp cloth. Do not use harsh or abrasive cleaners.

3.Place a wide, shallow pan or plate beneath the grinder tube to catch the food.
4.Switch to the “ON” position. The grinder must always be “ON” before adding the food.

6.After use, switch grinder to “OFF” and unplug from the wall.
7.Disassemble and clean all parts immediately after use.
NOTE: USING THE REVERSE SWITCH
If the motor slows or stops, this may be due to jammed food.Immediately switch the grinder “OFF.” Press the “REVERSE” switch to push the food in the opposite direction.Release the switch and turn the grinder “ON” again. If the grinder should get jammed again, switch immediately to “OFF”, unplug, disassemble the grinder head and clean the internal parts.

TIPS ON GRINDING
• Cut the food into strips or cubes slightly smaller than the opening on the feeding tube.
• Make sure the food is free of bone or tough tendons before grinding.
• Raw meat or fish should be well chilled (not frozen) before grinding to reduce the loss of juices.
• When grinding large quantities of meat, fats from the meat can build up in the grinder tube, slowing down the grinding efficiency and slowing the motor. If this happens, stop the grinder, disassemble, wash the parts in hot
water and reassemble.
FOOD SAFETY
• Keep raw meats and their juices away from other food. Wash your hands, counters, and other surfaces in hot soapy water after handling raw meat. Don’t let raw meat juices touch ready-to-eat foods.
• Freshly ground meat should be refrigerated and cooked within 48 hours. Ground meats can be frozen up to 4 months.
MAKING SAUSAGES
You can make homemade sausages using the sausage stuffing attachment. All you need is a batch of seasoned ground meat (see recipe book for ideas) and sausage casings. You can purchase either natural or synthetic casings from your local meat market. If purchased dry, soak in water for 1 hour, changing water several times to remove salt; rinse thoroughly. Running water through the casings will indicate if there are any holes in the casings.
TO ATTACH THE SAUSAGE STUFFER
1.Insert Feed Screw into Grinder Tube with the long end of the Spindle first.
2.Place Sausage Separator onto the Feed Screw.
Page 7
3. Place the Sausage Stuffer through the Screw Ring. Attach the Screw Ring to the end of the grinder tube, turning clockwise until tight.
4. Insert the Grinder Head into the Motor Unit opening and tighten Locking Knob to secure.
TO STUFF CASINGS
1. Cut the casing into 1 metre lengths.
2. Pull and gather casing over the end of stuffer attachment, leaving 3 or 4 inches overhanging the end of the attachment.
3. Place the seasoned meat in the Feeding Tray, turn the unit “ON” and push the meat into the opening using the Food Pusher.
4. As the casing begins to fill, tie a knot in the loose end, and continue to stuff loosely. If air bubbles appear while stuffing, prick casing with a pin to allow air to escape.
5. Twist casings into desired link size and shape as the meat fills it.
6. When almost filled, turn the unit “OFF”, remove the casing from the sausage attachment and tie a knot in the open end.
