Oven racks
An internal cooling fan operates during all
oven modes. The warm air from inside the oven
will be exhausted out through vents located
between the door and control panel.
Do not allow this air flow to be obstructed such
as by draping kitchen towels over the front of
the oven in undercounter applications.
To avoid possible burns, place the racks
in the correct position before you turn the
oven on.
The correct rack position depends on the
kind of food and tile browning desired.
The racks have stop-locks, so that when placed
correctly on the supports, they will stop before
coming completely out, and will not tilt. When
placing and removing cookware, pull the rack
out to the bump on the rack support.

Baking Tips

Pan

Preheating
Aluminum
foil
For even cooking and proper browning, there
must be enough room for air circulation in tile
oven. Baking results will be better if baking
pans are centered as much as possible rather
than being placed to the fi'ont or to the back
of the oven.
Preheat the oven if the recipe calls for it.
To preheat, set the oven at the correct
temperature--selecting a higher temperature
does not shorten preheat time. Preheat the
oven for at least 15 minutes, or until the
HEATING light goes off. This may take up
to 20 minutes.
Preheating is necessary for good results when
baking cakes, cookies, pastry and breads.
Preheat for at least 15 minutes.
Never entirely cover a rack with aluminum foil.
This will disturb the heat circulation and result
in poor baking. A smaller sheet of foil may be
used to catch a spillover by placing it on a lower
rack several inches below the food.
Pans should not touch each other or the walls
of the oven. Allow 1- to 1½" space between
pans as well as fi'om the back of the oven, the
door and the sides.
If you need to use two racks, use rack
positions A and C and stagger the pans so
that one is not directly above the othen
The HEATING light will come on and stay on
until the oven temperature reaches the pre-set
temperature. When the light goes off, foods
with recipes requiring a preheated oven
should be placed in the oven.
NOTE: This light will CYCII_ on and off during
the remainder tithe cooking process.

cooking
When using the convection oven, a Pan circulates
hot air over, under and around the food.
This circulating hot air is evenly distributed
throughout the oven cavity. As a result" foods are
evenly cooked and bro,maed--often in less time
with convection heat.
NOTE: 77w convection fio_ will cycle on and off while
cooking to best distribute hot air in the oven.

q_wd. DO NOT leave the door open Jbr long period_ oJ
time while using convection cooking or you may shorten
the li,fi_ oJ the convection heating" element.
Before using your convection oven, check to see
if your cookware leaves room fbr air circulation in
the oven. If you are baking with several pans,
leave space between them. _Mso,be sure the pans
do not touch each other or the walls of the oven.
Paper and Plastic
Heat-resistant paper and plastic containers that
are recommended for use in regular ovens can be
used in convection ovens. Plastic cookware that is
heat-resistant to temperatures of 400°F can also
be used.
r
Metal and Glass
Any type of cookware will work in your convection
oven. Howevel; metal pans heat the fastest and
are recommended for convection baking.
Shiny (non<lark) pans are recommended fbr
best results.
Glass or ceramic pans cook more slowly.
When baking cookies, you will get the best
results if you use a flat. shiny (non<lark) cookie
sheet instead of a pan with low sides.
For recipes like oven-baked chicken, use a pan
with low sides. Hot air cannot circulate well
around fbod in a pan with high sides. 13

tips
Using the roasting rack proxdded, heated air will
be circulated ovm; tinder and around the fbod
being roasted. The heated air seals in jttices
quickly for a moist and tender interior while, at
the same time, creating a rich golden bro,ma
exterior.
When you are convection roasting, it is important
that you use the broiler pan and grid and the
special roasting rack. The pan is used to catch
grease spills and the grid is used m prevent
grease spattel.'s, while the roasting rack allo,a_ the
heated air to circulate tinder the meat and
increase browning on the tmderside of the meat
or poult_y.
• Place the grid on the broiler pan and put the
roasting rack over them, making sure the posts
on the roasting rack fit into the holes in the
broiler pan.
• Place meat on the roasting rack.
• When convection roasting large cuts of meat,
place the pan on either the Convection Floor

7b clean
the door
Inside of the door:
• Because the area inside the gasket is cleaned
during the self-clean cycle, you do not need to
clean this by hand. Any soap left on the liner
causes additional stains when the oven is
heated so be sure to rinse thoroughly.
• The area outside the gasket can be cleaned
with a soap-filled scouring pad.
• Do not rub or dean the door gasket--
the fiberglass material of the gasket has an
extremely low resistance to abrasion. An intact
and well-fitting oven door gasket is essential
for energy-efficient oven operation and good
baking results. If you notice the gasket
becoming worn, fi'ayed or damaged in any
way or if it has become displaced on the oven,
you should have it replaced.
Outside of the door:
Painted Surfaces (on some models)
Clean these with soap and water or a vinegar
and water solution.
Do not use commercial oven cleaners, cleaning
powders, steel wool or harsh abrasives on any
painted surface.
Stainless Steel Surfaces (on some models)
Do not use a steebwool pad; it will scratch
the surface.
To clean tile stainless steel surface, use CEI,_MVIA
