Theuseofyoursolid element cooktopisquitesimilartothatof anelectriccoil cooktop,with whichyouprobablyarefamiliar. Withbothtypesyouwillenjoythe cleanlinessofelectricityandthe benefitsof retainedheatinthe elements.However,thereare differences.

Insurfice cooking,theuseof cookwareextendingmorethan
l-inchbeyondedgeofcooking element’strimringisnot recommended.However,when canningwithwater-bathor pressurecanner,larger-diameter cookwaremaybeused.Thisis becauseboilingwatertemperatures (evenunderpressure)arenot harmfidtocooktopsurfaces surroundingthecookingelement.
HOWEVER, DONCYI’USE LARGEDIAMETERCANNERS OR01’HERLARGEDIAMETER UTENSILS FORFRYINGOR BOILINGFOODSCYI’HER THANWATER.Mostsyrupor saucemixtures—andalltypesof frying-cook attemperaturesmuch higherthanboilingwater.Such temperaturescouldeventually harmcooktopsurfacessurrounding heatingunits.

2. Flat-bottomedtamers mustbe used.Donotusecannerswith flangedor rippledbottoms(ofien foundinenamelware)becausethey
