Covering. In bothconventionaland microwavecooking, covers
hold in moisture and speed heating. Conventionally, partial coveringallows excess steam to escape. Ventingplastic wrap or coveringwith waxpaper serves the same purposewhen microwaving.
Arrangingonoven Shelf.In conventionalbaking,youposition
foods, such as tomatoes or potatoes, so that hot air can flow around them. When microwaving, you arrange foods in a ring, so that all sides are exposed to microwaveenergy.
Wirring.in range-top cooking, youstir foods up from the bottom
to help them heat evenly. When microwavingyoustir cooked portions from the outside to the center. Foods which require
~onstantstirring conventionally will need only occasional stirring. Ihrning Over. In range-top cookingyou turn overfoods such as
hamburgers, so bothsides can directly contact hotpan. When microwaving, turning is often needed when cookingfoods such as frozen hamburgers,
StandingTime. In conventionalcooking, foodssuch as roasts or
cakes are allowed to standto finish cooking or set. Standingtime is especially important in microwavecooking. A microwavedcake is notplaced on a cooling rack.
Shielding. In a conventionalovenyou shield chicken breasts or
bakedfoods to prevent overbrowning. When microwaving, you mayuse small strips of foil to shield thin parts, such as the tips of wingsand legs on poultry, which wouldcook before larger parts.
Pierce FoodstoReleasePressure.Steam builds up pressure in
foodswhich are tightly covered bya skin or membrane. Pierce potatoes (as youdo conventionally), eggyolksand chicken livers to prevent bursting.
Rotating.Occasionally, repositioning a dish in the oven helps
foodco~k evenly. Torotate-half a turn, turn the dish until the side which was to the back of the oven is to the front. Torotate a quarter turn, turn the dish until the side which was to the back of the oven isto the side.
