Congratulations on the purchase of your new G.A. Systems Mobile Rethermalization Cabinet. G.A. Systems would like to thank you for choosing us as your trusted manufacturer.
I. START UP AND INSTALLATION
The “Speedee-Serv” Rethermalization Cabinet is equipped with a 6’0” cord with Nema 6-50P Plug, which requires a Nema 6-50R Recepticle. Cabinet requires a 240/208 volt 50 amp circuit.
1. Load Settings
The controller is preset by the factory to allow for four different heating cycles. The preset cycles are known as load settings. The load settings are:
Load 1 preheat to 250 degrees and cook for 15 minutes. For small quantities and items such as breakfast pastries Load 2 preheat to 250 degrees and cook for 30 minutes. For small to medium quantities and items such as sandwiches Load 3 preheat to 250 degrees and cook for 45 minutes. For medium to large quantities and items such as pizza Load 4 preheat to 250 degrees and cook for 1 hour. For large quantities and items such as burritos
2. Preheat Before turning the cabinet on be sure that the food rack is NOT in the cabinet! Make sure the bottom pan is covering the bottom opening!
Do NOT OPEN THE DOORS during the heating cycle. Opening the doors during the heat cycle will cause heat loss and result in improper food temperatures.
A) To operate the cabinet, turn the red on/off switch to the on position. The controller will now display OFF. By pressing the load/ select button the controller will now display LOAD.

A) With each continued press of the load/select button the display will change until you see your desired load cycle. When the desired load cycle is displayed press the start/stop button to begin the preheat cycle. The cabinet will automatically go into a preheat cycle for approximately 15 minutes. B) At the end of the preheat cycle an alarm will sound for five seconds. The cabinet will now go into a ready cycle until you load your cart of food into the cabinet.
3. Loading Cart
When loading the cart into the cabinet make sure the wheels are turned in to not block the door from closing.
A) After your cart has been loaded into the cabinet press the start/stop button to begin the rethermalization process. At this time the cabinet will begin to count down from the preset setting to zero. When the timer reaches zero the alarm will again sound for five seconds to alert you the process is complete. At this time the control will start a holding cycle at 150 degrees and the timer will begin to count up again to display the amount of time the food has been in the holding setting.
B) The cabinet can either be used to hold food at 150 degrees or you can remove the cart and begin another cycle by pressing the reload button and the cabinet will begin the last cycle setting all over again skipping the preheat cycle. If you desire another load cycle the on/off button must be turned off and then back on to select another load. For this refer to step 2 Preheat.
