3.1 The Shape Mi xer is a versat ile shape blender m ixer, mainly used for mashed potatoes and other vegetables, stir cake, paste or ice tilting and so on. It can also be used in industry to mix some of the material, ruband mix all kinds of ingredients and ice shaped objects. For most operations, usually in the beginning i grade (low) and usually end in the mixing ⅱgrade (medium speed).
3.2 T he Ball Mixer is a one for mixing the air as well as food material in the light mixer. Its uses include: jitter cheese, egg, stirring very light ice bar, and other similar applications. using the Ball Mixer, usually Gradeⅱ(medium speed) and Grade ⅲ (high speed) .
3.3 Hook-Shaped stirrer is used to stack the food blender kneading and
stretching. Used for bread and pizza on the material for mixing, stirring to get the best results.
These mixers are also suitable for use on a variety of yeast dough mixing
operation. These mixers should be used with Grade i (low).

XII, Food Material and Mixing Method
If you use the mixer to stir the food, first you need to prepare food materials in your own way. Then stir.
When stirring the food material in the process, you will find no matter what method of operation, what you have to do is repeated operations, which is the only way to improve the stirring effect of food. But do not over stir, which may adversely affect the texture of food.
After assessing the texture, uniformity, light quality and the laminated degree of the finished products, you will find the Fude mixers save a lot of time.
Even for those generally require manual mixing and fine food, you can also get in the mixer for mixing operation blessing.
Fu mixer gets the most efficient and fast way to stir the food material.
Fu is used to stir material while the operators do not need to have high requirements. If you want to get the desired effect of stirring, just need to be careful to set the operation time and adjust the stirring speed.
Fude mixer can be a long time to create uniform mixing effect.
XIII Capacity of the Mixer
After you complete the preparation of food material, consideration shall be given to the mixer into the mixing bucket when the amount of material, Mixer presented in this article "capacit y tabl e", can provide you with guidance. The "capacity table" values listed, considering the barrel for mixing different sizes to accommodate the amount of food materials and a variety of factors.
The capacity values listed in the table can be used for the proposed maximum amount of material inputs.Whenever the material inputs is more than 25kg, mixing bucket truck should be used.
Mixer capacity table used to determine the amount of material is shown below

Given in the table, the percentage of various ingredients are flour content of 100, which is based on a given inputs for different materials, which helps simplify the mapping used. The calc ulation of the amount of various materials can also simplify the calculation of water absorption.
The flour used is strong wheat flour with whitening nutrition. The protein content is 11%~12%, AR 12%. If the moisture content of flour used is less than 12%, it will reduce the flour water absorption, So that the right, gluten hydration becomes more difficult and will increase the mixer's work load. If using flour containing high-quality protein, such as high gluten flour, dough will make it difficult to stir action. If you are using high-gluten flour, you need to mixer capacity values given in the table on the basis of the material decreases by 10%, in order to prevent mixer overload phenomenon.
In the preparatio n of foo d materi als, t he temp erature of t he water used should be 65 ~ 75 ℉ (18 ~ 24 ℃). If the water temperature is too low, you may make the dough hardens, making it difficult for them to stir. If you are ready to use cold water and the surface, the material inputs should be reduced by15%~20%.
Also in the mixer-capacity table that water absorption (ar) is also worthy of consideration and attention. Absorption refers to the weight of the water and the percentage of flour weight, the value is expressed in percentage.
AR = weight of water weight ÷ flour× 100%
Water absorption is the relative "weight" or "moisture" in the food.
In fact, according to the following list of food materials and the capacit y values obtained (see table mix er capacity), it is based on water absorption and the following table:
Food Material
AR
Dough for Making Heavy Bread 55% Dough for Making Medium-W
eight
bread
60%
Page 15

Dough for Making Light Bread
65%
Dough for Thin Pizzas 40% Dough for Medium-Thick Pizzas 50% Dough for Thick Pizzas 60% Dough for Extruded Bread 65%
Large Pieces of Dough
70%
In the above material to stir the food, if the use of food materials, water absorption is lower than the value given in the table, it should be a corresponding reduction in the use of materials, which can ensure the efficient mixing of food materials, also eliminate the possibility of occurrence of work overload.
For example: Accord ing to this paper in a blend er "capacity table", if th e water absorption is 40%, when the first stirring speed for the production of thin pizza dough mixing time, MA 60 mixer can be used as the maximum capacity of 40 pounds of food. If you are using the water absorption of food materials for30%, then to a corresponding reduction in volume of food materials, To water absorption due to differences caused by different compensation. Reduce the amount of material calculated as follows:
1. Divides the wate r absorption capacity (AR) listed in the table with a mixerwith the actual mixing of the water absorption of food materials.
The actual absorption 30% Rated water absorption 40% =75%
2. Rated material inputs will be multiplied by the
percentage 1 obtained. The result s obtained can be us ed
is the use of h600 mixer largest inputs of materials
(when the dough water absorption is 30%).
40 pounds nominal inputs of
materials×75% = 30 pounds of the maximum amount of material (when the dough water absorption is 30% )
Another factor often easily overlooked is that the working ablity of mixers at di ffer en t speeds. In order to prevent overwork of mixers, the recommending stirring speed should be adopted. As used in the production of thin pizza dough water absorption is40%, therefore, according to the viscosity of the dough, mixing speed is recommended by the first stirring, maximum mixing for 5 minutes. If you use MA20 mixer, then when the water absorption of food material is 50% or less, The first stirring speed must be used for mixing speed, mixing time, temperature and materials in the workplace dough temperature will affect the temperature. In order to achieve the desired final temperature of the dough, you need to adjust the temperature. For mixer capacity not given in the table and for the production of other types of bread dough material usage, please refer to the c apacity tables in th e mixer has been given, with the same water absorption, used to make bread dough material usage.
