SAFETY
When using electrical appliances, basic safety precautions should always be followed, including the following:
1. Keep the working around surrounding the machine clean and organized.
2. Consider environmental conditions surrounding the machine. Do not use the machine in humid, wet or poorly lit environments. Do not use the machine close to flammable liquids or gas.
3. Keep machine away from children and non-authorized personnel. Do not permit them to go near the machine or its working area.
4. Do not touch the switch or cable with wet hands.
5. Only utilize the machine with the correct voltage to achieve optimum results.
6. Do not wear low-hanging clothing or items that may get caught in the machine. Wear non-slip shoes while working with the machine. For hygiene and safety, keep hair tied back and wear protective gloves.
7. Do not tug on the cable to remove the plug from the outlet. Do not leave the cable near sharp objects, water or solvents.
8. Remove the plug when the machine is not in use, you are cleaning the machine or need to move the machine.
9. Check that the machine is not damaged prior to each use. Carefully check that all safety devices are working, that the removable parts are not blocked, there are no parts damaged, that all the parts have been set up correctly and that all conditions that could influence the regular function of the machine are in working order.
10. If the machine is damaged or there are issues during its use, turn off the machine immediately and contact the manufacturer for assistance or repair. Repairs should only be made by qualified technicians, using the correct manufacturer parts. Non-compliance with these rules may void the warranty.

SETUP
1. Remove the protective film, being careful to avoid contacting the machine with any material that may damage the surfaces. Check that the machine is not damaged. Please contact the manufacturer immediately if the machine is damaged.
2. The machine must be installed in a dry space with adequate ventilation and lighting. Position the machine on a flat and firm surface. Be sure to leave a space of at least 150 mm around the entire machine for easier use and cleaning.
3. Have a licensed electrical technician connect the machine to the power source. We suggest using copper wires (at least 2.5mm in diameter). It is extremely important to have a good grounding system and a protective switch (5-10A).
4. Check the cable carefully and verify there is no damage before the plug is put into the receptacle. The receptacle must be easily accessible and not require any sort of movement to be accessed. The cable from the machine to the receptacle must not be pulled too tightly and the machine should not be resting on the cable.
NOTE: Make sure the machine has been installed and tested by a licensed technician before its arrival. It should not be assembled or modified in any way without the express permission of the manufacturer or the warranty will be void.

OPERATION
WARNING: MOVING PARTS CAN CRUSH & CUT
Keep hands, feet and all objects away from the rollers prior to turning on the machine!
FUNCTIONAL TEST
1. Press the GREEN button to turn the machine on.
2. Let the machine run for one (1) minute, inspect that everything is functioning properly.
3. Press the RED button to turn the machine off.
4. Run this test and check that the machine is clean (particularly surfaces that touch the dough) before every work cycle.
SHAPING DOUGH
1. After turning on the machine, place a small amount of dough that has been left to rise previously (for at least 4-6 hours) into the machine. Squash the sides slightly and add some dry flour to allow the dough to move easily through the machine’s upper rollers.
2. When the dough moves through the upper rollers, it will be thin and have an oval shape. You can quickly turn the dough 90 degrees by hand and move it back through the lower rollers. Once the dough emerges a second time, it will have a disc shape. The shape will not be completely perfect and will still need some shaping by hand. (See picture 2)
3. To shape a square or rectangular dough sheet, follow the same steps as above. Then, cut the dough to the approximate shape desired.
4. Afterwards, reintroduce the dough back through the small dough opening in the cover and let it move through the rollers.

REGULATING DOUGH THICKNESS
The machine comes with a standard setting of medium thickness. The machine can be adjusted to create dough sheets with varying weights, thicknesses and sizes.
1. Turn off the machine before making any adjustments.
2. Regulate the width between the highest rollers. Pull the black knot up in order to release the lever, and then turn the lever. Clockwise will reduce the thickness while counter-clockwise will increase the thickness.

MAINTENANCE
REGULAR CLEANING
• Before performing any sort of maintenance on the machine, first remove the plug from the outlet.
• Do not use any chemical, abrasive or corrosive products as they could damage the machine.
• Cleaning should be performed after each use, following all of the following steps to prevent malfunctioning of the machine.
1. Using a proper brush and a wooden palate, first clean any flour residue and dough off the machine.
2. To open the machine for cleaning, first remove the covers and the two slides (A). Release the springs (B and C) and remove the scraping dough pieces (D). Then, turn the regulating levers to open up the rollers as much as possible (L-L1).
3. Carefully clean the machine and its parts using a sponge or damp cloth with water and detergent.
4. Rinse thoroughly and dry with an absorbent wipe. Wipe down all of the surfaces that come into contact with the dough and then clean the entire machine with a smooth cloth and a foodservice-safe disinfectant.
5. Reassemble everything in this order: first the scraping dough pieces, then the springs, then the slides and last the protective covers.

MAINTENANCE
LUBRICATING SHAFTS & ROLLERS
• It is necessary to grease shafts and rollers annually.
1. Take off the protective covers, the slanted wall, the springs and the dough scrapers.
2. Unscrew the fixing screws and take off the back panel first (A) followed by the stands (B and C).
3. Take off the rollers (D, E, F, and G) and then joints (H, I, L and M).
4. Clean all the machine parts carefully using a damp sponge or cloth.
5. Reassemble everything in this order: first the joints and rollers, then the stands and back panel, then the dough scrapers, spring, slanted wall, and lastly the protective covers.

LIMITED WARRANTY
All equipment, which is sold under Estella trademark and used for commercial purpose is warranted against defects in materials and workmanship. The warranty runs for six months from the date of purchase and is for the benefit of the original purchaser only. All other Warranties, Expressed or Implied, Statutory or Otherwise, including Without Limitation any implied Warranty of Merchantability or Fitness for Purposes are excluded. The Seller shall in no event be liable for direct, indirect, or consequential damages in connection with Estella commercial products.
This warranty is not effective if damage occurs because of accident, carelessness, improper installation, lack of proper set–up, supervision when required, or if the equipment is installed or operated in any manner contrary to the installation and operating instructions. Work performed by unauthorized personnel or unauthorized service agencies voids this Warranty.
This warranty does not apply to, and Estella is not responsible for, any warranty claims made on products sold or used outside of the United States. Residential use voids the warranty.
