A nameplate fixed to the appliance specifies the serial number, model number, number of phase,
amperage, voltage and frequency.
Drawings, electrical diagram and replacement part numbers are included in this manual.

by personnel who is not certified by known organizations. The customer is
responsible for finding qualified technicians in electricity and plumbing for the
installation of the appliance.

For your safety, this equipment is verified by qualified technicians and carefully crated before
shipment. The freight company assumes full responsibility concerning the delivery in good condition
of the equipment in accepting to transport it.
IMPORTANT
RECEPTION OF THE MERCHANDISE
Take care to verify that the received equipment is not damaged before signing the delivery receipt. If
a damage or a lost part is noticed, write it clearly on the receipt. If it is noticed after carrier left,
contact immediately the freight company in order that they do their inspection.
We do not assume the responsibility for damages or losses that may occur during transportation.

INSTALLATION AND SERVICE
Installation and service must be done by specialized technicians. Contact a certified electrician for
set up a proper electric outlet.
The appliance must be connected to the utility and electrically grounded in conformity to the
effective local regulations. If these are not established, the oven must be connected according to the
Canadian Electrical Code (CSA-C22.1- XX) or National Electrical Code (NFPA 70-XX). Refer
to last edition year for XX.

INSTALLATION
IN GENERAL
Take off the packaging material with care. Take off all the material used for packing and
accessories.
Each unit is set up to be used with the electrical supply specified on the nameplate fixed on the front
of the unit.
1. To the electrician
Electrical supply installation must be in accordance with the electrical rating on the nameplate.
2. For proofer model only.
This proofer is manual water fill only.
Warning
USE DISTILLED WATER ONLY.
Never let the element run without water, it can be damaged.
Cleaning the water pan in the proofer periodically can prevent mineral problems.
3. To the plumber
This equipment is to be installed to comply with the applicable federal, state or local plumbing codes.
Connect the steam system (1/4 NPT) to the cold water distribution network. We highly
recommend a water softener to eliminate minerals in the water. We suggest to use CUNO #
CFS6135 (Doyon part number PLF240).

DP7, DP18 : Proofer only not isolated 50°F TO 110°F manually water fill.
DWI7, DWI18 :Isolated warmer 50°F TO 250°F
DPWI7, DPWI18 :Isolated proofer Warmer 50°F TO 250°F manually water fill.
DP7D, DP18D : Proofer only not isolated for donuts 50°F TO 110°F manually water fill.

O P E R A T I O N
1. For the proofer, fill the water pan with distilled water. The water pan capacity : 2 litter, (½ us
gallon)
2. Switch "ON" the main switch. The switch should illuminate.
3. Set the thermostat control at 100o F for proofer.
Set the thermostat control at 175o F for warmer.
4. Set the humidity control at 6. (it takes approximately 15-20 minutes for preheat).
If there is too much fog and water drips from the glass doors, adjust humidity control to a lower
number.
5. When the temperature is stabilised, put the products in the cabinet.
(Leave them inside until they are ready to bake.)
6. When proofing cycle is completed, turn the switch "OFF".
When the proofer is not in operation, open the doors to let out the humidity and then prevent mold.
IMPORTANT
USE DISTILLED WATER ONLY.

POWER FAILURE
When the power comes back, the appliance will start automatically. Then it is recommended to turn
off the appliance to avoid it starting without supervision.

Always cut off the main power before replacing any parts.
Control parts on the front:
To remove parts from front panels, you have to
go on the top of the unit.

The unit does not turn on when installed.
The blower runs but the unit does not

Check if the main switch is on and illuminated.
Check the breaker of the building.
Check the electric cable of the unit.
Make sure that the thermostat is adjusted to the
desired temperature (over ambient temperature)
and the pilot light will go on.
Check the heating element and its connection.
Check if the water pan is full of water.
Adjust the humidity control at HI, the pilot light
of the humidity control should came on and the
water element should run at full capacity.
Check if the immersion element connection is
OK.
Clean the water pan and the immersion
element.

MAINTENANCE AND CLEANING
1. Clean the inside of the appliance with water and soap every week.
2. Clean the door with a good glass cleaner.
3. To prevent problem caused by accumulation of lime and mineral, clean the water pan every
week.
A. Cut the power of the appliance.
B. Take out and disconnect the water pan.
C. Clean the water pan (see picture).
D. Reconnect the element and put the water pan in place.
