callingforpartsorservice.
Thismanualcoversstandardunitsonly.Ifyouhavea
customunit,consultthecustomerservicedepartmentatthe
numberlistedbelow.
RECEIVINGANDINSPECTINGTHEEQUIPMENT
Eventhoughmostequipmentisshippedcrated,careshould
betakenduringunloadingsotheequipmentisnotdamaged
whilebeingmovedintothebuilding.
1.Visuallyinspecttheexteriorofthepackageandskidor
container.Anydamageshouldbenotedandreported
tothedeliveringcarrierimmediately.
2.Ifdamaged,openandinspectthecontentswiththe
carrier.
3.Intheeventthattheexteriorisnotdamaged,yetupon
opening,thereisconcealeddamagetotheequipment
notifythecarrier.Notificationshouldbemadeverbally
aswellasinwrittenform.
4.Requestaninspectionbytheshippingcompanyofthe
damagedequipment.Thisshouldbedonewithin10
daysfromreceiptoftheequipment.
5.Checkthelowerportionoftheunittobesurelegsor
castersarenotbent.
6.Alsoopenthecompressorcompartmenthousingand
visuallyinspecttherefrigerationpackage.Besurelines
aresecureandbaseisstillintact.
7.Freightcarrierscansupplythenecessarydamageforms
uponrequest.
8.Retainallcratingmaterialuntilaninspectionhasbeen
madeorwaived.
UncratingtheEquipment
Firstcutandremovethebandingfromaroundthecrate.
Removethefrontofthecratematerial,useofsometoolswill
berequired.Iftheunitisonlegsremovethetopofthecrate
aswellandlifttheunitofftheskid.Iftheunitisoncasters
itcanbe"rolled"offtheskid.
TheunitswithLiquiTectechnologycoldpanscon-
tainanon-toxiceutecticfluidwithinasealedinner
liner.Thisfluidmayleakifthetankispunctured
socaremustbetakenwhenuncratingandsetting
inplace.Theeutecticfluidisnon-toxicandmaybe
flusheddownadisposaldrain.IftheLiquiTecunit
coldpansleak,immediatelycalltheDelfieldservice
departmentdirectlyat1-800-733-8821notyour
localserviceagent.

Location
Donotinstalltheunitnearcombustibleobjectsorsurfaces
affectedbyheatormoisture.
Leveling
Theunitmustbelevel,bothfrontandbackandleftto
right,inordertomaintainanequalwaterdepththrough-
outthewells.
OPERATION:HEATEDUNITS
Afterplugginginthepowersupplycord,selectdesired
temperaturebyrotatingtheknobonthetemperaturecontrol
panel.Indicatorlightwillcomeonwhentheswitchis
activated.Individualtemperaturecontrolknobsandindicator
lightsareprovidedforeachheatedfoodwell.
Ifthesametemperaturesettingsforeachwellareused
everyday,thetemperatureknobscanbeleftintheirset
positionandthewellscanbeturnedoffusingtheON/OFF
switchattheendofthecontrolpanel.
Beforetheunitisusedthefirsttimeforserving,turnthe
temperatureknobto“10”andheatthewellfor15minutes.
Donotbealarmedifsmokeappears;thispreheatshould
burnoffanyresidueordustthathasadheredtothefoodwell
element.
Whenservingthicksaucesalwaysusethehotfoodwellin
“wet”operation.Thisprovidesmoreuniformtemperaturefor
thesauce.Producttemperatureshouldrangefrom140˚Fto
160˚F
Neverplacefooddirectlyinwell.Alwaysuse
pans.
Formostefficientoperation,keepcoveredinsets
emptyineachwellduringpreheatingandwhenthewellisnot
inuse.
Alwaysplacecoversonpanswhennotservingtoprevent
foodfromdryingoutandtoreduceyouroperatingcosts.
Wetoperation
Fillthefoodwellwithabouttwoinchesofwaterandcover
withlidoremptypan.Topreheatwater,settemperature
ElectricalConnections
Connectionsmustbemadeinaccordancewith
allapplicablelocalcodesand/ortheNational
ElectricalCode.Refertotheamperagedataon
page3andthewiringdiagramsonpages8and9.
Astandardunitisprovidedwithapowercordand
3-pronggroundedplug.Allunitsshouldbeplugged
intoagroundedreceptaclewithitsowncircuitpro-
tectionthatmatchestheamperageoftheplug.

Dryoperation
Wetoperationisusuallymuchmoreefficientandisusually
preferred.However,theseunitsmaybeoperatedwithout
waterwithnodamagetotheunit.
Thedrywellshouldneverbepreheatedlonger
than15minutes.Only6”deeppansshouldbe
usedwithdryfoodwells.
Whenoperateddry,thewellbottomsbecomevery
hot.Donotallowunprotectedskintocontactany
wellsurface.
Whenoperateddry,thebottomofthewellwill
discolor.Toclean,useastainlesssteelcleanerormild
abrasive.
Operationofoptionalheatedunderstorage
Ifnecessary,preheattheheatedunderstoragetodesired
temperature.Temperaturerangeofunderstorageis100°F
to300°F.Thetemperaturecontrolknobisalwaysthefarleft
knobonthepanel.Indicatorlightisalsoatthefarleft.

Location
Besurethelocationchosenhasafloorstrongenoughto
supportthetotalweightofthecabinetandcontents.Reinforce
thefloorasnecessarytoprovideformaximumloading.
Forthemostefficientrefrigeration,besuretoprovidegood
aircirculationinsideandout.
Insidecabinet:Donotpackunitsofullthataircannot
circulate.Takecarenottoblockairflowtothefansand
allowspacealongthesides.
Outsidecabinet:Besuretheunithasaccesstoampleair;
avoidhotcornersandlocationsnearstovesandovens.It
issuggestedtherearoftheunitbenolessthantwoinches
fromanywall,partitionoranyotherobjectwhichwill
restrictexhaustairflow.
Leveling
Alevelcabinetlooksbetterandwillperformbetterbecause
thedoorswilllineupwiththedoorframesproperly,andthe
cabinetwillnotbesubjecttounnecessarystrain.
Stabilizing
Somemodelsaresuppliedoncastersforyourconvenience,
foreaseofcleaningunderneathandmobility.
Theunitmustbeinstalledinastablecondition
withthefrontwheelslocked,lockingthefront
castersafterinstallationistheowner’sand
operator’sresponsibility.
Plumbing
Refrigeratedunitshaveadrainthatexitstheunitonthe
bottom,andislocatedontheoperator’sleftside.Standard
unitsoncastersorlegswillhaveabronzefaucetthatfitsa
standardgardenhose.Unitsonlegswithoptionalremotedrain
valvehandlewillhave1”threadedpipeextendingfrombottom
ofunit.Onstandardunits,astainlesssteelaccesspanelor
hingedlouverwillbeprovidedforaccesstodrainconnections.
Moisturecollectingfromimproperdrainage
cancreateaslipperysurfaceonthefloorand
ahazardtoemployees.Itistheowner’sand
operator’sresponsibilitytoprovideacontaineror
outletfordrainage.
Electricalconnection
Astandardrefrigeratedunitisprovidedwithapowercord
and3-pronggroundedplug.
Theunitshouldbepluggedintoareceptaclewithitsown
circuitprotectionthatmatchestheamperageoftheplug.
Refertotheamperagedataonpage3orthe
serialtagdataandyourlocalcodeortheNational
ElectricalCodetobesuretheunitisconnected
totheproperpowersource.Aprotectedcircuit
ofthecorrectvoltageandamperagemustberun
forconnectionofthesupplycordorpermanent
connectiontotheunit.
Oncord-connectedunits,anON/OFFswitchis
locateddirectlyonthefaceofthecompressor
section.TheswitchmustbeturnedtoitsOFFpositionand
powersupplydisconnectedwheneverdoingthefollowing:
1.Performingmaintenancefunctions.
2.Cleaningtherefrigeratedcabinetarea.
3.Performingserviceorrepairfunctions.
Undernocircumstancesshouldtheunitbeoperated
withoutthelouveredpanelinplace.
OPERATIONLIQUITECUNITS
LiquiTecSeriescoldpansareadjustedatthefactorytoprovide
satisfactoryoperationwithoutanyfurtheradjustments.
However,ifitisnecessarytoadjustthetemperature,the
controlislocatedinthemachinecompartment.Turntheknob
clockwiseasindicatedonthecontrol.Settingsarefrom1
through7;7beingthecoldest.Adjustmentsshouldbemade
gradually.Severalsmalladjustmentswillbemoreeffective
thanonelargeadjustment.Itmaytakeanhourorlongerto
realizethetemperaturechangedependingontheapplication
andlocationoftheunit.
Theseunitsarenotdesignedtocoolwarmfoodproducts.
Itemsshouldbeplacedintheunitpre-cooledatleasttothe
desiredholdingtemperature,ifnotslightlycolder.Insome
applications,agradualwarmingofproductmayoccur,particu-

larlyattheexposedtopoftheproducts.Stirringorrotationof
theproductmaybenecessarytomaintainoveralltemperature.
Warmingoffoodproductcanoccurveryquicklyoutsideof
theunit.Whenloadingorrotatingtheproduct,avoidleaving
fooditemsinanon-refrigeratedlocationforanylengthoftime
topreventwarmingorspoilage.
Thetemperaturecontrolisusedtoturntheunitonandoffas
wellascontrolthetemperatureofthecoldpan.Thesettings
rangefrom1to7;7beingthecoldest.Toturnthecoldpan
off,turntheknobtotheoffposition.
Thecoldpanisnotintendedtobeusedwithice.
