BEFORE FIRST USE
Before using your Cuisinart® Flip Belgian Wafe Maker for the rst time, remove any dust from shipping by wiping the plates with a damp cloth.
Remove all packaging and any promotional labels or stickers from your wafe maker. Be sure that all parts (listed in Parts and Features) of your new wafe maker have been included before discarding any packing materials. You may want to keep the box and packing materials for storage.
NOTE: The wafe plates have been treated with a special nonstick coating. The rst time you use your wafe maker, it may have a slight odor and may smoke a bit. This is normal and common to appliances with a nonstick surface.
OPERATING INSTRUCTIONS
1. Place the Cuisinart® Flip Belgian Wafe Maker on a clean, at surface.
2. Plug the power cord into a standard electrical outlet.
3. To preheat your Cuisinart® Flip Belgian Wafe Maker, turn the control knob dial to your preferred setting. The Ready indicator light will light up when fully heated. (Heat-up time should take approximately four minutes for the rst wafe of each baking session.)
4. After wafe maker is preheated, brush the wafe plates with a avorless oil to thoroughly coat all surfaces. It’s important that you preheat the wafe maker before seasoning or oil. Your wafe maker is now ready to bake.
NOTE: The wafe plates have been treated with a special nonstick coating. The rst time you use your wafe maker, it may have a slight odor and may smoke a bit. This is normal and common to appliances with a nonstick surface.
5. After the wafe maker is preheated and ready for baking, open the wafe maker lid.
6. Fill the provided batter cup with batter. If using a standard measuring cup, ll to 1 cup. Pour the batter evenly across the wafe plate. Use a heatproof spatula to spread the batter evenly over the grids.
7. Close the lid and rotate the handle 180° to the right. The Ready indicator light will turn off. NOTE: Baking time is determined by the
browning setting chosen. It may take up to 3 minutes longer to bake your wafes on a higher setting.
8. When the wafe is baked, the Ready indicator light will turn on. Rotate the handle 180° to the left and open the lid. To remove the wafe, gently loosen the edges with a heatproof spatula. Never use stainless steel utensils, as they may damage the nonstick coating.
9. Repeat the above process if making additional wafes. It is not necessary to oil/grease the wafe grids before each new wafe.
When you are finished baking, always unplug the power cord from the wall outlet. Allow the waffle maker to cool down completely before handling.
The wafe plates have been treated with a special nonstick PFOA-free coating. Before the rst use, we suggest you season the grids with avorless vegetable oil. Apply oil with a paper towel or pastr y brush.
CLEANING AND MAINTENANCE
Once you have nished baking, remove plug from electrical outlet. Leave the top lid open and allow grids to cool before cleaning.
Never take your wafe maker apart for cleaning. Simply brush crumbs from grooves, and absorb any excess cooking oil by wiping with a dry cloth or paper towel. You may clean the grids by wiping with a damp cloth to prevent staining and sticking from batter or oil buildup.
Be certain grids have cooled completely before cleaning. If batter adheres to plates,
simply pour a little cooking oil onto the baked-on batter and let stand approximately 5 minutes. This will soften the batter for easy removal.
To clean exterior, wipe with a soft, dry cloth. Never use an abrasive cleanser or harsh pad.
NEVER IMMERSE CORD, PLUG OR UNIT IN WATER OR OTHER LIQUIDS.
Hand-wash drip tray.
Maintenance: Any other servicing should be performed by an authorized service representative.

TIPS AND HINTS
• Packaged wafe mixes found in most supermarkets may be used with this unit.
• For best results, we recommend lling the supplied measuring cup to the top so it will ll the wafe, unless suggested otherwise in recipes. Thinner batters may require a little less batter, and thicker batters may require a little more.
• For evenly lled wafes, pour the batter into the center of the lower plate and spread out evenly to the edges. The entire wafe plate should be lled.
• For added convenience while baking wafes, rest the measuring cup on the lip of the bowl containing the batter until the next baking cycle.
• We recommend turning the browning control dial to setting #3 when using wafe mixes and for the included recipes. If you prefer crisper, darker Belgian wafes, set the browning control higher. If you prefer lighter wafes, turn the browning control dial down.
• Belgian wafes taste best when made to order, but baked Belgian wafes may be kept warm in a 200˚F oven. Place them in a baking pan or wrap them in foil while in the oven. Wafes wrapped in foil may lose their crispness.
• Baked wafes may be frozen. Allow them to cool completely, and then place them in a plastic food storage bag. Use waxed paper to keep wafes separated. Reheat in an oven, toaster or toaster oven when ready to serve.

Liège Waffles
These decadent waffles taste like a cross between a waffle and a glazed doughnut, thanks to the use of Belgian pearl sugar. This sugar can
be found in some baking aisles of specialty
stores, or even some grocery stores, and it can
Makes 8 waffles

easily be purchased online.
105 F - 110 F
4 cups unbleached, all-purpose flour
1 teaspoon kosher salt
6 large eggs, room temperature
1½ teaspoons pure vanilla extract
1 pound (4 sticks) unsalted butter,
melted and cooled slightly, plus more for brushing
2 cups Belgian pearl sugar
1. In a small bowl, whisk the granulated sugar and yeast into the warm water and milk and let stand until foamy, about 5 to 10 minutes.
2. Put the flour and salt together in a large mixing bowl; whisk to combine (alternatively this entire process can be prepared using a stand mixer with the paddle attachment. Follow the same guidelines that follow). Make a well in the center of the bowl and add the yeast mixture. Using a hand mixer fitted with the beaters, mix on medium until shaggy, about 1 minute. Add the eggs one at a time, mixing for 20 seconds between each.
3. Combine the vanilla extract with the melted butter. While the mixer is running on low, gradually add the melted butter mixture until smooth (the batter will be thick and very sticky).
4. Cover the bowl with plastic wrap and allow to rise in a warm place until doubled in size, about 1 hour to 2 hours (batter can be prepared to this point and then refrigerated overnight. Bring to room temperature before continuing with step 5).
5. After the batter has rested, stir in the pearl sugar. Cover again and let rest for 15 minutes before cooking.
6. Gently stir the batter to deflate. Preheat the waffle maker to a medium-high setting.
7. Scoop a cup onto the center of the bottom
waffle plate and spread to about 1-inch from the edge of the plate. Close the waffle maker and turn clockwise to flip. When the waffle is ready, carefully open the waffle maker and remove baked waffle. Repeat with remaining batter. For best results, serve immediately.

that maple sugar imparted the best maple flavor.
It can be found in most baking aisles of gro-
cery stores, and is available online. If it cannot
be found, a combination of light brown sugar

can be substituted, but the maple flavor will be

and berries.
The matcha flavor in these waffles is subtle,
yet a welcome addition. You can use either the
sweetened variety, usually reserved for lattes or
desserts, or the pure green matcha powder. Both
work very well.
Makes 6 waffles
2½ cups unbleached, all-purpose flour
3 tablespoons yellow cornmeal
¼ cup granulated sugar
½ teaspoon baking soda
¾ teaspoon kosher salt
2½ cups buttermilk
¼ cup matcha powder (sweetened or not)
1 teaspoon pure vanilla extract
3 large eggs
¾ cup vegetable oil
1. Combine the first five ingredients in a large mixing bowl; whisk until well blended. In either a large measuring cup or separate mixing bowl, combine the buttermilk, matcha, and vanilla extract and slowly whisk until it is completely smooth (you want to be sure there are no lumps of the matcha). Once that is blended, whisk in the eggs and oil.

whisk until almost smooth (some lumps are OK).

French Toast Waffles
Spicy Cornmeal Waffles
A fun twist on French toast. We recommend a
lower setting for these “waffles,” so not to dry out
the bread while cooking.
Makes 8 waffles
6 large eggs
1½ cups milk (any variety, nondairy OK)
1 tablespoon pure vanilla extract
2 tablespoons pure maple syrup
1 teaspoon ground cinnamon
1–2 pinches ground nutmeg
1–2 pinches kosher salt
8 slices soft bread, preferably
challah or brioche
1. In a large mixing bowl, combine all of the ingredients, except for the bread, and whisk well.
2. Pour the batter into a shallow bowl or a 13x9-inch baking pan. Dip the bread in the batter and allow to soak on both sides for a few minutes ( just add as much bread as fits in one layer).
3. Preheat the waffle maker to Setting 2 or 3.
4. Place one piece of the soaked bread on the waffle plate. Slowly close the waffle maker and turn clockwise to flip. While French toast is baking, add more bread to soak in the batter.
5. When the waffle is ready, carefully open the waffle maker and remove baked waffle. Repeat with remaining soaked bread. For best results, serve immediately.

4. While the oil is heating, remove chicken from buttermilk mixture, and lightly coat each chicken piece evenly with the flour mixture, tapping away any excess.
5. Fry chicken in batches, about 3 minutes per side. Internal temperature of chicken should register 170°F. Transfer to prepared cooling rack.
6. To serve, quarter each waffle and serve 2 quarters with one piece of fried chicken and maple syrup on the side.
*If you do not have a deep fryer, the chicken can easily be fried on the stovetop. In a large sauté pan, add about 1 inch of oil and set the pan over medium-high heat. Using a deep-fat thermometer, bring oil to 375°F. Fry the chicken in batches, about 2 pieces at a time. You do not want to crowd the pot or the oil will cool down too much and not fry well. Fry, flipping once, until chicken is nicely browned, about 4 minutes per batch. Chicken should have an internal temperature of 170°F. Transfer chicken to the prepared cooling rack.

Turn leftover, or fresh waffles into a breakfast sandwich. Using two quarters of a waffle, top one quarter with a desired filling, such as a fried egg and cheese, ham and cheese, peanut butter and banana, or even just some berry jam.
