Induction Cooking Without a Pan!
Sear Like Never Before
CookTek’s line of induction planchas offer unparalleled initial heat-up speed and thermal consistency. Recovery times are fast, while two zones can be maintained at different, constant temperatures. The available heating surface extends almost edge to edge in either direction.
From room temperature, the surface reaches 525°F (270°C) in just over ten minutes. Once the desired settings have been reached, the cooking surface temperature is maintained. The power and responsiveness of induction means that the addition of several pounds (kilos) of cold protein causes minimal deflection in the cooking surface temperature. The absence of a temperature drop and rapid recovery negates having to have a higher idle temperature, saving energy and reducing heat wasted to the kitchen.
High power (2 x 7kW) induction coils extend out to almost the very edge of the cooking surface, and come together in the center where the two zones meet. They generate a high frequency electromagnetic wave that travels through the entire thickness of the top, heating it instantly and uniformly. Any temperature loss (from cold food being applied) is instantly detected and responded to.This saves energy and unnecessary heat loss to the cooking environment.
Optional Cooking Surfaces
There are two cooking surface options. The standard unit comes with a polished steel top, which seasons quickly and is easily cleaned. The optional model comes with a chrome top for even easier cleaning, less heat radiation, easier low fat cooking, and less opportunity for flavor transfer.
Power and Configuration Options
CookTek designed their line of induction planchas to fit standard kitchen footprints. They are available in 194-220VAC 3Phase or 376-424VAC 3Phase models, and can either come with a stainless steel housing to make it a free-standing unit, or without the housing so it can be dropped into an existing work space.
A Joy to Work On
Despite the high temperature cooking surface, emissivity is remarkably low in all models. Because induction power heats only the flat cooking surface, very little heat is transferred to the equipment’s housing, creating a comfortable work enviroment. The entire cooking surface is surrounded by a grease moat. Drippings and debris are collected in convenient removable drawers.
