Dehydration
Drying or dehydrating is one of theoldest methods of food preservation. Food contains
acertain amount of water which can be removed by dehydration. Removing themoisture
from foodstuffs prevents thegrowth of bacteria and moulds which would otherwise
cause thefood to deteriorate. This makes it possible to keep foodstuffs for several
years under favourable conditions. Dehydration concentrates thearomatic substances
in foodstuffs and intensifies theflavour. Dehydration is anenvironmentally friendly
method of preservation which uses no preservatives and one in which thefoodstuffs
retain most of their vitamins and minerals. Dehydration is suitable for fruits, vegetables,
mushrooms, herbs and teas.
Theair is warmed up and blown through thedrying racks, causing most of themoisture in
thefood to evaporate and be blown out through theopenings in thelid. Thecontents
of every drying tray will be dried but thetrays must be swapped around in order
for their contents to be dried as efficiently and evenly as possible. Thecontents of
thelowest tray will be dried themost efficiently, so thetrays should all be circulated
through thedifferent positions at regular intervals.
Operating instructions
Before using for thefirst time
1. Remove all packaging.
2. Place thedehydrator on aflat stable and heat-resistant surface. Bear in mind that
it is unwise to move thedehydrator during thedrying process. Make sure that
there is at least 15cm free space around theoutside of thedehydrator to ensure
adequate air circulation in and around thedehydrator.
3. Fit all the (empty) drying trays and then thelid onto thebase unit. Switch thedehydrator on and let it run empty for about 30 minutes before switching it off and
letting it cool down (this only needs to be done prior to initial use). Wash thedrying
trays and thelid, rinse and dry them thoroughly. Thedehydrator might emit aslight
odour of burning thefirst time it is used, but this is quite normal. Wipe theexterior
of thebase unit with adamp cloth.
Preparations
1. Wash or clean theraw ingredients before drying to cleanse them of any traces of
chemicals, dirt, insects, etc.
2. Inspect any fruit or veg before placing it onto thedrying tray. Remove any food that
is discoloured, overripe, or damaged, otherwise it could ruin everything on thetray.
3. Slice thefood to be dried into 6mm thick slices. Thinner slices will dry quicker
but they will shrink more. Slices of unpeeled fruit should be laid with thecut side
facing up. Lay each piece separately so that it does not overlap any of theothers
on thetray.
6
4. Spread thefood over thetray in aneven layer. Herbs should be dried very carefully,
just remove thestalks. They do not need to be broken down any more. Herbs
need turning from time to time to stop them sticking to thetray.
5. Make sure that thepower switch is set to 0 (off) before thedehydrator is plugged
into anelectrical socket.
Dehydration
Thefood selected for dehydrating should be fresh and fully ripe. It is impossible to
achieve good results if thefood that you start with is overripe, bruised or otherwise
deteriorated. Do not dehydrate wet produce, once rinsed thefood should be allowed
to air dry for awhile before you begin to dehydrate it.
1. Spread thefood over thetray in aneven layer.
2. Place thedrying trays with thefood on them onto thebase unit and then put thelid on.
3. Plug thedehydrator into anelectrical socket and switch thepower switch to 1 (on).
4. Set thetemperature using thetable below as aguide and let theproduce dehydrate for therecommended time (depending on thetype and amount of produce).
Thegreater themoisture content of thefood, thelonger thedrying time it will need.
All of theincluded drying trays must be used regardless of whether they contain
any food.
5. Thecontents of
thelowest tray will
be dried themost
efficiently, so
thetrays should all
be circulated through
thedifferent positions
at regular intervals
to ensure that all
thefood is dried to
thesame degree.

6. Check theprogress of thedehydration from time to time to ensure that you do not

when it is dehydrated. Thedehydrated food should be stored in acool, dark place
in asuitable container.
7. Turn thedehydrator off and unplug it when you have finished.
8. Wash thelid and thedrying trays.

Pre-treatment
In order to prevent certain types of fruit from discolouring, we recommend that thefruit
is first dipped into asolution made of one teaspoon lemon juice mixed with one cup
of water. Thefruit should then be wiped with apaper towel. Thelemon juice can be
substituted with pineapple juice or other source of vitamin C. Certain fruits such as figs,
plums, grapes and bilberries contain anatural protective layer of wax. They should be
treated like this: Lower them into boiling water for 1 to 2 minutes, take them out, let
them drain and then lower them immediately into cold water again before taking them
out, draining them and wiping them dry. Slice them and then dehydrate them.
Blanching
Themajority of raw produce should be blanched before dehydration to help preserve
its flavour and appearance. This involves boiling theproduce very briefly (1–5 minutes).
Place theprepared produce in abasket or strainer and immerse it in apot of boiling
water for acouple of minutes before removing it and letting it drain. Let theproduce
dry completely before you put it onto thedrying tray and switch thedehydrator on.
Blanching is asuitable method for helping preserve thecolour of apples, apricots,
figs, nectarines, peaches, pears and plums. Theresult will be sweetened candied fruit.
Different methods should be tried until you achieve thebest result.
Recommended drying temperature (these temperatures are approximate only,
thedehydration time depends on thethickness of theslices, moisture content, etc.)
Experiment until you determine theoptimum temperatures and times.

Storing dehydrated produce
Dehydrated food must be stored correctly in order for it to keep its colour, flavour and
quality for as long as possible.
We recommend that thedehydrated food be packed into freezer bags and stored in
acool, dark place, thecooler thebetter. Make sure that thefood is completely dry
before packing it in thebags, squeeze out as much air as possible before sealing
thebags. Thebags should then be kept in anairtight storage jar. Inspect thebags
after afew days, if there is condensation inside thebags, thefood is not properly
dehydrated and needs to be dehydrated again.
