The Wae has been a staple of the family breakfast
for centuries. As people have become more health
conscious in recent years, the wae breakfast started
to wane. That is why at Chefman, we have created a
ceramic coated wae iron, eliminating the need for
excessive oil or butter without sacrificing flavor.
In this cookbook you will find a collection of healthy
wae recipes, many versatile enough to be used for
Breakfast, Brunch, Lunch, Dinner, or even snacktime.
There is no reason healthy can’t also be delicious,

Whole Wheat Waes
Ingredients:
2 large eggs
1 ¾ cups milk
¼ cup oil
1 tablespoon honey
½ teaspoon ground cinnamon (fresh preferred)
¼ teaspoon baking soda
1 ½ cups whole-wheat flour
2 teaspoons baking powder
⅛ teaspoon salt
Warmed 100% pure maple syrup for serving
Fresh fruit for serving
Instructions:
1. Preheat your wae iron.
2. In a large mixing bowl whisk together the eggs, milk, oil, honey,
cinnamon, and baking soda until well combined.
3. Add in the flour, baking powder, and salt and whisk together just until the
large lumps disappear.
4. When the wae maker is hot, dab it with a little butter and then ladle
some batter onto the center of the iron. Cook about 3 - 4 minutes each.
5. Keep waes warm until you finish cooking all of them. Top with pure
maple syrup and fruit. Enjoy!

Fluy Gluten Free Waes
Ingredients:
1 ½ cups gluten free all-purpose baking flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tbsp sugar or ¼ tsp Stevia
1 tbsp oil
¾ cup milk
4 eggs, separated
1 tsp vanilla extract
Instructions:
1. Pre-heat your wae iron.
2. In a large bowl, mix the flour, baking powder, soda, salt, and sugar
together. In a separate bowl, whip the egg whites and vanilla until it
forms sti peaks or resembles whipping cream.
3. In a small bowl, whisk together milk, yolks and oil. Add the milk mixture
to the dry ingredients and blend together. With a rubber spatula, slowly
fold in egg whites with the rest of the ingredients. The entire mix should
be light and fluy.
4. Spray wae iron and begin making waes. Cook about 3 - 4 minutes
each.

Gluten Free Blueberry Waes
Ingredients:
1 ¾ cups gluten free all-purpose baking flour
½ tsp baking powder
½ tsp sea salt
1 ¾ cups whole milk (organic preferred)
2 eggs
6 tbsp unsalted buttermelted
1 cup blueberries (organic preferred)
Instructions:
1. Mix the dry ingredients - flour, baking powder and salt in a large
bowl.
2. Melt butter in a microwave or gently on the stove. Cool for a few
seconds before mixing with milk and eggs.
3. Mix wet ingredients - milk, eggs and melted butter in a bowl until
blended. Fold dry ingredients into wet until just combined.
4. Pour batter into hot, oiled wae iron and sprinkle berries over the
liquid batter. Cook about 3 - 4 minutes each.
Recipe Notes
It’s hard to tell that these waes are gluten free as they are very
light and fluy. This is a great base recipe for adding fruit such as
blueberries or banana slices to or savory ingredients such as Jarlsberg
cheese and herbs.

Sleel Cut Oat Waes
Ingredients:
2 cups steel cut oats*
¼ cup yogurt
2 ½ cups milk (any kind)
½ tsp sea salt
½ tsp ground cinnamon
1 tsp baking powder
2 tbsp brown sugar
4 tbsp unsalted butter
¼ cup flaxseed meal
2 eggs (optional: you can use an egg substitute or more flax seeds)
Instructions:
1. Combine steel cut oats, yoghurt and milk and soak these together
in a blender overnight.
2. Add salt, cinnamon, baking powder, brown sugar, butter, ground
flax seed and eggs or egg substitute to oat mixture. Blend together
until smooth. A high quality blender is needed or you can divide
the batter in half and blend one half at a time.
3. Cook in your wae iron. Top with favorite toppings. Enjoy!

Four Grain Waes
A combination of 4 grains make these waes a winner!
Try them soon with your favorite toppings.
Ingredients:
1 tbsp vegetable oil
¼ cup whole wheat pastry flour
¼ cup cornmeal (fine grind)
1 tbsp honey
½ cup brown rice flour
1 ½ tbsp baking powder
1 egg, large, separated
¼ cup organic buckwheat flour
1 cup water
Instructions:
1. Combine flours and baking powder. Separate egg and beat white
until sti.
2. Combine honey and water, egg yolk and vegetable oil.
3. Combine liquid mixture and flours, mixing as little as possible. Fold in
egg white. Mixture will be frothy and should be rather thick.
4. Bake on medium-hot wae iron to a slight crispness. Oil wae iron
lightly with a mixture of 1 tablespoon lecithin to ½ cup vegetable oil.
This tends to stick, even to ceramic. Serve with unsweetened
applesauce or your favorite topping. Makes 4 Waes.

Waed Quesadillas
A quick way to make a quesadilla in your wae maker!
Ingredients:
1 tablespoon olive oil
1 poblano pepper, thinly sliced
1 jalapeño, seeded and diced
4 medium flour tortillas
1 to 1 ½ cups reduced fat pepper jack cheese, grated
2 teaspoons taco seasoning mix
Light sour cream, for garnish
Salsa, for garnish
Cilantro, for garnish
Instructions:
1. In a small skillet over medium heat, add a drizzle of oil followed by the
poblano and jalapeno peppers. Cook for a minute or two until they just
start to soen. Season the peppers with a small pinch of salt.
2. Heat your wae iron and cut tortillas to fit the wae iron if necessary.
3. Place a tortilla on the wae iron and add a small amount of grated
cheese, followed by about half of the pepper mix. Sprinkle on some taco
seasoning mix and another good handful of cheese. Top with a second
tortilla and close the wae iron.
4. Cook the quesadilla until the cheese is melted and bubbling out and the
tortilla is lightly browned. Remove quesadilla using a fork or knife, and
cut into quarters for easy serving. Garnish with extra salsa, cilantro and
sour cream as desired.

Wae Iron Grilled Cheese
A kid-friendly sandwich but any adult who likes a warm cheese-filled
sandwich will enjoy it too.
1. Place a sheet of aluminum foil underneath your wae iron to aid
in cleanup, just in case the cheese oozes. Preheat according to the
manufacturer’s instructions.
2. Assemble the sandwiches by buttering the outsides of the bread
slices and placing the cheese slices on the insides.
3. When the wae iron is hot, put the sandwiches in the wae iron
and close it. Cook for 2 to 3 minutes, or until the undersides are
golden brown and the cheese is oozing. Peek once or twice to make
sure they are not getting overcooked. No need to flip these because
they will cook evenly on both sides.
4. Remove the sandwiches with tongs or a fork and cool slightly. Makes
two sandwiches.

Savory Cornmeal Waes with Black Beans
Ingredients:
2 cups buttermilk
2 eggs
¼ cup oil
2 ¼ cups organic cornmeal pancake and wae mix
½ tsp ground cumin
¼ tsp chili powder
15 oz black beans drained and rinsed
1 cup prepared salsa
Light sour cream, sliced avocado and chopped cilantro to garnish
Avocado sliced to garnish
Cilantro chopped to garnish
Instructions:
1. Preheat wae iron to medium-high heat.
2. Whisk together buttermilk, eggs and oil in a bowl then mix in
cornmeal pancake mix, cumin and chili powder.
3. Portion batter onto the preheated wae iron or use about ¾ cup
batter per wae. Cook until golden, about 6 minutes total. Keep
warm in a 200°F oven.
4. While waes cook, mix together black beans and prepared salsa in a
small bowl. To serve, top each wae with about ¼ cup black bean
mixture and garnish as desired with sour cream, avocado and cilantro.

Wae Banana Bread
Ingredients:
1¼ cups all-purpose flour
¾ cup sugar
½ cup chopped walnuts
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
¼ teaspoon fine salt
1 cup smashed banana (2 to 3 small bananas)
½ cup vegetable oil, plus more for brushing wae iron
½ cup sour cream
1 teaspoon pure vanilla extract
2 large eggs
So unsalted butter and confectioners’ sugar, for dusting, optional
Instructions:
Preheat your wae iron to medium-high. Preheat the oven to 200
degrees Fahrenheit (to keep cooked waes warm). Whisk together the
flour, sugar, walnuts, baking powder, baking soda, cinnamon, nutmeg
and salt in a large bowl. Whisk together the banana, oil, sour cream,
vanilla and eggs in another bowl. Fold the banana mixture into the
flour mixture until just combined.
Lightly brush the top and bottom of the wae iron with oil. Fill each
section about three-quarters of the way full (there should still be
some wae iron showing). Close and cook until the waes are golden
brown, 4 to 6 minutes. Keep the waes warm in the oven or covered
with foil on a plate while you cook the remaining batter. Spread with
butter and dust with confectioners’ sugar if you’d like.
Recipe Notes: Freeze any leover waes in a Ziploc bag, and reheat
them in the toaster.
