Jeff Fredrickson, Executive Chef, Tradewinds Resort & Conference Center, St. Petersburg Beach, FL, describes Carter-Hoffmann’s patented and Energy Star rated EnduraHeat carts
as “truly an advancement over older models.” When one of his old carts was out of service Carter-Hoffmann gave him an EnduraHeat banquet cart to use for a couple of months and “the cart sold itself,” he says. “My favorite features are that it holds heat while it is being filled; there is far less diminishing of heat; and when it is not plugged in, there is much less heat loss,” he explains. Chef Frederickson now uses EnduraHeat carts for transportation and outdoor events, and he says, “From Point A to Point B, these carts keep plates hotter, which enhances a guest’s experience.”

What’s the Difference?
More than 60 years of experience has taught us there’s a BIG difference between a holding cabinet and a transport cart. Remember this
choosing a cart.
ou can use a transport cart as a holding cabinet,
but DON’T use a holding cabinet as a transport cart.

Hinges
Simple overlap construction with spot welds or rivets. This style of construction is prone to racking and is not able to withstand the rigors of transport.
Light-duty rubber (5” diameter or less).
Edge-mount hinges — prone to becoming mis­aligned quickly in transport applications. Stick out and are prone to damage.
Carter-Hoffmann takes an entirely different approach when designing transport carts. All-welded turned-in seam construction, with wheel-ahead caster pattern, grip handles and “floating” wrap-around bumper are standard features.
All-welded, rigid, turned in seam construction forms an integral rigid frame and makes cart more durable and able to withstand abuse.
Heavy-duty polyurethane, semi or fully-pneumatic with sealed roller bearings (5”- 8” in diameter for easier rolling).
Welded or bolted-on pin hinge with back up reinforce­ment plates. Flush-mounted to reduce damage.

Edge-mount or similar — affixed with screws. Transport will loosen the screws and hinges. Sticks out and is prone to damage during transport.
Normally affixed to cart in a box pattern which makes it more difficult to roll over uneven surfaces.
Bumper channels or corner bumpers screwed to the lower edge of the cabinet or formed as an extension of the base. This type of construction does not absorb impact well and entire cabinet is vulnerable to damage.
Recessed finger grips are often used. Not ergo­nomic or comfortable when pushing or pulling the cart.

Flush-mounted, often with transport latch as a back­up. Because the latch doesn’t stick out past the pe­rimeter of the bumper, it is less prone to damage.
Mounted in Wheel-Ahead pattern — the lead wheels are offset slightly, so one caster at a time rolls over thresholds and other uneven surfaces.
“Free-floating” wrap-around bumper is bolted to the base of the cabinet, but is not an extension of the base. The bumper absorbs most of the impact, protecting the integrity of the cabinet.
Push handle at each end of the cabinet. Bolted or welded on with back-up plates.

Carter-Hoffmann’s Modular Holding Cabinets are ideal for holding food for an extended period of time, without occupying much space. This enables you to expand your menu, increase the efficiency and speed of service, and ensure food quality and availability.
MODULAR HOLDING
Modular Space-Saving Design: Our modular holding cabinets are adaptable for a wide
range of uses and a variety of spaces, with small footprints to fit small spaces. There are many configurations to choose from and several models can accommodate more than one pan size or a combination of pan sizes.
Units for Fried and Moist Food Holding: Units for moist food holding have removable
food covers to prevent moisture loss and deterioration, allowing for extended hold times. Units for fried foods have top and bottom heat to maintain crispness.
User-Friendly Controls: Separate controls for each cavity allow for maximum flexibility to
hold different pans at different temperatures. Each control is programmable for time and temperature.
Efficient Heating: Vulcanized silicone heaters with hard coated anodized aluminum plate
allow heat to be transferred directly to the food product. All units operate on 15 amps or less. Warm up takes mere seconds.
Reliability: More than 6000 units have been operating in the field since 2004. Satisfied
users include Boston Market, Einstein Bagels, Dunkin’ Donuts & Checkers.

More than 60 years of experience has taught us there’s a BIG difference between a holding cabinet and a transport cart. Remember this

Transport Carts - Things to Consider
There are a few things to consider when looking to buy a transport cart. Ask yourself the following questions:
1) Where and how will the cart be used? Will it stay fairly close to the kitchen or will it travel long distances over uneven terrain? The answer to this question is key to selecting types of casters and heavy-duty options.
2) How big are your door openings and elevators? Carefully check the doorways and the corners in hallways through which the cart will have to pass. Verify the dimensions of the cart you are considering.
3) What will you be transporting — plated meals, bulk food, a combination?
4) What type of electrical service do you have available for your carts? Most transport carts operate on 15 amps or less, but there are some

5) What type of heating system does the cart have? Blower or static? Top or bottom? Removable or not removable? Your decision will be based on your preference when considering all the pros and cons of each type of system.

6) Will you use canned fuel (i.e. Sterno™) frequently? There are carts specifically designed for use with canned fuel.
7) How often will you use the carts and do you have adequate storage space? Tighter spaces require more vertical use of space and a more upright cabinet.
8) What is the stature of your staff? The cart with the largest capacity may be your first inclination, but if your employees are smaller, they may not be able to push large, heavy carts. Instead, you may need several smaller carts.

Caster Selection Guide
Standard casters installed at the factory are chosen according to their most common use. Transport carts generally have two swivel and two rigid casters to make steering easier (or all swivel on single-door upright cabinets). Two swivel casters will also have brakes. However, if your conditions are different, this handy guide will help you select the caster that’s right for you.
STATIONARY HOLDING CABINETS ONLY

POLYURETHANE TREAD WITH SEALED ROLLER BEARING:
Caster has hard tread and is easier to roll on soft surfaces. Note: if cart wash is used, bearings must be properly maintained.

SEMI-PNEUMATIC SMOOTH ROUNDED CROWN: All purpose caster
suitable for a variety of surfaces with crowned shape for rolling over carpet. These casters are durable for long wear, yet soft enough to provide a cushioned ride. They require more force to roll than polyurethane casters.
OUTDOOR USE
FULLY-PNEUMATIC CASTER WITH TREAD: Best for transport over
parking lots and service drives. The tread is soft for a smooth, quiet ride on tile floors, providing excellent protection in cushioning cargo against bumps & jolts. Require more force to roll than polyurethane caster.
CASTER SIZE — WHICH IS BEST? The rule is simple when choosing caster size. The
larger the caster, the easier it rolls. So, if your conditions warrant a caster type that may be a little more difficult to roll, increasing the size will help reduce the force necessary. Note: changing the caster size will alter the overall height of the cart.

GENERAL GUIDELINES FOR SPECIFYING BANQUET EQUIPMENT
BANQUET AREA GUIDELINES:
1. Allow 15 square feet per person in banquet areas. For example: 5000 square feet of space = banquet capacity of 333 people.
2. For break-down areas (other than the main ballroom), provide equipment capability for 1/3 of the total break down areas.
3. If remote dish-up is to be used, allow 10% of the total banquet area for dish up. For example: 5000 square feet of banquet area = 500 square feet of dish up area.
4. Supply staging areas with an ample number of 110v outlets. NEMA 5-15P plugs are used on most mobile banquet carts, refrigerator and freezer carts. NOTE: EnduraHeat™ banquet carts require 20 amp service.
BANQUET CART SELECTION: Match the capacities of banquet carts to the average capacities of
individual banquet rooms, not the overall capacity of the banquet hall. In a space that can be partitioned to serve several functions at one time or in several smaller banquet areas in the facility, smaller carts to serve individual areas generally work best. Conversely, if only large banquets are served, then large carts would take up less area than lots of little carts. Carter-Hoffmann offers five distinct series of banquet carts (see pages 48-49 for details).
If space is limited, consider taller, narrower carts with a smaller footprint to use more vertical space instead of floor space. If there are narrow doorways, tight turns or small elevators, make sure the carts have dimensions to fit in small spaces.

MOBILE REFRIGERATORS & FREEZERS: For holding and transport of salads and
desserts. We recommend the use of one single-door refrigerator for every 75-100 guests or a two-door refrigerator for 100-150 guests, and one single-door freezer for every 280 guests. We offer refrigerators and freezers in two styles; one for sheet pans and the other for 12”x20”, 18”x26” and Gastronorm pans. (see pages 76-81)
QUEEN MARYS: Mobile utility/clean up cart used for set up and tear
down of banquets, transport and storage of dishes, silverware, liquor, receiving of incoming food deliveries, etc. Allot one Queen Mary for every 150 persons. Carter-Hoffmann offers both stainless steel and aluminum Queen Marys. (see page 63)
CLEAN DISH TRANSPORTER: Mobile utility, clean up and storage cart used
in a similar fashion as Queen Marys. However, these carts are enclosed and lockable for secure storage of valuable service items. Allot one transporter for every 150 persons. (see page 64)
MOBILE ENCLOSED ROTARY DISH CARTS: For clean dish storage under
counters, use Carter-Hoffmann mobile enclosed rotary dish carts. Plates are stacked in four sections on a Lazy-Susan rotating platform. The carts heat plates for a more pleasing presentation. Two models for plates and one for soup bowls. Allot one dish cart for every 250 persons. Allot one bowl cart for every 160 persons. (see page 62)
UTILITY CABINETS & RACKS: For utility storage and transport of
pans, these all-welded racks and cabinets in a variety of sizes and types—choose according to your operational needs. Carter-Hoffmann offers end-loading and side-loading bun pan racks, racks with universal slides for bun pans or steam table pans, oval tray racks, extruded side panel racks and enclosed aluminum cabinets. Because there is such a variety of plate sizes and cover heights, use the capacities listed in this catalog as a general rule, not the final
word.
HOW TO ACCURATELY FIGURE BANQUET CART CAPACITY:
EASY AS 1-2-3: Reference the clearance between shelves and the shelf length and depth in the tables
on the following product pages.
1) Stack plates with covers 4 or 5 high and measure the height of the entire stack.

2) Then, determine how many in a stack will fit in the space between the shelves.

EnduraHeat™ banquet carts have been tested for performance and will retain serve-safe food temperatures for two hours, even if the door is opened a few times.
