When using the Muffin Magic for the
first time, you may notice a fine smoke haze. This is caused by heating the new components. Do not be concerned.
Make sure that the appliance cord does
not touch the appliance’s hot surfaces. This could result in melting the cord.
Your Breville appliance comes with the unique Assist Plug™ conveniently designed with a finger hole in the power plug, for easy and safe removal from the outlet. For safety reasons it is recommended you plug your Breville appliance directly into the power outlet. Do not use in conjunction with a power strip or extension cord.

OPERATING YOUR BREVILLE MUFFIN MAGIC
CARE AND CLEANING
BEFORE FIRST USE
Check that the cooking plates are clean and free of dust. Lightly wipe cooking plates with a damp cloth.
1. Plug appliance into an outlet.
2. Close the lid and switch ‘on’. The red ‘on’ light indicates that the unit is heating to the correct temperature. The green ‘ready’ light will light up when Muffin Magic has reached the correct. temperature and is ready for cooking.
3. Pre-heat Muffin Magic until green ‘ready’ light lights up. (Lid must be closed.)
4. Open lid on Muffin Magic and spoon the prepared muffin mixture into baking molds.5. Close the lid. Do not open the lid during the cooking process. This allows heat to escape and extends the cooking time.
6. Muffins should cook for the recommended cooking time (see recipes on pages 7 (10-14) or until they reach the desired shade of golden brown.
7. Remove muffins with a plastic spatula.
8. Place muffins on a wire cooling rack for 5 minutes.
Your Muffin Magic has a short cord as a safety precaution to prevent personal injury or property damage resulting from pulling, tripping or becoming entangled with the cord. Do not allow children to be near or use this appliance without close adult supervision. If you must use a longer cordset or an extension cord when using appliance, the cord must be arranged so it will not drape or hang over the edge of a countertop, tabletop or surface area where it can be pulled on by children or tripped over. To prevent electric shock, personal injury or fire, the electrical rating of the extension cord you use must be the same or more than the wattage of the appliance (wattage is marked on underside of appliance).
Do not immerse any part of Muffin Magic
in water or any other liquid.
Before cleaning, switch off Muffin Magic
and unplug the appliance. Allow Muffin Magic to cool slightly. Muffin Magic is easier to clean when slightly warm.
Because the cooking plates are coated with a non-stick surface, do not use metal utensils. They will damage the surfaces of the baking plates.
Wipe the cooking plates with a damp
cloth. If cooked-on food still remains, brush a little oil or melted butter onto these areas. Allow to stand for 5 minutes, then wipe with a damp cloth.
Do not use metal utensils as these may scratch the non-stick finish of the cooking plates.

HINTS FOR BEST RESULTS
1. Allow enough heating time between batches for the unit to return to the correct baking temperature and the green ‘ready’ light to light up.
2. Use a 1⁄3 cup (or 5 tablespoons) to measure out mixture. This produces evenly-sized muffins. The maximum mixture fill level is at the top of each mold. Do not allow the mixture to overflow from the mold; baking results of the muffins will be more desirable if they do not touch the top of the appliance.
3. Do not over-stir or beat muffin mixture. This action will only toughen the batter and produce imperfect results.
4. Quick mixing is the secret of muffin success. Mix until the ingredients are completely mixed.
5. You can line Muffin Magic with paper muffin inserts, although they are not necessary. Simply place the paper insert into the mold and fill with mixture. The surfaces of Muffin Magic can be sprayed with non-stick spray for easy food removal.

SERVING SUGGESTIONS
1. Muffins make a great accompaniment to any meal, especially savory muffins to accompany soup.
2. Muffins can be filled with sour cream, cream cheese, smoked salmon, luncheon meats, fresh herbs or fresh fruits for added variety.
To check if muffins are ready to remove from the Muffin Magic, lightly press the top of the muffin. If it springs back, the muffin is ready to be removed and placed on the wire cooling rack.
Do not use metal utensils because they may scratch the non-stick finish of the cooking plates.
USING PRE-MIXED PACKET MUFFIN MIX
Breville has successfully tested pre-mixed packet muffin mixes from the leading brands and found that this is an easy and quick way of baking large sized muffins.
A wide variety of pre-mixed muffin mixes are available from your supermarket including low fat varieties.
BAKING MUFFINS IS AS EASY AS MIX, FILL, BAKE
Preheat the Muffin Magic until green ‘ready’ light illuminates. Mix: Prepare muffin mixture according to
the packet instructions. ‘Combine the ingredients only until just mixed. For best results do not over-mix’. Spray the Muffin Magic cavities with non-stick spray.
Fill: Spoon the mixture into the cavities
to fill completely. Close the lid.
Bake: Allow muffins to cook for
approximately 12 minutes or until the desired shade of golden brown is attained. Remove muffins using the plastic spatula and place on a wire cooling rack for 5 minutes to cool.
The Muffin Magic is perfect for baking cupcakes. Simply follow the recipe instructions of your favorite packet cake mix and fill the baking cavities to the top. Close the lid and bake for approximately 10 minutes.

CITRUS AND BLUEBERRY MUFFINS
Makes 6 11⁄2 cups self-raising flour
1
3 cup brown sugar
11⁄2 teaspoons grated orange rind
1
2 teaspoon cinnamon

4 cup fresh blueberries
1 egg lightly beaten

2 cup (125ml) buttermilk
1
4 cup (65ml) orange juice
Preheat Muffin Magic until green ‘ready’ light illuminates.
Mix: Mix the flour, sugar, orange rind and
cinnamon together in a bowl. Fold through blueberries. In a separate bowl lightly whisk the egg, buttermilk and orange juice together.
Pour the liquid ingredients into the flour and stir with a spoon until just mixed.
Fill: Spray Muffin Magic with non-stick
spray and spoon mixture into cavities to fill level to the top.
Bake: Close lid and bake for approximately
13 minutes.
Remove and allow to cool on wire rack for 5minutes. Cook remaining muffins.
PLUM CRUMBLE MUFFINS
Makes 6 11⁄2 cup self-raising flour
1
2 cup brown sugar
1
2 cup (200g) seeded and chopped plums,
fresh and canned
1 egg lightly beaten
1
2 cup (125ml) buttermilk
1
4 cup (65ml) orange juice
CRUMBLE TOPPING
1 tablespoon oat bran 1 tablespoon finely chopped pecan nuts 1 teaspoon sugar 1 teaspoon cinnamon
Preheat Muffin Magic until green ‘ready’ light illuminates.
Mix: Mix the flour and sugar in a bowl.
Fold through chopped plums. In a separate bowl lightly whisk the egg, buttermilk and orange juice together.
Pour the liquid ingredients into the flour and stir with a spoon until just combined.
Fill: Spray Muffin Magic with non-stick
spray and spoon mixture into cavities to fill level to the top and sprinkle with combined crumble topping.
Bake: Close the lid and bake for
approximately 15 minutes.
Remove and allow to cool on wire rack for 5minutes. Cook remaining muffins.
APRICOT, ALMOND AND CORNMEAL MUFFINS
Makes 6 1 cup self-raising flour

3 cup oat bran
1
4 cup flaked almonds

4 cup raw sugar
15 oz (425g) can apricots in natural juice,
drained and chopped 1 egg lightly beaten 1 teaspoon (5ml) vanilla 1 tablespoon (15ml) olive oil

4 cup (65ml) orange juice
1
4 cup (65ml) buttermilk
Preheat Muffin Magic until green ‘ready’ light illuminates.
Mix: Mix the flour, oat bran, almonds and
sugar together in bowl. Fold through chopped apricots. In a separate bowl lightly whisk the egg, vanilla, oil, orange juice and buttermilk together.
Pour the liquid ingredients into the flour and stir with a spoon until just combined.
Fill: Spray Muffin Magic with non-stick
spray and spoon mixture into the cavities to fill level to the top.
Bake: Close lid and bake for approximately
16 minutes.
Remove and allow to cool on wire rack for 5 minutes. Cook remaining muffins.
PEACH AND GINGER MUFFINS
Makes 6 1 cup self-raising flour

2 cup wholemeal self-raising flour

2 teaspoon cinnamon

2 teaspoon ginger

3 cup brown sugar
2 x 100g 2 x 4oz cartons chopped peaches in
natural juice, drained
1 egg lightly beaten

4 cup (180ml) skim milk
2 tablespoons (30ml) golden syrup
Preheat Muffin Magic until green ‘ready’ light illuminates.
Mix: Mix the flour, cinnamon, ginger, and
sugar together in a bowl. Fold through peaches. In a separate bowl lightly whisk the egg, milk and golden syrup together.
Pour the liquid ingredients into the flour and stir with a spoon until just combined.
Fill: Spray Muffin Magic with non-stick
spray and spoon mixture into the cavities to fill level to the top.
Bake: Close lid and bake for approximately
16 minutes.
Remove and allow to cool on wire rack for 5 minutes. Cook remaining muffins.

Makes 6 2 cup self-raising flour

and lime rind together in a bowl. In a separate bowl lightly whisk the egg, lime juice, oil and buttermilk together.

Preheat Muffin Magic until green ‘ready’ light illuminates.
Mix: Mix the flour, polenta, cheese, carrot,
basil and chives together in a bowl. In a separate bowl lightly whisk the egg and buttermilk together.
Pour the liquid ingredients into the flour and stir with a spoon until just combined.
Fill: Spray Muffin Magic with non-stick
spray and spoon mixture into cavities to fill level to the top.
Bake: Close lid and bake for approximately

HERB SESAME MUFFINS
Makes 6 11⁄2 cups self-raising flour

4 cup grated Parmesan cheese

4 cup grated cheddar cheese 11⁄2 tablespoons toasted sesame seeds 3 tablespoons finely chopped fresh mixed
herbs (parsley, chives, thyme)
1 egg lightly beaten

4 (60g) butter melted

Mix: Mix the flour, Parmesan and cheddar
cheese, sesame seeds and herbs in a bowl. In a separate bowl lightly whisk the egg, milk and butter together.

spray and spoon mixture into cavities to fill level to the top.
Bake: Close the lid and bake for

BLUE CHEESE MUFFINS

4 lb (100g) blue vein cheese, crumbled

8 lb 60g prosciutto ham, finely sliced
1 egg lightly beaten

2 cup (125ml) milk

4 cup (65ml) olive oil
Preheat Muffin Magic until green ‘ready’ light illuminates.
Mix: Mix the flour, baking powder, cheese
and prosciutto in a bowl. In a separate bowl lightly whisk the egg, milk and olive oil together.
Pour the liquid ingredients into the flour and stir with a spoon until just combined.
Fill: Spray Muffin Magic with non-stick
spray and spoon mixture into cavities to fill level to the top.
Bake: Close lid and bake for approximately
12 minutes.
