MINI-BREW INSTRUCTIONS
INSTALLATION
Place the urn carefully in position on urn stand with faucets located over drip trough. Then connect water supply and electric in accordance with the following suggestions:
found underneath and in the middle bottom of control box on the right hand side of the urn. Install shut-off valve beneath counter so water can bed shut off to urn for easy service. A reducing valve should be provided if water pressure is over 45 P.S.I.
Remove cover of control box for access to water and electrical connection.
WATER CONNECTIONS
ELECTRIC CONNECTIONS
Be sure that your current characteristics (voltage, etc.) agree with data specified on metal plate attached to side panel of control box. An experienced electrician should make the installation, and he should check that the proper size power cable leads to your urn and that the circuit is fused adequately. DO NOT TURN ON ELECTRIC THERMOSTAT UNTIL URN HAS BEEN FILLED WITH WATER. IMPORTANT: INSTALL WATER STRAINER (PACKED LOOSE WITH URN) ON COLD WATER LINE.
There is a wiring diagram on the inside cover of the control box -- follow this diagram when making electrical connections.
NOTE -- This urn is wired for single phase at the factory. If you have a three-phase
service, be sure to remove the jumper between two and three.
NOTE -- IMPORTANT -- After you have connected water supply and
electric supply, open the water line valve to urn. Turn power to the urn on -- BUT DO NOT TURN URN ON -- LEAVE THERMOSTAT AT "OFF" POSITION -- URN WILL AUTOMATICALLY FILL WITH WATER. WHEN URN HAS FILLED WITH WATER, TURN THERMOSTAT TO #10 POSITION.

URN CHECK-OUT
Before you start brewing coffee in your Mini-Brew, be sure to check the operation of the urn using the following
procedure:
1. Turn thermostat knob to #10 position.
2. Place spray arm over one of the liners with the cover removed and push the "Brew" button (brew light will come on). As soon as water starts to come out of spray arm, push the stop button (brew light will go out) and drain any water in the liner.
3. Push the "Brew" button again (same as above) and let water spray into empty liner until it stops automatically.
4. Using a gallon measure -- check the amount of water sprayed into liner. This will let you know how much water is to be sprayed over and through the coffee grinds.
THIS URN HAS BEEN FACTORY SET TO SPRAY 2 3/4 GALLONS OF WATER DURING THE BREW CYCLE.
NOTE -- If you want to decrease the amount of water -- you should decrease the amount of time on the timer. If you want to
increase the amount of water -- you should increase the amount of time on the time r. (See instructions on page 7 for adjusting the timer.)
5. When temperature on thermometer reaches approximately 205 degrees to 210 degrees, the urn should shut off.
6. You are now ready to brew coffee.
NOTE -- Model MB-2 coffee urns are factory set to sp ray 5 3/4 gallons of water during brew cycle.
FLAVORING IN - When putting a new urn into operation, the breaking-in process (generally known as "seasoning" or "burning-in") is accomplished by making the first batch of coffee very strong and allowing it to remain in the urn at least three to four hours. If possible, keep this first batch of coffee in overnight -- under low heat. Dispose of this first batch. Then clean out urn before making coffee for serving.

OPERATION
1. Start daily with a well cleaned coffee urn.
2. Turn thermostat knob to #10 position. Thermostat light will come on indicating
that the urn is heating.
3. When dial thermometer shows that urn is at "Brewing" temperature:
(a) Place filter paper in basket and pour proper amount of coffee in --
spreading evenly.
(b) Put coffee basket in coffee urn liner.
(c) Put cover over liner and spray arm through hole in center of
cover.
(d) Push "Brew" button (brew light will come on).
(e) THREE minutes after brewing is completed, remove old coffee grounds.
(f) Brew cycle can be interrupted at any time by pushing stop button -
- however, timer will reset to zero and will run a full brew when button is pushed again.
NOTE: Never serve coffee that has been held over 1-1/2 hours.
Don't make fresh coffee on top of old. Always wash out urn before each operation. Don't leave coffee in urn overnight. Wash out thoroughly before
closing. Leave a gallon or so of fresh water in liner.

CLEANING
BETWEEN BREWS --A quick rinse between brews is desirable.
1. Rinse liner by spraying water over empty liner for about 30 seconds.
2. Drain the water off. The urn is ready for the next brew.
DAILY -- Daily cleaning after the last batch of coffee is used should be a regular routine.
1. After all brewed coffee has been drawn from the urn, spray over two gallons of fresh hot water and thoroughly brush it out with long handled brush.
2. Drain the water off, again spray over two gallons of fresh hot water, brush it out, and drain again. Wipe down liner with clean towel.
3. If urn is not going to be used again immediately, put a gallon or so of fresh water in the liner. Do not drain this water off until just before making next coffee brew.
TWICE A WEEK -- Coffee urns must have a special scouring twice a week. To scour the urn thoroughly:
1. Fill liner with water and add at least 1-1/2 ounces of coffee urn cleaning compound. Allow this
solution to remain in the liner approximately 30 minutes, during which time heat should be on full.
2. Scrub inside of liner and inside of cover with long handled brush.
3. Use long, thin brush to clean coffee gauge glass. Use same brush to clean fitting at bottom of liner and pipe connecting to coffee faucet.
4. Drain urn cleaning solution off and rinse three or four times with fresh hot water, repeating steps 3 and 4 again. Drain rinse water.
5. Occasionally, take faucet valves apart and clean thoroughly.
6. Leave a gallon or so of fresh water in urn until just before brewing next batch of coffee.
