SPECIFICATIONS
Classic-Line® Proofer Hot cabinets are designed for multi-purpose
applications including holding, proofing and mobile, heated
transport, and are constructed of die-formed, corrosion-resistant
14-gauge aluminum body and heavy-duty galvanized aluminum
base.
The bottom-mounted, heating and humidity module is removable
and may be used with or without water and provides uniform heat
distribution through a removable, louvered, rear-mounted air tunnel
and a one-piece, modular, drop-in designed blower fan assembly
with an adjustable damper.
Features include external controls with digital display, a 12-hour
timer, dual-purpose thermostat for holding or proofing with a
removable condensation drip-trough for easy cleaning.
Temperature ranges from 80°-185°F (27°-85°C) while the humidity
system features a 5-quart, stainless steel water reservoir.
Standard features include transparent polycarbonate door with
270° door swing, positive latching handle and Santoprene® door
gasket, 5" swivel plate casters (two with locks), 9-foot cord with
plug with cord clip on side of cabinet.
Classic-Line proofer hot cabinets feature adjustable universal wire
slides with 3" (75mm) spacing to 6 3/4" (172mm) spacing and
accommodates 18"x26" and/or 18"x13" and/or 12"x20" pans and/or
20"x20" pizza boxes.
