IMPORTANT:
To the installer: Installation of these units should be carried out by a competent person and the appropriate codes of practice adhered to, thus ensuring safe installation.
Pass to the user: Do not discard this document: it contains important guidelines on Operation, Loading, Cleaning and Maintenance and should be kept for reference.
DISPOSAL REQUIREMENTS
If not disposed of properly all refrigerators have components that can be harmful to the environment. All old refrigerators must be disposed of by appropriately registered and licensed waste contractors, and in accordance with National laws and regulations.
For Modular BC/BCF installation please see separate instructions.
Important: Ensure a minimum clearance of 150mm above unit and ventilation for
efficient operation. Where possible, ensure the unit is not adjacent to a heat source.
Unpacking: The unit is delivered on a pallet and shrink-wrapped. Documentation is inserted into a clear pocket located inside the unit. Carefully remove the protective plastic film and cardboard from the unit exterior and from the door opening surround making sure that any sharp instrument used does not cause damage, plus remove any quality labels.
Cabinet removal from the pallet: Remove the package containing the castors or legs. Remove the retaining bolts which secures the unit to the pallet. Move the unit over the front of the pallet and fit the lockable castors or legs in the mounting holes if required. To fit the rear castors or legs, lock the front castors, tilt the unit forwards, remove the pallet and fit the castors or legs in the mounting holes. Ensure that all are tightened firmly into position.
Cabinets fitted with castors - Remove fittings from inside the unit and ensure the door is locked before removal from the pallet. Cut the heavy duty cable ties that hold the front castors to the pallet. Unlock the castors and then carefully roll the unit forward off the pallet.
Cabinets fitted with legs - Remove fittings from inside the unit and ensure the door is locked before removal from the pallet. Remove the fixing blocks located in front of the legs at the front of the unit and cut the straps securing the unit to the pallet. Carefully manoeuvre the unit forward, off the pallet.

Cabinet
All models are normally fitted with swivel castors. Ensure during installation the unit is level if not the door may not close correctly. Adjust castors by inserting spacers under the appropriate castor and the base of the unit until level. As an alternative adjustable legs can be fitted to all models.

Narrow site access may require door removal. It is necessary to remove the unit compartment cover to gain access to the door hinge.
a) Remove unit compartment cover. (fig. 4). b) Remove the locknut from the bottom hinge bracket (see fig. 5). c) Remove the M5 hex screw from the top hinge bracket and push down
on the spring loaded cartridge top (fig. 6).
The door is then free to be pulled clear of the top hinge bracket and then lifted clear of the bottom hinge bracket (fig. 6).

BCCF 1 and BCCF RI 1
Fit electrically operated condensate vapouriser tray to the external rear wall of the BCCF RI 1 using the screws provided. For the BCCF 1 slide the tray into the retainers beneath the cabinet. Alternatively connect drain pipe direct to a main drain via the use of a bolt on tundish.

Limpieza / mantenimiento
Con los cuidados adecuados en acero inoxidable tiene la capacidad de resistir a la corrosión durante muchos años. Para ello se recomienda el siguiente régimen de limpieza semanal. a. Exterior: Utilizar un producto adecuado para mantener el acero inoxidable. b. Interior: Limpiar con agua jabonosa, aclarar y secar todo el interior.
Atención: Con los productos alcalinos de limpieza o con los que contengan lejía, ácido o cloro ya que son muy dañinos para el acero inox. pudiendo provocar corrosión. En el caso de producirse un contac­to accidental de alguna de estas sustancias, proceder a eliminarlo inmediatamente. No se bebe de usar nunca, en la limpieza, lana metálica. Una vez finalizada la limpieza, dejar a la unidad recuperar la temperatura de mantenimiento antes de proceder a la carga de producto. Durante el funcionamiento, cualquier salpicadura debe de limpiarse lo antes posible.

La limpieza del condensador se deberá de realizar, anualmente, por un servicio autorizado por Foster.

Los diferentes tipos de alimentos se enfrían en diferentes tiempos influenciados por diferentes factores que es necesario considerar cuando determinemos el tiempo de enfriamiento o congelación y que programa deberemos de utilizar.
Por ejemplo 10 kg. De carne tendrán una consideración muy diferente a 10 kg. Charcutería.
Afectará al tiempo del ciclo la densidad, contenido de agua, contenido de grasa,..
A la hora de seleccionar el programa, también habrá de considerar el tipo de estructura y superficie del producto.
Las cargas de producto y los espesores no deben de ser excesivos. Foster recomienda una carga máxima de 3.75 kg. Por cada cubeta gn.1/1.
Las porciones grandes de carne no podrán ser enfriadas dentro del tiempo estipulado, por lo que se recomienda porcionarlo antes del enfriamiento, o el enfriamiento lo antes posible.
Los productos que entren más calientes que lo recomendado, lógicamente emplearan más tiempo en enfriarse.
Las tapas y las cubetas muy profundas, también alargarán los ciclos de trabajo.
Es esencial que se produzca una buena circulación para facilitar un enfriamiento consistente.
Siempre comprobar, antes y después del ciclo, la temperatura de los alimentos.
No cargar en exceso las cubetas. La recomendación es que no sobrepasen de 25 mm. Y mantenerlo extendido.
Permitir un descanso, de 30 minutos, al producto después de cocinarlo.
No sobrecargar el abatidor, ya que esto incidirá en el tiempo requerido para acabar el ciclo.
Siempre limpiar y esterilizar la sonda antes de cada uso.
Utilizar cubetas de tamaño manejable para líquidos calientes.
Para la mejora de los tiempos de enfriamiento se recomienda el ciclo de enfriamiento.
Ante la incertidumbre del comportamiento del producto, utilizar siempre la sonda.

Fallos en el funcionamiento
Las comprobaciones deben de realizarse mediante personas competentes. Antes de llamar a un servicio autorizado por Foster realizar las siguientes comprobaciones: a) Fallo en el suministro eléctrico. b) Fallo de unos de los tipos que se indican en el manual en Avisos y Alarmas. c) Daño en el cable de conexión eléctrica.
Siempre que se requiera asistencia técnica apuntar los siguientes datos:
a) Número de serie de la unidad (E_________) b) Modelo de la unidad que se indica en la placa. c) Código de fallo, si este se describe el visor.

Operating Instructions
On completion of the self test, the controller will revert to the last chill program that was run (Pre-chill, Soft Chill, Hard Chill, Hard Chill Max, Shock Freeze, Professional 1, Professional 2, or Professional 3). The availability of these is dependent on how the controller has been configured.
The example shows the controller in Hard Chill mode with the previous and next programs indicated at the top of the display. To change the program rotate the dial, either clockwise or anticlockwise to select the type of program you require. (for guidelines refer to page 6)
To initiate the program just press and release the dial for the program to start.
To stop the blast chiller during operation, press and hold the dial for 2 seconds, the display returns to the program selection screen.
On completion of the program the controller will cause the blast chiller to enter the Hold Mode, as displayed on the left. An alarm will sound, press and release the dial to cancel the alarm, if the alarm is not cancelled the blast chiller will still enter the Hold Mode with the periodical sounding of the alarm. To cancel press and release the dial.
At any time when the blast chiller is operational the dial can be rotated to give information on the status of the particular mode of operation. The display will remain for 10 seconds and then revert to the normal operating screen automatically.
Standard Operation

When mains electrical power is first applied to the controller it will carry out a self-test function, for approximately 3 seconds. During this period the display will show.
The program starts with the screen at the top being displayed for 10 minutes. After which the intelligent probe determines if the cycle is controlled by time, displayed by the screen in the middle, or by temperature as displayed by the screen at the bottom.

Alarmas Y Avisos

Alta temperatura: Esta alarma ocurrirá sólo en modo mantenimiento. Examinar el producto para determinar si está a la
temperatura correcta. Si está a la temperatura correcta colocar el producto en un refrigerador o en un congelador y llamar al servicio autorizado de Foster. Si la temperatura del producto está por debajo de lo establecido, revisar el tiempo de refrigeración seleccionado o que el peso del producto que va a ser refrigerado no exceda de lo especificado en el armario.
HP interruptor: Causas para que esta alarma aparezca pueden ser:
Que la temperatura del producto exceda los 90ºC. Hay demasiada cantidad de producto colocado en el armario. Que la circulación del aire sea limitada. Que el filtro del condensador requiera una limpieza. Si el problema persiste llame al servicio autorizado de Foster.
La electricidad falla: Si la corriente falla durante más de cinco minutos, la unidad se resetea reanudando el suministro de la corriente
sin afectar al ciclo seleccionado. Más de cinco minutos y el controlador entrará en modo mantenimiento. Para revisar el funcionamiento del ciclo, mirar en la pantalla de información y revisar el tiempo del ciclo.

NOTA: Todos los tiempos del listado podrán ser utilizados sólo como referencia, y dependerá del tipo, medida y cantidad de cada alimento.
Hay cuatro programas principales que Ud. puede necesitar para utilizar su abatidor de refrigeración o de congelación.
Refrigeración suave: - para una Refrigeración segura de los productos delicados, tales como los pasteles y los productos de
pastelería en general, y los productos que contienen mucho agua como los vegetales, arroz y pasta.
Refrigeración fuerte: - Refrigeración en general. El ciclo de Refrigeración fuerte es ideal para enfriar “productos standard” como empanadas de carne, lasaña, porciones individuales de comida, etc. Suministrando la protección de la superficie para la última parte del programa.
Refrigeración máximo: - para productos que contienen gran densidad y grasa como cuartos de carne, estofados, etc.
Congelación “shock”: - Los productos que vayan a ser congelados, pueden ser congelados rápidamente “shock” por debajo de los -
18 ºC en el plazo de 240 minutos.

Pre Chill
This program is used to Pre Chill the cabinet prior to the first cycle. This is done with the Blast Chiller empty and is a short time based program of about 20 minutes. It is generally recognised as the correct method of preparing for a blast chill cycle. The program is selected by rotating the dial until the display shows, press and release the dial to start the program.
Defrost
Defrosting is not normally required but if there is an ice build up on the coil inside the cabinet a manual defrost can be selected. Rotate the dial until the Defrost screen, top left, is displayed. Press and release the dial to start the defrost. During defrost the screens will alternate between the middle and bottom screens. Defrost will last 20 minutes and when completed the alarm will sound. Press the dial to acknowledged or if not wait until it comes to the end of the alarm period, the alarm will stop and the display will revert to the previous screen.
Chill / Hold temperature adjustments. (Professional 1, 2 or 3 only)
Professional 1, 2 and 3, if configured, are programs that can be used to tailor the chill time and temperature to suit specific product requirements. Adjust the 'CHILL TIME' as above. With the 'CHILL TEMP' highlighted, left (display b.), press and release the dial to move to the temp set, left (display c.). Rotate the dial clockwise to increase the time, anticlockwise to decrease. Once the time has been selected, press and release the dial and 'HOLD TEMP' will be highlighted. Follow the procedure for changing chill temp to change the hold temp.
On completion press and hold the dial for 2 seconds to return to the program selection screen, to continue press and release the dial for the program to start.
The chill time and chill / hold temperature adjusted settings are retained for Professional 1, 2 and 3 programs and will not revert to the default.
Further Operational Features

Chill time adjustment. (All programs excluding Professional 1, 2 or 3)
Whilst in the pre-programmed selection screen press and hold the dial for 2 seconds, the information screen will be displayed, top left. Press and release the dial to move to the time set, see bottom left. Rotate the dial clockwise to increase the time, anticlockwise to decrease. Once the time has been selected, press and release the dial and ‘CHILL TEMP’ will be highlighted. On completion of the program the time changes will revert to the default settings.
On completion press and hold the dial for 2 seconds to return to the program selection screen, to continue press and release the dial for the program to start.

Presionar y soltar el indicador para movernos a la pantalla de selección y para imprimir una muestra, seleccionar 3 ó 5 del intervalo de selección. Para terminar, presionar y soltar el indicador durante dos segundos para volver a la pantalla de selección de programa.
Imprimir Datos
Mientras aparece la pantalla de selección, presionar y mantener el indicador pulsado durante dos segundos, aparecerá la pantalla de información. Girar el indicador hasta que “IMPRIMIR DATOS” se resalte. Si se utiliza una impresora manual, encender la impresora en este momento. Dirigir la impresora hacia los infrarojos cargando sensor (opcional), localizado en pantalla, presionar y soltar el indicador para cargar la fecha de impresión. Para terminar, presionar y mantener el indicador pulsado durante dos segundos para volver a la pantalla de programa de selección.
Pantalla Protectora
La pantalla protectora aparecerá si la máquina no se utiliza durante 20 minutos, el suministro eléctrico es conectado. Muestra unas series de “Z” indicando modo durmiendo. Presionar y soltar el indicador o abriendo la puerta, la unidad se activará, aparecerá el programa de selección en la pantalla.
Configuración hora y fecha
Mientras en la pantalla aparece selección de programa, presionar y mantener el indicador durante dos segundos, aparecerá la pantalla de información, mostrado abajo izquierda. Girar el indicador hasta que “CONFIGURAR HORA/FECHA” se resalte. Presionar y soltar el indicador para acceder a la pantalla de servicio, mostrado abajo derecha. Presionar y soltar el indicador para mover la hora en horas y en minutos, girar el indicador para cambiar la hora, una vez que se ha conseguido la hora correcta, presionar y soltar el indicador para mover a “DIA”. Si es necesario cambiar el día, el mes y el año cambiar las posiciones utilizando el mismo procedimiento que para cambiar la hora. Para terminar presionar y mantener pulsado el indicador durante dos segundos para volver a la pantalla de selección.
Cambio de Idioma
Cuando en la pantalla aparece programa de selección, presionar y mantener el indicador pulsado durante dos segundos, la pantalla de información aparecerá y a continuación presionar el indicador durante al menos dos segundos para que aparezca “SERVICIO MENU”. IDIOMA se resaltará, presionar y soltar el indicador, “ING” (Inglés) se resaltará. Girar el indicador para cambiar el idioma. Seleccionar el idioma preferido, presionar y soltar el indicador para confirmar.
Alarmas y Avisos

Sonda de Si esta alarma aparece, permanecerá en el programa seleccionado hasta que éste se complete. Sin embargo, cualquier Aire: funcionamiento será posible.

Information
Whilst in the program selection screen press and hold the dial for 2 seconds, the information screen will be displayed. Rotate the dial until 'INFORMATION' is highlighted. Press and release the dial to display the screen showing the last run cycle. The information relates to date, program run, start time, start temperature and end temperature.
HACCP settings
Whilst in the program selection screen press and hold the dial for 2 seconds, the information screen will be displayed. Rotate the dial until 'HACCP SETTINGS' is highlighted. Press and release the dial to access the HACCP option screen. Press and release the dial to move to the selection screen for long or short reports, rotate the dial to select which option, once selected press and release the dial to confirm. Press and release the dial to move to the selection screen for the print sample, select 3 or 5 minute selection rate. On completion press and hold the dial for 2 seconds to return to the program selection screen.
Print Data
Whilst in the program selection screen press and hold the dial for 2 seconds, the information screen will be displayed. Rotate the dial until 'PRINT DATA' is highlighted. If using a hand held printer switch the printer on now. Point the printer at the infra red download sensor (optional), located in display area, press and release the dial to download the print data. On completion press and hold the dial for 2 seconds to return to the program selection screen.
Screen Saver
The screen saver screen is displayed if the machine is not used for 20 minutes, providing power is connected to it. It shows a series of 'Z' indicating sleep mode. Pressing and releasing the dial or opening the door will awaken the unit, the program selection screen will be displayed.
Set time and date
Whilst in the program selection screen press and hold the dial for 2 seconds, the information screen will be displayed, top left. Rotate the dial until 'SET TIME/DATE' is highlighted. Press and release the dial to access the service screen, below left. Press and release the dial to move to the displayed time in hours and minutes, rotate the dial to alter the time, once the correct time has been achieved press and release the dial to move to 'DAY'. If it is necessary to change the day, month and year change the settings using the same procedure for setting the time. On completion press and hold the dial for 2 seconds to return to the program selection screen.
Changing Text Language
Whilst in the program selection screen press and hold the dial for 2 seconds, the information screen will be displayed continue pressing the dial for a further 2 seconds to display the 'SERVICE MENU'. LANGUAGE will be highlighted, press and release the dial, 'ENG' (English) will be highlighted. Rotate the dial to change the language. Select the preferred language, press and release the dial to confirm.
Alarms and Warnings

Air Probe: If this alarm occurs it will remain in the program selected until it is completed, however no further operation will be
possible. Call your Foster Authorised Service Company.
Evaporator If this alarm occurs it will remain in the program selected until it is completed, however no further operation will be Probe: possible. Call your Foster Authorised Service Company.
Food Probe: If this alarm occurs it will automatically change to a timed program until it is completed, further operation

Door Open: The display will continue to show the alarm message until the door is closed. If this does not cancel the alarm call your

Pre-enfriamiento
Este programa se utiliza para la pre-refrigeración del armario antes del primer ciclo. Esto se realiza con el abatidor vacío y es un tiempo corto basado en un programa de 20 minutos. El programa es seleccionado girando el dial hasta que la pantalla muestre dicho programa. Entonces presionar y soltar para que comience el programa.
Descarche
La descongelación no es necesaria normalmente pero si hay hielo acumulado en la bobina dentro del armario, se puede seleccionar un manual de descongelación. Girar el indicador hasta la pantalla de descongelación, mostrado en la figura debajo a la izquierda. Presionar y soltar el indicador para comenzar la descongelación. Durante la descongelación las pantallas mostradas serán alternas entre la figura del centro y la derecha. La descongelación durará 20 minutos y cuando termine sonará la alarma. Presionar el indicador para parar la alarma o sino esperar hasta que termine la alarma, la alarma se parará y volverá a la pantalla previa.
Ajustes de Temperatura de Refrigeración/Mantenimiento. (sólo para programas profesional 1, 2 ó 3)
Profesional 1, 2 y 3, si se configuran, son programas que pueden ser utilizados para adaptar el tiempo de refrigeración y la temperatura para adecuarlo a las necesidades de un producto específico. Ajustar el “TIEMPO DE REFRIGERACIÓN” como se indica arriba. Con el “TIEMPO DE REFRIGERACIÓN” resaltado, abajo izquierda, presionar y soltar el indicador para poder moverlo al ajustador de temperatura, abajo derecha. Girar el indicador en el sentido de las agujas del reloj para aumentar el tiempo, en el sentido contrario para disminuirlo. Una vez que el tiempo ha sido configurado, presionar y soltar el indicador, “TEMPERATURA MANTENIDA” se resaltará. Seguir el procedimiento de cambiar el tiempo de refrigeración para cambiar la temperatura de mantenimiento.
Para terminara, presionar y mantener el indicador durante dos segundos para volver a la pantalla de selección de programa, para continuar presionar y soltar el indicador para comenzar el programa. El tiempo de refrigeración y la refrigeración / mantenimiento de la temperatura ajustada son retenidas por los programas profesional 1, 2 y 3 y no vuelven por defecto.
Otras Funciones

Cuando estemos en la pantalla de selección de pre-programado, presionar y mantener el indicador durante dos segundos, entonces aparecerá la información en la pantalla, figura mostrada debajo izquierda. Presionar y soltar el indicador para cambiar el tiempo, mostrado debajo derecha. Girar el indicador en el sentido de las agujas del reloj para aumentar el tiempo, en el sentido contrario de las agujas del reloj para disminuirlo. Una vez que el tiempo esté seleccionado, presionar y soltar el indicador y “la temperatura de refrigeración” aumentará. Para terminar, presionar y mantener pulsado el indicador durante dos segundos para volver al programa de selección, para continuar presionar y soltar el indicador y así comenzará el programa. Cuando se concluye el programa el tiempo cambiará a su valor de defecto.

High Temperature: This alarm will only occur in the hold mode only. Probe the product to determine it is at the correct
temperature. If it is at the correct temperature place in a storage refrigerator or freezer and call your Foster Authorised Service Company. If the product temperature is above the guidelines check the chill time selected or the weight of product being chilled does not exceed the specification for the Cabinet.
HP Switch: Causes for this alarm could be:
Does the product temperature exceed 90˚c. Has too much product been placed in the cabinet. Is the airflow restricted. Does the condenser filter require cleaning. If the problem persists call your Foster Authorised Service Company.
Power Fail: If the power fails for up to five minutes the unit will re-start on the resumption of the power supply without
affecting the selected cycle. Longer than five minutes and the controller will enter the hold mode. To check the cycle operation look in the information screen to check the cycle time.
To re-start press and release the dial, the screen will return to the hold screen. Press and hold the dial for two seconds the display returns to the program selection.

NOTE: All times listed should be used as a guide only, and will depend on type, size and quantity.
There are four main programmes that you will need to use your Blast Chiller or Freezer.
Soft Chill - for the safe chilling of delicate products such as gateaux and patisserie items, and high water content items such as
vegetables, rice and pasta.
Hard Chill- For general purpose chilling. The Hard Chill cycle is ideal for chilling 'standard products' such as meat pies, lasagne, individually portioned meals etc. Providing surface protection for the later part of the program.
Hard Chill Max- For high density and high fat content products such as meat joints, stews and sous vide.
Shock Freeze- Products to be frozen can be shock frozen to below -18˚c within 240 minutes.

Instrucciones de funcionamiento
Como conclusión del auto-test, el controlador saltará al último programa que estaba en marcha (Pre-refrigeración, refrigeración suave, refrigeración fuerte, refrigeración máxima, congelación rápida, Profesional 1, Profesional 2 o Profesional 3). La disponibilidad de estos depende de cómo haya sido configurado el controlador.
El ejemplo muestra el controlador en modo refrigeración fuerte con los programas previos y siguientes indicados al final de la pantalla. Para cambiar el programa girar la pantalla, en cualquiera de los dos sentidos, siguiendo el sentido de las agujas del reloj o en el sentido contrario de las agujas del reloj para seleccionar el tipo de programa que se requiere. Para iniciar el programa presionar y soltar el dial
Para parar el abatidor durante el funcionamiento, presionar y mantener el indicador presionado durante dos segundos, la pantalla vuelve al programa de selección.
Para concluir el programa, el controlador hará que el abatidor entre en el Modo Mantenimiento, como se muestra a la izquierda. Una alarma sonará, presionar y soltar el indicador para cancelar la alarma. Si la alarma no se cancela el abatidor estará todavía en el Modo Mantenimiento con el sonido periódico de la alarma. Para cancelar, presionar y soltar el indicador.
Durante el funcionamiento del abatidor, el indicador puede girar para conseguir información del estado del modo particular de funcionamiento. La pantalla permanecerá durante 10 segundos y luego volverá a la pantalla de funcionamiento normal automáticamente.

Cuando la corriente eléctrica se aplica primero al controlador éste realizará un auto-test de funcionamiento, durante 3 segundos aproximadamente. Durante este período la pantalla lo mostrará.
El programa comienza con la pantalla de arriba mostrándolo durante dos minutos. Después de ésto, la sonda inteligente determina si el ciclo está controlado por el tiempo, mostrado por la pantalla de la mitad, o por la temperatura como se muestra en la pantalla de abajo
