COMBITHERM

The Ventless Hood option is factor y in stalled direct ly on the top of the Alto-Shaam Combithe rm oven. The h ood is des igned to vent clean air back into th e kitch en, f ilt erin g vapors and grease. Ahigh-powerfan draw s steam an d fumes in to the hood intake and out the top s urface ex haus t ven t. Fumes and vapors are circulated th rough filt ers draining the condensation through a dr ain at t he r ear o f th e hood. An activated charcoal filter cleans the a ir befo re

ven ting it out the top of the hoo d.

CON DEN SATE D RAI N

A ventless hood con dens ate dra in line to th e flo or dr ain must be installed. The 3/4" NPT thread conn ect ion is foun d at the back of the hood. The drain line must alw ays be a positive gradient away from th e Co mbith erm.

OPENING MECHANISM

Using a coi n or screwdriver, turn to o pen ; revers e proce dure to close and latch.

Hood and oven will not operate unles s th is is closed properly.

second s to one minute. The mec hanism

autom atically disen gages at the end of a preset time allowing full door ext ensi on.

The reset has to be used if the Combith erm o ven is turn ed on befo re the hoo d or if the h ood was

open ed. It rese ts the pressu re switch circu it and provides power to the Combitherm cont rol cir cuit . Thi s switch must also be use d to re set ho od co ntrols after any probl em with the filters, or th e impr oper latch ing of the vent less hood door.

CL EANING AND MAINT ENANCE

To ens ure optim um p erforma nce fro m the ve ntless hood, it is imp ort ant to est ablish and mai ntain a regula r clea ning a nd maint enance sche dul e.

To help maint ain t he protec tive film coati ng on pol ishe d stain less s teel , clean the ex terior of the cabin et with a cl eane r recomm ended for stai nles s steel surfa ces. S pra y the cleaning agent on a clean

cloth and wip e with the grai n of the stai nless ste el.

CH ARCOAL FILTER

The ch arcoal f ilte r should be inspected fo r

con taminan t's on a regular basis. R eplace ment mus t be made at a m ini mum of t hree mo nth i ntervals — more often if he avy contam inant's ar e visib le or if the filter n o longer controls odors.

To remove t he fil ter, pull and slide ou t whi le holding the bot tom hou sing. When rep lacin g the fi lter,

make certa in the air flo w a rrow( s) poin t t oward the hood fan, and th at the filte r i s rep laced in the three -sided m eta l fra me prov ided wi th the hoo d.

GREA SE F ILTERS AN D ME TAL HOU SIN G (PLE NUM )

Cleaning frequency shou ld be based on oven us age with a maximum of two weeks bet wee n cleaning if the oven is used for non-greaseladen produ cts or steam applications only. Grease laden produc ts such as red mea t, poultry, etc. , require clean ing frequ enc y of at least once a week. Remo ve the gr ease f ilt er b y pulling it str aight out of the housin g. Pl ace th e filter in the dishwasher or wash separately by placin g in hot, soapy water until all grease and part icles have bee n remov ed. Rinse thoroughly. Allow t he f ilter to air dry befo re reinst alling.

Clean the interior meta l hou sing (plenu m) with a damp cloth and any good com mercial deter gen t or grease sol vent at the recom mended strengt h. Avoid the use of abra sive cleaning com pounds, ch loride based cleaners , or cleaner s cont ain ing qu atern ary salts. Use a deg reasing agent if neces sary.

To replace the gre ase filter, the air fl ow arr ow on the filter casin g shoul d be poi nting toward the hoo d fan.

ORIGINAL EQUIPMENT LIMITED WARRANTY

Alto-Shaam,Inc. warrants to the original purchaser that any original part that is found to be defective in material or workmanship will, atAlto-Shaam’soption, subject to provisions hereinafter stated, be replaced with a new or rebuilt part.

The labor warranty remains in effect one (1) year from installation or fifteen (15) months from the shipping date, whichever occurs first. Alto-Shaamwill bear normal labor charges performed by an authorizedAlto-Shaamservice agent during standard business hours, and excluding overtime, holiday rates or any additional fees.

The parts warranty remains in effect for one (1) year from installation or fifteen (15) months from the shipping date, whichever occurs first.

THIS WARRANTY DOES NOT APPLY TO:

1.Replacement of light bulbs.

2.Equipment damage caused by accident, shipping, improper installation or alteration.

3.Steam generator or steam generating system damage as a result of inadequate routine maintenance and cleaning. Required maintenance and cleaning of steam generating equipment is the responsibility of the owner/operator.

4.Equipment used under conditions of abuse, misuse, carelessness or abnormal conditions including, but not limited to, equipment subjected to harsh or inappropriate chemicals including, but not limited to, compounds containing chlorine, chlorides or quaternary salts, or equipment with missing or altered serial numbers.

5.Equipment that uses water must meet Alto-Shaam’sminimum water quality standards as shown below. USE OF WATER NOT MEETINGALTO-SHAAM'SMINIMUM WATER QUALITY STANDARDS WILL VOID THIS WARRANTY. Water quality and required maintenance of steam generating equipment is the responsibility of the owner/operator. The installation and use ofAlto-Shaam’sCombiGuard™ Water Filtration System is highly recommended.

7.Any losses or damage resulting from malfunction, including loss of product or other consequential or incidental damages of any kind.

8.Equipment modified in any manner from original model, substitution of parts other than factory authorized parts, removal of any parts including legs, or addition of any parts.

THIS WARRANTY IS EXCLUSIVE AND IS IN LIEU OF ALL OTHER WARRANTIES, EXPRESSED OR IMPLIED, INCLUDING THE IMPLIED WARRANTIES OF MERCHANTABILITY AND FITNESS FOR A PARTICULAR PURPOSE. IN NO EVENT SHALL ALTO-SHAAMBE LIABLE FOR LOSS OF USE, LOSS OF REVENUE OR PROFIT, OR LOSS OF PRODUCT, OR FOR ANY INDIRECT, INCIDENTAL OR CONSEQUENTIAL DAMAGES.

No person except an officer of Alto-Shaam,Inc. is authorized to modify this warranty or to incur on behalf ofAlto-Shaamany other obligation or liability in connection withAlto-Shaamequipment.

TRANSPORTATION DAMAGE AND CLAIMS

All Alto-Shaam equipm ent is sold F.O.B. ship ping point, and w hen acc epted by the carri er, such shipm ents be come the prop erty of the c onsign ee.

Should damage occur in shipment, it is a matter between the carrier and the con sign ee. In such cases, the carrier is assumed to be responsible for the safe deli very of the merchandise, unless negli gence can be established on the part of the shipp er.
